GINGERBREAD COFFEE CAKE
Steps:
- 1. Preheat the oven to 350°F. Butter a 9-inch square cake pan, line with foil, and butter again.
- 2. In a bowl, whisk the flour, baking soda, baking powder, and salt. In another bowl, whisk the sour cream and coffee.
- 3. Using an electric mixer, beat the butter and sugar on medium speed until pale and fluffy. Beat in the eggs, one at a time, until incorporated. Reduce the speed to low and add the flour mixture in thirds, alternating with the coffee mixture, and scraping the bowl occasionally. Pour into the prepared pan and sprinkle the cookies on top.
- 4. Bake until a toothpick inserted in the center comes out clean, about 40 minutes. Let cool in the pan on a wire rack. Lift out with the foil to cut into pieces. Serve warm or at room temperature.
OLD FASHIONED GINGERBREAD CAKE
This is the easiest gingerbread cake you'll ever make and the best tasting too. The texture is excellent. A family favourite.

- Preheat oven to 350 F
- Grease and flour an 8"x 8" square pan (or line the pan with parchment paper.) *
- Sift together dry ingredients in a large bowl.
- Add the butter, molasses and egg and beat for two minutes or 300 strokes by hand. (This is a very old recipe...)
- Add the boiling water.
- Beat for another two minutes and turn into prepared pan.
- Bake 50-55 minutes, or until cake springs back when lightly touched.
OLD FASHIONED GINGER CAKES
These have been around for a long time. I first tried them at the New Boston Fair near Springfield, OH, which takes place 200 years in the past. They are wonderful.

- Preheat oven to 350. Sift together the flour, salt, ginger, and cinnamon. Stir the soda into the molasses. Melt the butter in the boiling water. Turn both wet mixtures into a bowl and stir in the flour mixture. Add more flour if needed, but keep the dough as soft as can be handled. Drop by teaspoonfuls unto an greased cookie sheet.
- Bake until just turning brown at the edges. This recipe will make about twenty cakes.

- Mix oil, buttermilk, egg and vanilla.
- Add flour, sugar, soda, cocoa and salt.
- Mix all together well and add coffee.
- Pour into lightly greased and floured 8X13X2 sheet pan (I have made it in a bundt pan too).
- bake 350F degrees for 30 minutes.
