1 egg white
1 teaspoon white sugar
1 teaspoon ground cinnamon
2 teaspoons raisins
1 teaspoon crushed toffee candy
4 large Red Delicious apples, cored

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Place the cored apples upright in a shallow baking dish.
  • In a medium bowl, whip the egg white until it holds a stiff peak. Sprinkle in the sugar, and whip just a bit more. Stir in the cinnamon, raisins, and toffee until evenly distributed. Spoon into the cores of the apples.
  • Bake uncovered for 5 to 10 minutes in the preheated oven, until the meringue is crisped. Allow to cool slightly before serving.

4 large apples
5 ounces marzipan
1 tablespoon orange marmalade
2 tablespoons unsalted butter, cut into small pieces
¾ cup orange juice

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Peel apples and carefully cut out core using an apple corer. Place in a small baking dish side by side.
  • Knead marzipan and orange marmalade together in a small bowl and stuff mixture into the apples. Top with butter cubes. Pour orange juice into the baking dish.
  • Bake in the preheated oven until apples are soft, 55 to 60 minutes. Baste with orange juice every 10 to 15 minutes.

100g marzipan
100g fresh or frozen cranberries
2 tbsp flaked almonds
2 tbsp clear honey
4 cooking apples (Bramley's are best)
6 tbsp water
custard or clotted cream to serve

Steps:

  • Chop marzipan into small chunks and mix with the cranberries, flaked almonds and honey.
  • Core apples and mark a line around the circumference of each using a sharp knife. Set the apples in a shallow ovenproof dish that fits them snugly and stuff the cavities with the cranberry mix.
  • Pour the water into the dish. Bake at fan 170C/conventional 190C/gas 5 for 30-40 minutes until the apples are tender. Cool for 10 minutes before serving with custard or clotted cream.

For the Apples:
4 baking apples
1/4 cup butter
1/4 cup confectioners' sugar
1/4 cup raisins
1/4 cup walnuts (chopped)
Optional: 1/2 teaspoon ground cinnamon
For the Vanilla Sauce:
4 large egg yolks (lightly beaten)
1/2 cup sugar
1 tablespoon vanilla sugar (or 1 teaspoon vanilla extract)
2 cups milk

Steps:

  • Gather the ingredients. Preheat oven to 450 F.
  • Core apples (or cut into quarters, core, and put back together).
  • Mix together the butter and sugar. Add raisins and walnuts.
  • Pack the filling into the hollowed-out apples.
  • Place in buttered baking dish and cover with lid or aluminum foil.
  • Bake for 45 minutes to 1 hour or until the tip of a thin knife can easily pierce the apple. Meanwhile, make the vanilla sauce.
  • Gather the ingredients.
  • In a medium heatproof bowl, beat together the egg yolks and both sugars (if you are using vanilla extract instead of vanilla sugar, it will be added later) until the yolks are thick and pale yellow and the sugar is dissolved, about 4 minutes.
  • In a heavy-bottomed 2-quart saucepan, bring the 2 cups of milk to a boil. Pour the hot milk slowly in a thin stream over the egg yolk mixture, whisking continuously by hand or with an electric mixer.
  • Pour the tempered egg-yolks back into the saucepan and heat without boiling until mixture coats the back of a spoon
  • Remove pan from heat and stir in the vanilla extract, if you are using it instead of the vanilla sugar. Serve warm drizzled over baked apples.

I often freeze this sweet bread once it's shaped into a braid. 3 to 3-1/2 cups all-purpose flour
1/3 cup sugar
1 package (1/4 ounce) active dry yeast
1-1/4 cups 2% milk
6 tablespoons butter, cubed
2 teaspoons grated lemon zest
FILLING:
1 can (12-1/2 ounces) almond cake and pastry filling
1 cup finely ground almonds
1 tablespoon 2% milk
1 teaspoon rum extract
GLAZE:
1/4 cup confectioners' sugar
1/2 to 1 teaspoon 2% milk

Steps:

  • In a large bowl, combine 2 cups flour, sugar and yeast. In a small saucepan, heat milk and butter to 120°-130°. Add to dry ingredients; beat just until moistened. Add lemon zest; beat until smooth. Stir in enough remaining flour to form a soft dough (dough will be sticky)., Turn onto a floured surface; knead until smooth and elastic, 6-8 minutes. Place in a greased bowl, turning once to grease the top. Cover and let rise in a warm place until doubled, about 1 hour., For filling, in a large bowl, beat almond pastry filling, almonds, milk and extract. Punch dough down; turn onto a floured surface. Divide into thirds. Roll each portion into a 15x6-in. rectangle. Spread each portion with a third of the filling to within 1/4 in. of edges. Roll up jelly-roll style, starting with a long slide; pinch seam to seal. Place ropes on a parchment-lined baking sheet. Using a sharp knife, make a 1/2-in.-deep cut lengthwise down the center of each rope, stopping 1/2 in. from ends. Keeping cut surfaces facing up, braid ropes. Pinch ends to seal; tuck under., Cover with a kitchen towel; let rise in a warm place until almost doubled, about 30 minutes. Preheat oven to 375°. Bake until golden brown, 30-35 minutes. Remove to a wire rack to cool. Combine glaze ingredients to desired consistency; drizzle over stollen.

4 large firm tart apples (such as Jonagold, McIntosh, or Granny Smith)
3 tablespoons red currant jelly
1/4 cup fresh cranberries, halved
1 teaspoon ground cinnamon, divided
1/4 teaspoon ground nutmeg
1/4 cup german marzipan (chopped or grated)
1 (4 ounce) container sour cream
2 tablespoons confectioners' sugar

Steps:

  • Using an apple corer, remove each apple's core.
  • Use the corer to carve out a wider hole.
  • Using the tip of a paring knife, score around the middle of each apple (this will help them keep their shape while baking).
  • Preheat oven to 325°F Place currant jelly in a saucepan, and cook on low heat, letting it thin to a syrupy consistency.
  • Stir in cranberries, letting them barely cook for a minute or so.
  • Stir in 1/2 teaspoon cinnamon and nutmeg.
  • Let mixture cool and become firm.
  • Press a bit of marzipan into each apple cavity.
  • Spoon in some cranberry mixture.
  • Add more marzipan, then more cranberry mixture and so on until cavities are filled, letting cranberry mixture be on top.
  • Bake 45 minutes to 1 hour, basting every 15 minutes with pan juices, until skins are lightly wrinkled and flesh is soft.
  • Stir together sour cream, confectioners' sugar and remaining cinnamon; serve this mixture alongside apples.

6 -8 apples (uniform size)
2 ounces marzipan
1 ounce confectioners' sugar
1 tablespoon rum (or Arrack)
2 tablespoons candied ginger, chopped
2 tablespoons sliced almonds (sliced)
1 -1 1/2 cup white wine
1 ounce butter

Steps:

  • Wash the apples; core with apple corer. Remove stem, crown and core, but not the bottom.
  • Knead marzipan with sugar and Arrack (or rum) until it crumbles. Add the ginger. Mix.
  • Fill apples with the mixture. Place in ovenproof dish. Pour wine around apples. Sprinkle apples with almond flakes and dot with little pieces of butter.
  • Cover with foil. Bake at 420 for about 1/2 hour (time depends on kind of apple use).
