1 Reynolds® Oven Bag, Large Size
1 tablespoon flour
1/3 cup orange juice
2 tablespoons honey
2 tablespoons Dijon mustard
2 pork tenderloins (3/4 pound each)
Dried basil
Seasoned salt
4 medium carrots, sliced
2 medium apples, cored and cut in eight slices

Steps:

  • Preheat oven to 350°F., Shake flour in Reynolds® Oven Bag; place in 13x9x2-inch or larger baking pan at least 2 inches deep., Add orange juice, honey and mustard to oven bag. Squeeze bag to blend in flour. Sprinkle tenderloins with basil and seasoned salt. Place in bag, tucking the narrow end of each tenderloin under for even cooking. Place carrots and apple slices in bag around tenderloins., Close oven bag with nylon tie; cut six 1/2-inch slits in top. Tuck ends of bag in pan., Bake 40 to 45 minutes or until meat thermometer reads 160°F.

Delicate and lean, pork tenderloin is an excellent cut that can be roasted whole or sliced into medallions. This recipe will allow you to prepare the rest of the meal while the tenderloin is roasting in the oven. I like to serve this with sauteed apple slices, sweet potato cakes and haricotes vert with walnuts.

3 lbs pork tenderloin, whole
1 1/2 teaspoons salt
3/4 teaspoon fresh ground black pepper
2 tablespoons vegetable oil
2 cloves garlic, minced
2 tablespoons minced shallots
1 tablespoon tomato paste
2 tablespoons whole grain mustard
2 tablespoons honey
2 1/2 tablespoons red wine vinegar
1 1/2 teaspoons thyme, chopped
1/2 teaspoon salt
1 teaspoon black peppercorns, crushed
1 1/3 cups vegetable broth or 1 1/3 cups chicken broth

Steps:

  • Preheat oven to 425*F.
  • Place a rack in a roasting pan, spray with nonstick spray, and place in oven.
  • Remove any excess fat or silverskin from the tenderloin.
  • Season the tenderloin with salt and pepper.
  • Heat the vegetable oil in a large saute pan over medium high heat.
  • Sear the tenderloin until it is golden brown on all sides, about 5 minutes.
  • Remove the tenderloin and place it on the rack in the roasting pan.
  • Roast to the desired doneness.
  • (Pork is safely cooked when it reaches an internal temperature of 160*f) This will take approximately 15 to 20 minutes.
  • while the tenderloin is roasting, return the saute pan to medium heat.
  • Add the garlic and shallots; cook until fragrant, about 1 minute.
  • Add the tomato paste and cook until slightly browned.
  • Add the mustard, honey, vinegar, thyme, salt, pepper and chicken broth.
  • Bring to a boil, then simmer until the mixture reduces to a sauce consistency, about 10 minutes.
  • Keep warm.
  • Remove the tenderloins from the oven and let stand 5 to 10 minutes, before slicing.
  • Carefully skim and discard the fat from the pan juices.
  • Pour the degreased pan juices into the sauce.
  • Bring the sauce to a boil again, reduce the heat and simmer until it is slightly reduced again.
  • Serve the pork sliced with the warm honey-mustard sauce.

1 teaspoon kosher salt
1 teaspoon freshly ground black pepper
2 tablespoons grapeseed oil
2 tablespoons grapeseed oil
2 large shallots, chopped
1/2 teaspoons kosher salt, plus extra for seasoning
1/4 teaspoon freshly ground black pepper, plus extra for seasoning
3 cloves garlic, minced
1/2 cup white wine, such as pinot grigio
1/2 cup honey
1/2 cup Dijon mustard
2 tablespoons red wine vinegar
1 tablespoon chopped fresh thyme
2 tablespoons unsalted butter, cut into 1/2-inch pieces, at room temperature
6 sourdough demi-baguettes or rolls, halved lengthwise

Steps:

  • For the pork tenderloin: Place an oven rack in the center of the oven. Preheat the oven to 400 degrees F. Spray a heavy baking sheet with vegetable oil cooking spray. Set aside.
  • Sprinkle the pork with the salt and pepper. Heat the oil in a large skillet over medium-high heat. Add the pork and brown on all sides, about 8 minutes. Transfer the pork to the prepared baking sheet and bake until a meat thermometer inserted into the thickest part of the meat registers 160 degrees F, about 30 minutes.   • To assemble the sandwiches: Slather the honey mustard on the cut sides of the baguettes. Arrange the pork slices in a single layer on the bottom halves of the baguettes. 2 tablespoons honey
2 garlic cloves, minced
2 tablespoons chopped fresh rosemary leaves
1 (3 1/2-pound) center-cut, boneless, pork loin roast
12 slices bacon (about 1 pound)
3 tablespoons fresh lemon juice
3 tablespoons extra-virgin olive oil
Kosher salt and freshly ground black pepper
5 cups (5 ounces) baby arugula

Steps:

  • For the pork: Put an oven rack in the lower 1/3 of the oven. Preheat the oven to 350 degrees F.
  • In a small bowl, add the Dijon mustard, whole-grain mustard, honey, garlic, and rosemary and mix together until smooth. Arrange the pork in a 9 by 13-inch baking pan and spread the mustard mixture evenly over the pork. Starting on 1 side, lay a piece of bacon, lengthwise, on the pork. Remove the pan from the oven and transfer the roast to a cutting board. Cover the pan with foil and allow the pork to rest for 20 minutes. Remove the kitchen twine and slice the pork into 1/2-inch thick slices.
  • For the salad: In a small bowl, whisk together the lemon juice and oil until smooth. Season with salt and pepper, to taste.
  • Put the arugula on a large platter and drizzle with the dressing. Arrange the pork slices on top and serve.

⅓ cup red wine
⅓ cup soy sauce
2 tablespoons light brown sugar
2 pounds pork tenderloin
⅓ cup mayonnaise
⅓ cup sour cream
1 ½ tablespoons mustard powder
1 tablespoon minced fresh chives

Steps:

  • Combine wine, soy sauce, and brown sugar in a large resealable plastic bag. Place tenderloin in bag, and refrigerate overnight, or at least 8 hours.
  • In a small bowl, combine mayonnaise, sour cream, mustard powder; mix well. Mix in minced chives if you wish. Chill until ready to serve.
  • Preheat oven to 325 degrees F (165 degrees C). Place meat and marinade in a shallow baking dish, and roast for 1 hour, basting occasionally. Temperature of meat should register 145 degrees F (63 degrees C). Let rest for a few minutes, then cut into 1/2 inch thick slices. Serve with mustard sauce.
