GRAMPA'S GERMAN-STYLE POT ROAST



Grampa's German-Style Pot Roast image

Grampa was of German heritage and loved the Old-World recipes given to him by his mother. I made a few changes so I could prepare this dish in the slow cooker and give it a slightly updated flavor. -Nancy Heishman, Las Vegas, Nevada

4 thick-sliced bacon strips
1 pound baby Yukon Gold potatoes
4 medium carrots, sliced
1 can (14 ounces) sauerkraut, rinsed and well drained
3/4 cup chopped dill pickles
1 teaspoon smoked paprika
1 teaspoon ground allspice
1/2 teaspoon kosher salt
1/2 teaspoon pepper
1 boneless beef chuck roast (3 pounds)
2 packages (14.4 ounces each) frozen pearl onions, thawed
4 garlic cloves, minced
1/2 cup stout beer or beef broth
1/3 cup Dusseldorf mustard
1/2 cup sour cream
1/2 cup minced fresh parsley

Steps:

  • In a large skillet, cook bacon over medium heat until crisp. Remove to paper towels to drain., Meanwhile, place potatoes, carrots, sauerkraut and pickles in a 7-qt. slow cooker. Mix paprika, allspice, salt and pepper; rub over roast. Brown roast in drippings over medium heat. Transfer to slow cooker. Add onions and garlic to drippings; cook and stir 1 minute. Stir in beer and mustard; pour over meat. Crumble bacon; add to slow cooker., Cook, covered, on low until meat and vegetables are tender, 6-8 hours. Remove roast; let stand 10 minutes before slicing. Strain cooking juices. Reserve vegetables and juices; skim fat. Return reserved vegetables and cooking juices to slow cooker. Stir in sour cream; heat through. Serve with roast; sprinkle with parsley.

RUMTOPF (TRADITIONAL GERMAN FRUIT PRESERVE & BEVERAGE)

Rumtopf (rum pot) is a traditional German beverage. There are many variations. Take this recipe as a more general blue print for your own recipe. The traditional way of making this beverage starts as early as the fresh fruit are available in spring / summer and ends with the last fresh fruit in autumn. But today you can make in "1-step", because you can get always fresh fruit in the supermarket.

2 lbs fruit (strawberries, plums, cherries, peaches, pears, raspberries, currants, blueberries, gooseberries, ...)
1 lb sugar
3 cups rum (54%)

Steps:

  • The traditional way of making a Rumtopf started with the first ripe fruit available and ended in autumn (November) with last fresh fruit (often pears). The general rule for making is: for 2 parts fruit you need 1 part sugar and approximately 3 cups Rum.
  • Wash fruit, pat dry and cut into bite sized pieces, if necessary. Measure them.
  • Add half of weight sugar, mix and let stand for about 1 hour. Fill fruit into your Rumtopf and add as much Rum, so that fruit are completely (fingerbreadth) covered.
  • Close Rumtopf and set aside in a cool place.
  • Repeat these steps with other fruit "until" your Rumtopf is completely filled or fresh fruit season is over.
  • Take care of your Rumtopf. Fill up with Rum if necessary. It is important that fruit are always completely covered.
  • After you have added the last "layer" fruit, sugar and Rum let stand for about 6 weeks. Enjoy.
  • NOTE: 1-step preparation. Use any kind of fruit you like. Use a good mixture of different fresh and ripe fruits. Prepare them as describe above. After you have put them into the Rumtopf cover them with Rum. The Rumtopf should be completely filled. Let stand for 6 weeks. Enjoy.
  • NOTE: let stand at least for 6 weeks or even more. And keep the Rumtopf always in a cool place.
  • NOTE on fruit: you can use almost any fruit, but use a mixture of different ones like stone fruit (plums, peaches, nectarines, cherries), berries (strawberries, gooseberries, cranberries, grape wine, and others), you can use figs, apples, pears. Just keep in mind that the fruit will be in the Rum for a long time, so the fruit should be firm enough.
  • Number of servings can not be given. Time to make includes time until first use.

ROMERTOPF CLAY POT ROAST CHICKEN

Romertopf Roast Chicken has the right seasonings to make it very moist. A Romertopf chicken baker makes one of the best clay pot chicken dishes.

1 5 lb whole chicken
1 rib celery (cut into 2-3 pieces)
1/2 large red onion (cut into half)
1/2 lemon (cut in two)
4 tbsp butter (room temperature)
sprigs fresh thyme
sprigs fresh parsley
sprigs fresh rosemary
2 cloves garlic (minced)
1/2 cup white wine
1/2 cup chicken broth
Romertopf Roaster (optional)

Steps:

