Garlic Parmesan Tilapia Over Cauliflower Rice image

An easy, quick, delicious dish the whole family will love!

Number Of Ingredients 13

4 Tilapia Fillets*
Salt & Pepper
1/2 cup plain low-fat or nonfat Greek yogurt
1 tablespoon lemon juice
1/4 cup parmesan cheese
1/4 teaspoon salt
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 tablespoon parsley (optional)
1 small onion, finely diced
1 12 oz bags cauliflower rice
1/2 lemon, juice
Salt & Pepper, to taste

Steps:

  • Preheat oven to 425 degrees and line a baking sheet pan with foil sprayed with cooking spray. Place fish filets on baking pan and season with salt and pepper.
  • Mix all of the ingredients for the topping together in a small bowl. Spread mixture over fish and bake for 15 minutes, then broil for 2-3 minutes, or until fish is white and flakey on the inside and lightly browned on top.
  • While fish is cooking, sauté diced onion over medium to high heat in a skillet that has been sprayed with cooking spray. Once onion is soft, add cauliflower rice. Cook about 5 minutes and until heated. Remove from heat and drizzle with lemon juice and season with salt and pepper.
  • Plate cauliflower rice and top with fish. Serve immediately with a side salad or other green veggie, if desired.

I recently came up with this recipe for our Memorial Day weekend barbecue since we were sick of the same old stuff. It went over extremely well and everyone that was there has demanded the recipe. It's good cooked in the oven, but much better grilled!

Number Of Ingredients 8

4 tilapia fillets, whole
1 cup fresh parmesan cheese, fresh and grated (sometimes I used an Italian 5-cheese blend instead, which includes parmesan)
1 1/2 teaspoons paprika
2 teaspoons fresh parsley
1 teaspoon kosher salt
1/2 teaspoon black pepper, freshly ground
3 garlic cloves, finely chopped
4 tablespoons extra virgin olive oil

Steps:

  • Preheat the grill or oven to 350°F and spray the baking sheet with non-stick cooking spray.
  • Divide the filets into two parts, then rinse with water and pat dry.
  • Combine the parmesan cheese, garlic, paprika, parsley, salt, pepper on a large plate.
  • On another plate, pour the olive oil.
  • Dip the filets in the olive oil, then in the parmesan mixture.
  • Optional: let the flavors combine for about 4 hours. If you're taking it to a picnic, just put inside a ziplock bag.
  • Place on a baking sheet. For the barbecue, I use non-stick aluminum foil (Reynolds brand works great).
  • Bake/grill for about 20 minutes or until opaque in the middle and crispy on the edges. Do not overcook. The fish should be very moist with a crisp bottom and edges. Enjoy!
