LOW CARB CRACK SLAW WITH BEEF AND CABBAGE
A quick and easy low carb skillet dish made with grated cabbage and ground beef. So good, it can be addicting which is how it got it's name.

Steps:
- In large skillet or wok, brown the ground beef with garlic, ginger, salt, and pepper.
- Remove beef from skillet.
- Heat olive oil in skillet. Add cabbage and cook until it begins to brown.
- Stir tamari, vinegar, stevia and red pepper flakes (if using) into cooked cabbage. Add in browned ground beef and continue cooking until well heated.

Steps:
- Warm oil in a skillet over medium-low heat. Sauté garlic and ginger for 1 minute.
- Add cabbage and salt; stir fry until soft for about 5-8 minutes.
- Push cabbage to one side of the skillet. Increase the heat to medium-high and lightly brown the meat for 2 minutes. Mix all together and continue cooking until meat is done to your liking.
- Reduce heat back to medium. Whisk soy sauce, sesame oil, and apple cider vinegar in a bowl. Pour over meat and stir to combine.
- Garnish with green onion. Serve warm.

- Prep the sauce. In a small bowl or cup, mix together the sesame oil, soy sauce, water, vinegar, brown sugar (or maple/honey), black pepper and sesame seeds. Set aside.
- Warm a large skillet over a medium-high heat with 1 tablespoon of cooking oil. When the pan is hot, add the garlic, ginger and ground beef. Break up the beef with a wooden spoon into and cook 5-7 minutes until the beef has browned.
- Add the carrots and cabbage and cook another 5 minutes until the vegetables are tender.
- Stir in the green onions along with the sauce mixture. Increase the temperature and mix well making sure to evenly coated the beef and veggies in sauce. Cook about 3-4 minutes until the sauce soaked into the stir fry. Taste and season with salt and pepper as your see fit.
- Remove from the heat and serve immediately over a bed of rice or noodles. Serve over cauliflower rice or mixed into zucchini noodles for a low carb meal.

- Cook and stir beef in a large saucepan or Dutch oven until browned, about 5 minutes; drain excess grease.
- Stir beef bouillon into chicken broth in a bowl until dissolved; add to beef.
- Mix onions, Greek seasoning, black pepper, and bay leaves into broth-beef mixture; cover saucepan and simmer until beef is tender, about 1 hour 15 minutes. Add cabbage and celery to broth-beef mixture; cover saucepan and simmer until celery is tender, about 30 minutes more.
- Stir plum tomatoes, tomato sauce, and salt into broth-beef mixture and simmer, uncovered, until stew is slightly thickened, 15 to 20 minutes. Remove and discard bay leaves before serving.
