GARLIC PARMESAN EDAMAME
Crisp, fresh edamame coated in olive, garlic and Parmesan cheese!

Steps:
- Place edamame in a microwave-safe bowl. Add water to bowl and cover. Heat for 3-4 minutes or until pods are slightly tender. Immediately plunge edamame in a bowl if ice water. Allow pods to sit for a minute or two before draining.
- In a bowl, top edamame with olive oil, salt, garlic and Parmesan. Toss to coat.

GARLIC PARMESAN EDAMAME

Steps:
- Bring a small bot with 3 or 4 cups of water to a rolling boil.
- Add edamame and cook for 4-5 minutes, uncovered, stirring occasionally until desired tenderness is reached. I like mine at the 5-minute mark!
- Pour into a colander to drain and set aside. Reduce heat on burner to medium and, in the same pot you used for the edamame, melt your butter.
- Add the garlic and sauté until fragrant.
- Toss drained edamame back into the pot and toss with the garlic. Add grated parmesan cheese, to taste, and season with salt and pepper. Enjoy!

- Preheat the oven to 400 degrees F.
- Toss the edamame with the olive oil to coat in a medium bowl. In a separate small bowl, mix the Parmesan and garlic powder with some salt and pepper. Add the Parmesan mixture to the edamame mixture and toss.
- Spread the edamame on a rimmed baking sheet and bake, turning once halfway through, until the cheese just starts to brown, 10 to15 minutes. Store in an airtight container.

- Mix Parmesan cheese, garlic powder and salt & pepper in a and bowl and set aside.
- In separate bowl, combine edamame and oil and toss to coat. Add Parmesan mixture and mix well. Spread in a single layer on a large baking pan.
- Bake 15 minutes, or until cheese is crispy.
