- In a blender container combine 1 1/2 cups cucumber, limeade concentrate and ginger. Cover and blend until nearly smooth.
- In 1-quart pitcher gently stir together cucumber mixture and club soda.
- Serve immediately over ice cubes. Garnish with cucumber slices, if desired.

- Peel English cucumber; remove any seeds. Coarsely chop and combine in a blender with water, sugar, lime juice, coarse salt, and ice cubes; blend until smooth. Serve over ice, garnished with cucumber spears, if desired.

- Mix the 1 cup of water with the ginger and squeeze through a strainer to get ginger concentrate.
- Add sugar and lime juice.
- Stir until all the sugar is dissolved. (If you like it sweeter you can add more, to taste, at this point.).
- Pour into bottles and refrigerate. Chill well.
- When ready to serve, add a teaspoonful of concentrate to chilled water or sprite and mix well.
- Serve garnished with a mint leaf.

- In a small saucepan stir together 2 cups of the water, the sugar, and the ginger, bring the mixture to a boil, stirring until the sugar is dissolved, and simmer it for 3 minutes. Strain the syrup through a fine sieve set over a bowl and let it cool. In a pitcher combine the cooled syrup, the remaining 1 1/2 cups water, and the lime juice and stir the limeade well. Divide the limeade among the tall glasses filled with ice cubes and garnish each drink with a lime slice.
STRAWBERRY HIBISCUS LIMEADE
Red drinks are central to Juneteenth celebrations, as the color red represents the blood shed by enslaved people. Strawberry soda is commonly served, but this punch builds on that tradition, adding hibiscus, lime juice and mint to a strawberry base. It's a great way to use up slightly overripe strawberries. (It's better to use overripe berries than underripe ones, since underripe berries can have bitter notes.) The pineapple juice ice cubes are a little extra effort, but they melt right into the drink, changing its flavor as you drink it. At first, it's good. Over time, it's incredible.

- The night before serving, make the pineapple ice cubes: Pour pineapple juice into an ice cube tray, and allow to freeze overnight.
- To a large pot, add 6 cups of water and bring to a boil over high heat. (Alternatively, you can boil the water in a tea kettle.)
- Add the mint leaves to a pitcher, and muddle them to release oils. To the pitcher, add the tea bags, boiling water and lime juice. Stir to combine, then steep for 15 minutes.
- While the tea steeps, purée strawberries in a blender. (You should have about 1 cup purée.)
- Add strawberry purée and hibiscus syrup to the pitcher, stir and refrigerate until ready to use.
- Add pineapple ice cubes, if using, to each glass, and pour limeade over. Serve garnished with fresh strawberries, lime slices and mint.

- Place the first 13 ingredients in a blender. Cover and process until pureed., In a small bowl, mix ginger, lime juice, oil, salt and pepper. Rub over flesh side of salmon fillets., Lightly oil the grill rack. Place salmon on rack, skin side down.
