Here's what you need: white cake, fondant, buttercream frosting, white rum, black food coloring, piping gel, rock candy

1 white cake, or cake of your choice
5 lb fondant
4 cups buttercream frosting
white rum, or vodka
1 tablespoon black food coloring
piping gel
rock candy, ranging from white to dark teal/blue, or colors of your preference

Steps:

  • Cover cake in smooth layers of fondant.
  • Cut the geode shape out of the side of the cake.
  • Spread buttercream frosting all along the inside of the cut.
  • Mix alcohol with food coloring until it reaches the desired shade of gray.
  • Paint a thin dark line around the edge of the cut.
  • Apply a row of piping gel in the center of the cut.
  • Press rock candy into the piping gel, starting with the darkest shade.
  • Continue laying out rows of piping gel and pressing in the rock candy, applying lighter colors and smaller pieces as you move farther out toward the edge of the cut.

This Instagram sensation started as a simple post. In 2016, Denver-based cake maker and Food Network Challenge winner Rachael Teufel was asked to create a cake inspired by an amethyst. She came up with a rock candy geode and shared a photo, and everyone went nuts. Now, with more than 48,000 posts, #geodecake is officially a thing: Beyoncé celebrated her birthday with a black-and-gold one. See how Rachael creates this gem.

2 6-inch round cakes, cooled
2 8-inch round cakes, cooled
9 cups vanilla buttercream
Clear rock candy
Clear sanding sugar
Purple gel food coloring
Vodka or lemon extract
Edible silver luster dust
Edible gold leaf transfer sheets

Steps:

  • Trim the cakes to make them level. Working on a turntable, stack the 6-inch cakes on a cardboard round, spreading the buttercream between them with an offset spatula. Stack the 8-inch cakes the same way on an 8-inch round.
  • Cover each layer cake with a thin layer of buttercream (this is the crumb coat), smoothing it with a bench scraper. Refrigerate until firm, 1 hour. Cover with more buttercream; chill overnight. (Reserve 1/2 cup buttercream for step 4.)
  • Add the geode to the 6-inch layer cake: Using a paring knife, carve out an irregular piece from the side of the cake. Be careful not to cut deeper than one-third of the diameter of the cake in order to maintain the cake's structure.
  • Frost the inside of the cutout, then gently add the rock candy. (Don't press too hard or the frosting will ooze out.) Using a spoon, sprinkle sanding sugar around the edges of the cutout to fill in any gaps.
  • Dilute a few drops of food coloring with a splash of vodka or lemon extract. (Test your color on some spare rock candy.) Using a paintbrush, paint the center of the geode in an irregular shape; do not oversaturate.
  • Add a few more drops of vodka or extract to dilute the remaining food coloring; apply the lighter color around the dark center of the geode. Continue diluting the food coloring; paint outward until all the rock candy is covered.
  • Mix a few pinches of silver luster dust with a few drops of vodka or lemon extract. With a clean brush, paint the edges of the geode silver, then apply the gold leaf around the silver paint in spots.
  • Decorate the 8-inch cake, placing the geode on a different part of the cake. Insert skewers into the 8-inch cake, cutting them level to the top, then carefully add the 6-inch cake on top so the cardboard round rests flat on the skewers.

1 pkg. (2-layer size) yellow cake mix
1 pkg. (8 oz.) PHILADELPHIA Cream Cheese, softened
1/4 cup butter, softened
1 tsp. vanilla
3 cups powdered sugar
5 rock candy sticks (assorted colors)

Steps:

  • Heat oven to 350ºF.
  • Prepare cake batter as directed on package; pour into 2-1/2-qt. ovenproof bowl sprayed with cooking spray.
  • Bake 55 min. or until toothpick inserted in center comes out clean. Cool cake 10 min. Loosen cake from side of bowl with knife; carefully invert onto wire rack. Remove bowl. Cool cake completely.
  • Beat cream cheese, butter and vanilla in large bowl with mixer until blended. Gradually add sugar, mixing well after each addition.
  • Use serrated knife to make 3-inch-long diamond-shaped cut into top and side of cake as shown in photo. (The diamond-shaped piece should be about 1-1/2 inches wide and 1 inch deep at center and becoming less deep toward both ends of piece.) Remove and discard diamond-shaped cake piece.
  • Cut cake horizontally in half. Place bottom half of cake on plate; spread with 1/2 cup cream cheese mixture. Cover with top of cake, making sure to align the diamond-shaped cuts.
  • Frost cake with cream cheese mixture, being sure to frost inside of diamond-shaped hole last.
  • Break rock candy into chunks. (See tip.) Fill diamond-shaped hole with candy pieces as shown in photo, starting in the center with the darkest colors and gradually working your way out to the sides with the lighter colored candies.
