PARMESAN GARLIC PASTA
Quick and tasty-- a good side for a weeknight. You can also add in some bacon or ham to the frying pan with the garlic and make it a main course.

Steps:
- Cook pasta according to directions.
- Towards the end of the pasta cook time, heat 1 tbls olive oil in a frying pan.
- Add the pressed garlic, cook about 1 minutes, be sure not to burn.
- Add the 3 tbls white wine and deglaze the pan.
- Drain the pasta and add to the frying pan.
- Stir in the remaining 1 tbls olive oil, parsley, salt, pepper.
- Toss on heat until excess liquid is evaporated- just a few minutes.
- Put in serving bowl and toss with the shaved parmesan cheese.

- Heat unsalted butter in a large skillet over medium high heat. Add garlic and cook, stirring frequently, until fragrant, about 1-2 minutes.
- Add in the chicken broth, milk, and fettuccine. Season with salt and pepper.
- Bring the pot to a boil, then reduce heat and simmer, stirring occasionally, until pasta is cooked through, about 18-20 minutes.
- Stir in Parmesan. If the mixture is too thick, add more milk as needed until desired consistency is reached.
- Serve immediately, and top with parsley.
- Enjoy!

- Cook pasta according to directions.
- When pasta is half way done, start with cream sauce in separate pot.
- Add butter, olive oil and garlic and saute on med-low heat until butter is melted, then add red pepper flakes and saute.
- Mix in flour until combined.
- Add milk and chicken broth, bring to a boil, lower heat and stir until thickened.
- Add parmesan and stir until melted.
- Serve over pasta, and top with green onions.
- Option: Add cooked, diced chicken.

- Heat olive in a medium pan over medium heat. Add garlic and stir until fragrant, 1 to 2 minutes. Add butter and stir constantly until melted. Pour in chicken broth; add pepper and salt. - In a large frying pan, saute the garlic and hot pepper in the oil for 2 to 3 minutes.
- Drain the pasta and add it to the pan.

- Toss with the oil and heat for 1 minute.

- Preheat the oven to 350 degrees F (175 degrees C).
- Heat 1 tablespoon oil in a large, deep skillet. Add chicken and cook until no longer pink in the center and the juices run clear, 7 to 8 minutes per side. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Remove chicken and cut into small chunks.
- Add remaining oil, butter, and garlic to the skillet and begin cooking over low heat. Add cilantro and basil and stir to keep the mixture moving. Slowly add cooked chicken, Parmesan cheese, Italian seasoning, salt, pepper, and red pepper. Cook, stirring often to keep the cheese from burning, for about 20 minutes.
- Meanwhile, bring a large pot of lightly salted water to a boil. Add gemelli and cook, stirring occasionally, until tender yet firm to the bite, about 12 minutes.
- Drain pasta and return to the pot. Pour in sauce and toss to coat.

- Boil a saucepan of water (with a pinch of salt) and cook your pasta for the time recommended on the packet.
- In the meantime, finely cut your garlic cloves and cook them for 2 minutes in the butter in a saucepan. Then add the flour to the pan and let it absorb the butter. Then create a roux by adding in the milk and the stock, bit by bit.
- Whisk the sauce well to get rid of any flour lumps. As the sauce thickens, add the parmesan and parsley to the pan and mix well. (Keep some parmesan and parsley to garnish when you serve up.) Then remove from the heat.
- When your pasta has cooked, drain it in a colander. Then add it back to the pan and cover it with the cheese and garlic sauce. Mix well before serving, then garnish with some grated parmesan and parsley.