  • If using Romertopf clay pot soak for at least 20 minutes, I usually soak it longer, about 1 hour.
  • Only if using a regular roaster pan Preheat oven to 400 degrees. (Remember always place a Romertopf roaster in a cold oven then bring to temperature.)
  • Using a fork mix the butter with one minced garlic clove and 1 tablespoon of each of the herbs that you choose to use. ( I used all three) to make herb butter.
  • Wash chicken and dry thoroughly.
  • Gently ease up the breast skin of the chicken and spread the herb butter between the skin and the meat of the breast being careful not to pierce the skin. Also gently lift the skin of the drumsticks and spread butter under them.
  • Place the lemon, celery, and onion in the chicken and any herbs that you choose.
  • Season the outside of the chicken with salt and pepper.
  • Tie legs together with kitchen twine
  • Place chicken in roaster and pour the wine and chicken broth over the chicken. Cover with lid.
  • (A) If using a clay pot Romertopf roaster place in a cold oven and set the oven temperature to 400° F . Bake for 2 hours covered until done.(B) If using regular Stoneware roaster bake for 65-70 minutes
  • 11. Remove the lid and cook for 10-15 minutes longer until chicken is golden brown and thermometer registers 165° F and juices run clear.

CLAY POT HERBED ROAST CHICKEN

This succulent chicken is so easy and needs no attention thanks to a clay pot roaster!

2 tbsp olive oil
1 tsp lemon zest
2 tbsp lemon juice
1 tbsp dijon mustard
1 tbsp chopped fresh thyme
2 tsp chopped fresh rosemary
2 tsp chopped fresh sage
1/2 tsp pepper
2 tsp salt
4-5 lb medium roasting chicken
2 heads garlic (peeled but cloves left whole)
10 fingerling potatoes
3 carrots (cut in chunks)
1/2 cup dry white wine (I used white merlot)

Steps:

  • Soak the baker and lid for 30 minutes in cold water.
  • In a small bowl, mix olive oil, lemon zest, lemon juice, mustard, herbs and salt & pepper. Rub HALF of this mixture over the chicken. Toss the remaining mixture with the vegetables
  • Place chicken in prepared roaster, breast side up and surround the chicken with the vegetables. Pour the wine around the chicken and over the vegetables.
  • Place the cover on the baker and place in cold oven.
  • Set oven to 450℉ and cook for 90 minutes.
  • Remove the lid and cook chicken another 10-15 minutes to crisp and further brown.
  • Let chicken rest about 15 minutes before carving.

The unglazed clay cooker really shines when you use it for less tender meats, such as the rump roast in this German favorite, spicy marinated Sauerbraten. With the sliced beef and shimmering sauce, serve noodles and Old Fashioned Spiced Applesauce. This is my favorite way of cooking. The Spiced Applesauce is delicious either as a simple dessert with cookies or as a side dish for German foods, such as Sauerbraten, this applesauce can be served either warm or chilled.

2 1/2 cups rhine wine
2 medium onions, thinly sliced
1 medium carrot, pared, thinly sliced
1 garlic clove, cut into slivers
1 bay leaf
1 1/2 tablespoons sugar
1 tablespoon pickling spices, mixed whole
1 teaspoon whole cloves
1 teaspoon ground ginger
1/2 teaspoon black peppercorns
1/2 cup red wine vinegar
1 (4 1/2-5 lb) boneless beef rump roast
1 tablespoon tomato paste
2 teaspoons salt
1/3 cup dark raisin
1 tablespoon cornstarch
2 tablespoons water
6 medium tart apples, cored, cut into chunks
1/4 cup sugar
1 tablespoon lemon juice
1/2 teaspoon grated lemon rind
1 cinnamon stick (2 inch)
1/4 teaspoon ground nutmeg
1/8 teaspoon ground allspice

Steps:

  • FOR THE SPICED APPLESAUCE: Soak top and bottom of a 2-quart unglazed clay cooker in water about 15 minutes; drain.
  • Combine all ingredients in cooker.
  • Place covered cooker in COLD oven. Set oven at 425°F Bake, stirring once or twice, until apples are very tender, about 45 minutes. Taste and add sugar, if needed. Serve warm or cold. Makes about 3 cups.
  • FOR THE SAUERBRATEN: Two to four days before cooking beef, heat wine, onions, carrot, garlic, bay leaf, sugar, pickling spices, cloves, ginger, peppercorns and thyme just until about to boil. Remove from heat; stir in vinegar. Pour marinade over roast in deep bowl. Refrigerate covered, turning meat and stirring marinade occasionally, 2 to 4 day's.
  • Soak top and bottom of 3 1/4 quart unglazed clay cooker in water about 15 minutes; drain.
  • Place roast, fat side up, in cooker. Stir tomato paste and salt into marinade. Pour marinade over roast.
  • Place covered cooker in COLD oven. Set oven at 425°F Bake until meat is very tender, about 3 hours.
  • Pour off cooking liquid. Cover cooker to keep meat warm. Strain cooking liquid; skim and discard fat. Pour liquid into large skillet; stir in raisins. Heat to boiling; remove from heat. Mix cornstarch and water; stir into skillet. Cook, stirring constantly, until thickened and clear.
  • Carve roast; spoon sauce over slices. Makes 6 to 8 servings.
