GERMAN PANCAKE WITH MARINATED BERRIES
Everyone in my family loves these...perfect for mornings where you have time to relax and enjoy a meal. The marinated berries make it extra special.

- Preheat the oven to 425 degrees F.
- In a medium bowl, whisk together the eggs, salt, sugar, milk, vanilla, and butter. Whisk in the flour to make a smooth batter. Set aside.
- Heat a well-seasoned 10-inch cast-iron skillet in the oven for 10 minutes. Remove and brush the inside with the shortening. Pour in the batter and bake for 15 minutes.
- Lower the oven to 350 degrees F. and continue baking until puffed and golden brown, about 13 to 15 minutes more. Run a knife around the edge of the skillet. Sift the confectioners' sugar over the pancake. Serve immediately in the skillet with maple syrup and marinated berries.
- To make marinated berries: In a small saucepan, combine the sugar, vanilla bean and seeds, citrus zests, and water. Bring to a boil and then reduce the heat to low. Simmer very gently until syrupy, about 25 minutes. Remove from the heat and add the citrus juices and/or liquor such as Grand Marnier. Combine the berries in a bowl. Strain the warm syrup over the berries and marinate at room temperature for 30 minutes. Serve with the pancakes.

- Preheat oven to 400 degrees F.
- Whisk together eggs, milk, sugar, salt, and vanilla extract. In a separate bowl whisk together flour and baking powder until blended. Dump the dry ingredients into the wet and whisk until homogenous. Let stand at least 10 minutes.
- Heat an 8 or 10-inch cast iron skillet in the oven with the butter.
- Pour the batter into the cast iron pan and bake until the pancake is golden brown, puffed up and set in the center, about 15 minutes.
- To make the mixed berry syrup: Heat the berries in a small saucepan with the maple syrup until mixture thickens, but you can still see the berries. Serve warm over a wedge of pancake, dusted with powdered sugar.

- Peel, core, and cut both the apples and pears into 3/4-inch wedges. In a medium bowl, toss the fruit with the lemon juice.
- Melt the butter in a medium skillet over medium heat. Add the sugar, orange zest, and cinnamon sticks and stir until sugar is dissolved. Add the fruit, increase the heat to medium-high, and cook, shaking the pan frequently, until glazed, about 10 minutes. Raise the heat to high, add the orange juice, and cook until the fruit is easily pierced with a paring knife, about 1 minute more. If desired, add the Calvados. If cooking on a gas burner, carefully tip the pan toward the flame to flambe the alcohol; if cooking over an electric element, hold a long match near the mixture. Swirl the pan over the heat until the flame subsides. Serve warm.
GERMAN PANCAKES
These look quite good, economical and impressive to boot! I think topping with fresh berries would be the way to go for me. I will probably use whole or 2% milk. From Cooking Light 1996. Posted for ZWT 2010.

Steps:
- Combine first 3 ingredients in a medium bowl; stir well.
- Combine milk and egg in a small bowl; stir well. Add to flour mixture, stirring well with a wire whisk.
- Coat a 10-inch nonstick skillet with cooking spray, and place over medium-high heat until hot. Remove pan from heat, and pour a scant 1/4 cup batter into pan; quickly tilt pan in all directions so batter covers pan with a thin film. Cook about 1 minute.
- Lift edge of pancake carefully with a spatula to test for doneness (pancake is ready to turn when it can be shaken loose from pan and the underside is lightly browned). Turn pancake over, and cook an additional 30 seconds.
- Place pancake on a towel, and let cool.
- Repeat procedure with remaining batter. Stack pancakes between single layers of wax paper or paper towels to prevent sticking.
- Spread 1 tablespoon preserves over each pancake, and roll up. Garnish with orange slices and raspberries, if desired. Sprinkle with powdered sugar, if desired.
