GERMAN CUCUMBER SALAD
This is a recipe for a refreshing German Cucumber Salad. Called Gurkensalat, it's a staple side salad you'll find versions of in every household in Germany. It's particularly favoured during the warmer weather for its cooling effects, as well as alongside rich mains such as German Pork Knuckle.It will go with virtually any European or Western dish, as it has a clean, neutral flavour.The dressing is very thick at first, but it naturally becomes diluted with the cucumber juices so you end up with a thinner, white dressing. This makes this Cucumber Salad refreshing rather than cloying. Don't skip the dill, it really makes it!

Steps:
- Peel cucumbers and finely slice into 2mm / 0.2" slices using a mandoline (or by hand and show off your knife skills!)
- Mix dressing ingredients in a small bowl.
- Toss cucumbers with dressing, then set aside for at least 4 hours or even overnight. The cucumbers will soften and leach juice which will thin the dressing to the right consistency.
- Serving: Toss well then transfer to bowl for serving. Serve chilled for the most refreshing flavour!

GURKENSALAT (GERMAN CUCUMBER SALAD)
A traditional German favorite that I have loved since I was a child. This recipe is quick, easy, and delicious. Substitute cider vinegar for a different flavor. I prefer to leave the skins on the cucumbers for more texture and flavor, but they can also be peeled prior to slicing if desired. Flavor is best when marinated for several hours before serving.

- Spread cucumbers and onion on a platter; season with salt and let rest for 30 minutes. Squeeze excess moisture from cucumbers.

- Refrigerate 8 hours to over night; garnish with paprika to serve.

- In a small bowl, whisk together sugar, salt, mustard, and celery seeds. Whisk in oil and vinegar until emulsified. Pour vinaigrette over vegetables; toss to coat. Cover, and refrigerate at least 4 hours to let flavors blend. Serve chilled.

This is a great side dish and very addictive (my Grandfather drank the sauce left after eating the kukes and now we all do that)! I love it for barbecues -- great with potato salad and burgers or chicken.

- Soak the kukes and onions in salt water for 30 minutes.
- In a small bowl, stir together the evaporated milk and sugar.
- Add vinegar a little at a time until well blended and starts to thicken some. Add more vinegar if needed to taste for sweet/sour you prefer.
- Squeeze the kukes and onions by hand and add to the sauce mixture. Chill until serving time.

- Peel and slice your cucumber, slice your tomato, and slice your onion. I like to slice, then quarter the onion because its easier to eat. In a bowl, combine dill and salt. Add sour cream or yogurt and lemon juice to taste. Mix well. Add onion, cucumber, and tomato to the mixture and stir until the veggies are coated with the dressing.
GERMAN CUCUMBER SALAD WITH SOUR CREAM
This is a very light, tasty salad, and not sweet like many cucumber salads. It's very refreshing with a tangy bite from the green onions. I used dried herbs, of course using less, and it was still very tasty. I got the recipe many years ago from a recipe board online, but do not remember the source. However, it was attributed to a man who made this for his guests at an inn he ran in Germany. I included slicing the vegetables in the approximate time.

- Wash the cucumbers and peel, if desired (we usually don't peel the cucumbers when making the recipe). Thinly slice the cucumbers using a mandolin or the slicing side of a four-sided box grater. Add the cucumber slices to a bowl.
- Sprinkle 1 teaspoon of salt over the cucumbers and let them sit for 20 minutes. This will remove excess moisture. After the 20 minutes, give the cucumber a squeeze to remove even more water. Be sure to drain any excess liquid from the bowl.
- While you're waiting for the cucumber slices, wash, dry, and finely chop the dill. Make sure to remove the hard stems first. Also, peel and finely chop a small onion. Add both (dill and onion) to the cucumber bowl after the 20 minutes are up and you have drained the liquid.
- Add the oil, vinegar, sour cream, sugar, and pepper to the bowl. Mix well. Add more salt (be careful here since you added quite a bit of salt earlier!) and/or pepper if desired. Serve and enjoy!
