GIFT IN A JAR: DOWN HOME CORNBREAD MIX

Steps:

• 1. In large bowl: Mix all ingredients together well.
• 2. Spoon 2 cups of mixture into dry sterilized jars. Wipe the rim of the jars. Place lids and rings.

Steps:

• Sift ingredients together and put into a bag.
• Label: Put dry ingredients into mixing bowl.
• In small bowl, combine 1 cup water, 1 egg, and 1/3 cup oil.
• Stir into dry ingredients and mix well.
• Pour into a well-buttered pie plate.
• Bake at 425 degrees for 25 minutes, or until golden.

Steps:

• In a large glass or ceramic bowl, stir all the ingredients together.
• Store in an airtight container decorated with a pretty ribbon.

Grease one 8-inch square pan, or 8-inch cast iron skillet, or cast iron cornbread mold. Place cornbread mix into bowl, mix thoroughly. Add egg, milk and shortening. Hand-beat until smooth, about one minute. Bake for 15-20 minutes until done

Steps:

• In a large bowl, combine the dry ingredients; cut in shortening until crumbly. Store in an airtight container in a cool, dry place or in the freezer for up to 6 months. Yield: 5 batches (11-2/3 cups total)., To prepared cornbread: In a large bowl, whisk egg and milk. Stir in 2-1/3 cups cornbread mix just until moistened (the batter will be lumpy).
