REAL GERMAN BAKED APPLES
This really delicious Baked Apple and easy-to-make recipe is perfect for the season. Cinnamon and raisins warm you during cold and windy winter evenings.

- Preheat the oven to 375 degrees F (190 degrees C). Place the cored apples upright in a shallow baking dish.
- In a medium bowl, whip the egg white until it holds a stiff peak. Sprinkle in the sugar, and whip just a bit more. Stir in the cinnamon, raisins, and toffee until evenly distributed. Spoon into the cores of the apples.
- Bake uncovered for 5 to 10 minutes in the preheated oven, until the meringue is crisped. Allow to cool slightly before serving.

- In a large bowl, beat eggs, add milk, saltines, apple and onion. Add the sausage and mix well. Lightly press into a greased 6-cup ring mold or other mold. Invert onto a lightly greased 15x10x1-in. baking pan; remove mold. Bake, uncovered, at 350° for 1 hour or until a thermometer reads 170°; drain.

- 1. Preheat the oven to 325°F. Liberally grease a 2 1/2- to 3-quart casserole dish and set aside. 2. Place a large skillet over medium heat. Add the sausage and cook until browned. 3. In a large bowl, combine the cooked sausage, as well as the sausage drippings, with all of the remaining ingredients except for the water or chicken broth. Stir in the liquid. 4. - Heat a 12-inch skillet over medium heat, and add 1 tablespoon oil. Halve sausages lengthwise if desired. Cook until browned and heated through, about 3 minutes per side. Transfer to a plate, and cover to keep warm.
- Add remaining tablespoon of oil to skillet if necessary. Add onion, and cook for 3 minutes. Add apples, stir, and cook until softened, 6 to 7 minutes. Stir in cider, and cook for 1 minute. Add sauerkraut, and heat until warmed through, about 2 minutes.
- Transfer sauerkraut to a warm serving platter, and top with the sausages. Serve with pickles, cucumber, and mustards. (Sausages and sauerkraut can be kept warm, covered, in a 250-degree oven for up to an hour.)

Steps:
- Preheat oven to 400 degrees.
- In an oven safe skillet cook pork sausages until done.
- Remove, slice thin and pour off all the fat except 1 or 2 T.
- Mix together the eggs, milk and oil Add flour, 1/2 t.
- apple pie spice, salt and sausages.
- (some folks put the sausages in the apple syrup) Pour into hot skillet and bake in the oven for 15 minutes.
- Poke with a fork and bake for another 5 minutes.
- You want your pancake golden brown.
- Sauce------------------.
- Combine brown sugar, cornstarch and the remaining apple pie spice in a medium saucepan.
- Heat over medium high and add cider or juice, lemon juice.
- Stir well and cook until thick and bubbly.
- Add the apples (and sausage if reserving for sauce) and cook for 5 minutes more.
- Cut pancakes, plate up and serve with sauce.
