SOUTHERN STYLE GERMAN POTATO SALAD

- For the dressing:
- Through the feed opening of a running blender add, 1 at a time, apple cider vinegar, balsamic vinegar, thyme, Dijon mustard, garlic, honey, salt, and ground black pepper. Leaving the blender running, slowly add the olive oil in a thin stream. Set aside until needed.
- For the Salad:
- Heat the olive oil over medium-high heat in a saute pan and brown sausage. Remove to a cutting board and slice into 1/4-inch pieces, then return to pan and cook over medium heat until cooked through. Using a slotted spoon, remove to paper towels to drain.
- Combine sausage, green beans, 2 tablespoons of the chives, and scallions in a large bowl. Add enough dressing to coat. Then gently fold in potatoes, taste and add enough dressing as needed. Do not feel compelled to use all of the dressing. Serve family style, garnished with remaining chives, and with any extra dressing on the side.

- Place the potatoes in a Dutch oven and cover with water. Bring to a boil. Reduce heat; cover and simmer for 15-20 minutes or until tender. , Meanwhile, in a large skillet, cook bacon over medium heat until crisp. Using a slotted spoon, remove to paper towels. In the drippings, saute the onion, celery and green pepper until tender. Stir in the flour, sugar, salt and pepper until blended. Combine water and vinegar; stir into vegetable mixture. Bring to a boil; cook and stir for 2 minutes or until thickened., Drain potatoes and place in a large serving bowl. Pour dressing over potatoes. Add bacon and toss to coat. Serve warm or at room temperature. Refrigerate leftovers.

- In a large skillet, cook bacon over medium heat until crisp. Remove to paper towels with a slotted spoon to drain. Saute onion in drippings for 1 minute. Add sausage; cook until lightly browned. Add potatoes; cook 2 minutes longer. Drain., Transfer sausage mixture to a 3-qt. slow cooker. In a small bowl, combine the soup, sauerkraut, water, vinegar, sugar, salt and pepper. Pour over sausage mixture. Sprinkle with bacon. Cover and cook on low until potatoes are tender, 6-7 hours.

- In a large frying pan, heat the butter and 1 tablespoon of the oil over medium-high heat.
- Add the onions, thyme, and caraway seeds.
- Sauté 2-3 minutes, or until the onions begin to soften.
- Lower the heat, cover, and cook, stirring occasionally, 20-30 minutes, or until the onions are tender but not browned.
- While the onions are cooking, place the potatoes in a large pot, cover with water, and bring to a boil over high heat.
- Lower the heat and simmer, covered, 15 minutes.
- Pierce the kielbasa several times with a fork, add to the potatoes, and simmer 10 minutes, turning several times.
- Drain, cool slightly, and then slice the potatoes and kielbasa into ½ pieces- place in a large bowl.
- In a small bowl, whisk together the remaining oil, vinegar, brown sugar, and mustard.
- Season with salt and pepper.
- Drizzle this mixture over the potatoes and kielbasa and mix well.
- Arrange the onions on a serving platter and top with the potato mixture.
- Sprinkle with dill and serve warm.
SCHWABISCHER KARTOFFELSALAT (GERMAN POTATO SALAD - SWABIAN-STYLE)
Living in southern Germany, this is one recipe that I had to get before we got back to the States. This style of potato salad is served at every restaurant and is in all the grocery stores. I got this recipe from one of my German friends, so this is an authentic German potato salad and tastes excellent!

- Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, about 20 minutes. Drain; allow potatoes to cool slightly. Peel and slice potatoes. Mix potatoes and onions in a bowl; stir in mustard, salt, and black pepper.
- Bring vegetable stock to a boil in a small saucepan, pour over potato mixture and stir to combine. Stir in vinegar and let rest for 10 minutes. Stir in vegetable oil and season with salt and black pepper if desired.

- Scrub potatoes and cook in water to cover until potatoes are done, about 17 minutes. If tiny new potatoes are not available, use large ones, scrub and cut into eighths. Cook about 10 minutes.
- Cut sausages into tiny pieces.
- Heat nonstick pan and saute until sausages are cooked, about 7 minutes.
- Mix flour with a little of the vinegar to a smooth paste. Stir in remaining vinegar until smooth; stir in sugar, celery seed and water, and set aside.
- Drain potatoes, and cut into bite-size pieces.
- Chop pimento; trim and thinly slice scallions.
- Stir flour mixture into sausages with potatoes, and stir until mixture thickens. Stir in pimento and scallions.
- Season with salt and pepper.

- Meanwhile, fry the frankfurters in the olive oil over a medium heat for 5 minutes, turning occasionally.
- Make the dressing for the salad. Mix all the ingredients together. Pop the potatoes into a bowl, add the scallions, frankfurters and mix with the dressing. Sprinkle with the chopped chives to serve.

- Add potatoes to a large saucepan filled with salted water and bring to a boil. Cook until tender (about 15 minutes). Drain. Add potatoes to a large bowl and sprinkle with white vinegar. Stir in dill pickles and onions. Let cool.
- Preheat oven to 400F. Remove any loose layers from the garlic head. Cut the top of the garlic head to expose the cloves. Place on a sheet of aluminium foil and drizzle with olive oil. Bake for 40 to 45 minutes, until softened. Squeeze garlic into a bowl and mash with a fork. Set aside.

- Add mayonnaise, mustard, salt and pepper to the bowl with the garlic. Stir to combine. Pour over potato mixture and toss. Sprinkle on parsley and stir to combine. Refrigerate until ready to serve.
