WINNING CREAM OF CAULIFLOWER SOUP

Steps:
- In a soup kettle or Dutch oven, saute the onions, carrots, celery and garlic in 1/4 cup butter until tender. Add cauliflower, broth, parsley, salt and pepper, basil and tarragon. Cover and simmer until the vegetables are tender, 30 minutes. , Meanwhile, in a saucepan, melt the remaining butter. Stir in flour until smooth. Gradually stir in the milk and whipping cream. Bring to a boil; cook and stir until thickened, 2 minutes. Add to cauliflower mixture. Cook until thickened, stirring frequently, 10 minutes. Remove from the heat; stir in sour cream. Garnish with tarragon if desired.

CREAM OF CAULIFLOWER SOUP II
I make lots of cream soups and this is a good 'basic' recipe. I originally made this in 1990 and always make some modifications - we like lots of garlic as reflected in this recipe!! I also add or substitute other vegetables, i.e., broccoli and spinach. I also use potatoes for thickening rather than cream to keep the fat down.

Steps:
- In a large pot over medium heat, melt butter. Stir in onion and garlic and cook until onion is translucent, about 5 minutes. Stir in potatoes and carrots and cook 5 minutes more. Pour in chicken broth and bring to a boil. Stir in cauliflower, cover, reduce heat and simmer until vegetables are tender, 10 to 20 minutes. Remove from heat.
- Puree in batches in a blender or food processor, or in the pot using an immersion blender. Return to low heat and stir in milk, salt, pepper, nutmeg and sherry. Heat through. Serve garnished with parsley.

GERMAN CREAM OF CAULIFLOWER SOUP
This cold-weather favorite is sure to satisfy hearty appetites. I love the comforting, creamy texture of this cauliflower soup enriched with egg yolks and brightened with lemon juice. Adapted from the Take-Out Menu Cookbook.

- Cut away the thick stem base of the cauliflower and trim the florets from the head. Wash the cauliflower under cold water and chop it into 1-inch pieces.
- In a 3-quart pot set over medium-high heat, melt the butter, then add the bacon and onion and cook until the onion is translucent, about 3 minutes. Add the flour and cook for 2 minutes. Whisk in the stock and 1 cup of water and bring to a boil. Add the cauliflower and turn the heat to medium-low. Simmer until the cauliflower is tender, about 20 minutes. Remove from the heat and allow the soup to cool for about 10 minutes.
- Puree half of the soup in a food processor or blender. Return the puree to the pot and add the milk, salt, white pepper, and nutmeg. Return to a simmer over medium heat, them remove from the heat.
- Beat the egg yolks in a heat-proof bowl. Ladle a cup of the hot soup into the yolks while whisking to temper the egg yolks. Repeat with another cup of the hot soup, then quickly stir the egg mixture back into the soup and stir for about 1 minute. Do not boil the soup or the eggs will curdle. Add the lemon juice, taste and adjust the seasonings, if necessary. Add the cayenne pepper and garnish with minced parsley or chives. Serve hot.
- The soup can be made 1 day in advance to the point of adding the eggs. Reheat the soup over medium heat and continue with the recipe.

CREAM OF CAULIFLOWER SOUP

Steps:
- Trim root end and tough, green leaves from leek.
- Quarter the leek lengthwise leaving attached at root end, and wash well under running water, pulling leaves apart to remove all grime.
- Slice the leek thinly.
- Combine leek and butter in soup pot.
- Cover and heat slowly over a medium heat, stirring occasionally to keep from sticking.
- Cook ten minutes, then add shallot.
- Continue cooking, covered, stirring occasionally until leek is very soft, about 10 more minutes.
- Increase heat to medium-high and add wine.
- Cook, stirring, until wine has reduced by about half.
- Add cauliflower and potato, stirring until coated with leek mixture.
- Add chicken stock and water, cover and bring to a boil-- about 5 minutes-- and cauliflower should mash with a spoon.
- Remove half the soup to a blender.
- Add half of mustard and sour cream, pulse to grind, then increase to puree.
- Remove to clean saucepan and repeat process in blender with remaining cauliflower mixture, mustard and sour cream.
- Bring back to simmer-- do not allow to boil or sour cream will curdle-- and season to taste with salt and additional mustard.
- Ladle into bowls and grate fresh nutmeg over top.

I first had this dish -- from ''French Provincial Cooking,'' by Elizabeth David -- at a dinner party that Jasper Conran gave years ago. I have been making this favorite of Madame Recamier and Franois Rene de Chateaubriand ever since.

- Separate the cauliflower head into florets and steam until soft, about 15 minutes. Purée in a food processor.
- Heat chicken broth until boiling. Add cauliflower purée, bring to a boil, reduce heat and simmer for 15 minutes.
- Remove from the heat, stir in the milk and taste. If it is too salty, add a little more milk. Add the butter, and stir until it melts. Whisk egg yolks and 1/2 cup water in a bowl until blended. Pour through a sieve into the soup. Whisk soup until blended.
- Return soup to the stove and whisk over medium-low heat until it thickens into a cream. Taste and add salt if necessary.

GERMAN CREAM OF VEGETABLE SOUP
Hey, where's the cream? No, no cream here, only delicious healthy soup. This is a VERY healthy, low calorie soup. My family loves it. I serve it with thick slices of German bread.

- Bring the stock to simmer. The taste of the soup will be different depending on which stock you use. You can also use 2 quarts water + boullions.
- Clean and slice the leek, white/light green part only. Clean and chop the celery. Peel the carrots and potatoes and dice them. Put everything in the simmering stock. Add salt, marjoram, oregano and basil. Simmer for 1-1/2 hour.
- Take out a big bowl to hold the soup while you use the blender to puree/liquify it.
- VERY IMPORTANT! Only fill the blender container half full and make sure the steam can escape on top. I usually hold a paper towel over the top to prevent splatter. You can also let the soup cool a bit before you puree/liquify it.
- Put the pureed/liquified soup back in the pot and reheat. Taste and add salt and pepper if needed. If you have fresh basil around, chop some and sprinkle over the soup.
- Serve with delicious fresh bread.
CREAM OF CAULIFLOWER SOUP
This is a recipe I came up with after trying a few different Cream of Cauliflower Soup recipes. I think the roasted garlic and the white wine imparts such a wonderful flavor in the soup. I like it to have a little consistency and not to be broth-like so I don't usually need to add any additional chicken broth, however, if you prefer a thinner soup you may need to add a little broth depending on how big your cauliflower heads are. I know it may look a little labor-intensive, but once you taste it I think you will agree it is well worth the time and effort especially if you serve it on a cold winter night.

- Preheat oven to 300 degrees.
- Remove loose outer leaves from garlic and slice off tops of bulbs so that each clove is open at the top.
- Place heads of garlic on a piece of aluminum foil.
- Place on cookie sheet.
- Drizzle garlic heads with 1 tsp olive oil.
- Seal foil and bake for 1 hour.
- Open foil and bake for an additional 20 minutes.
- Remove from oven and let cool.
- When cool enough to handle squeeze garlic from husks.
- Using a fork mash garlic and set aside.
- In large heavy stockpot melt butter.
- Add diced onions and carrots and saute over medium-low heat until soft, about 30 minutes.
- While sauteing onion and carrot mixture clean cauliflower removing leaves and separate into small to medium florets.
- Once onions and carrots are soft add flour and saute' for about 3 minutes.
- Slowly whisk in wine to flour mixture, mixing thoroughly.
- Add 4 cans of chicken broth, thyme, black pepper, salt, white pepper, tabasco sauce, cayenne pepper and mashed roasted garlic, mixing thoroughly.
- Add cleaned cauliflower and bring to a boil.
- Lower heat, cover and simmer over low heat about 45 minutes.
- Using a slotted spoon remove about one-half of cauliflower from stock.
- Using an immersion blender or food processor blend until smooth, making a paste.
- Return pureed cauliflower to stock pot and add heavy cream and shredded Swiss Cheese.
- Bring to a simmer and cook for an additional 10 minutes.
- Depending on the thickness you may or may not need to add a little more chicken broth.
- If using additional broth to thin only add a little at a time.

It's very different than other cream of cauliflower. It is my favourite for now. The ginger, the turmeric and the lime juice give the particular taste.

Steps:
- In a large pot sauté onion in butter on medium heat until golden.
- Add ginger, leek, celery, carrots and garlic and continue to cook for a further 4 to 5 minutes or until vegetables are just golden.
- Add the flour and stir until blended.
- Add remaining ingredients, except cream, lime juice and parsley and bring to a boil.
- Cover and reduce heat to low.
- Simmer the soup for 30 minutes or until cauliflower is tender.
- Add the cream and lime juice.
- Remove lid and continue to simmer for a further 15 minutes.
- Adjust seasoning.
- Sprinkle with chopped parsley and serve.

ROASTED CAULIFLOWER SOUP

Steps:
- Preheat oven to 450 degrees F (230 degrees C).
- Place the cauliflower in a small roasting pan. Drizzle with oil and season with nutmeg, garlic powder, salt, and pepper; toss to coat.
- Roast the cauliflower in the preheated oven stirring every 10 minutes until golden brown and tender, 30 to 40 minutes. Remove from the oven and set aside.
- Melt the butter in a large saucepan over medium heat. Add the chopped onion and cook and stir until lightly golden brown, about 10 minutes.
- Sprinkle the flour over the onions and stir to coat. Slowly pour the chicken broth and milk into the pan. Mix with a wire whisk until all of the flour is dissolved. Bring to a boil while stirring continuously until it thickens, then reduce heat to low. Stir in the sherry and the roasted cauliflower. Serve as is, or blend half and recombine with the rest of the soup for a thicker consistency.
