GINGER ORANGE CHICKEN
This is a very good Ginger Orange Chicken. It is a Diabetic Recipe. My DH is a diabetic. The recipe comes from Lifescan.

Steps:
- Preheat oven to 350 degrees.
- Arrange chicken breast in a single layer, top side up, in a baking dish.
- In a small bowl combine orange juice, soy sauce, brown sugar and ginger.
- Pour over the Chicken.
- Bake for 35 minutes.
- Remove chicken from pan.
- Combine cornstarch with the Splenda and 1/2 cup of water.
- Stir until smooth and then stir into pan juices.
- Put chicken back in pan, top side down in the sauce.
- Bake 10 to 15 minutes longer or untill sauce is thickened and chicken is tender.
- Garnish with orange slices and parsley.
GINGER ORANGE CHICKEN - HCG P2
A fairly easy, tasty way to eat your fruit and protein in one meal while on the HCG diet, phase 2. Keep in mind that the orange counts towards 1 of your daily fruits.

Steps:
- Preheat pan over MED heat.
- Sprinkle chicken with pepper.
- Add chicken to pan and stir fry until brown on all sides, about 5-10 minutes.
- Add garlic and cook for 1 minute.
- Squeeze juice of orange quarters over chicken. Peel & separate juiced orange into sections.
- Add juiced orange sections, ginger, lemon juice, and basil.
- Stir well.
- Cover and simmer for about 20-30 minutes.

- Preheat oven to 350.
- Combine Melba crumbs with spices. Set aside.
- Mix broth and lemon juice in small bowl, dip chicken in this mixture and coat chicken with herb mixture.
- Bake for 20 minutes, until chicken is cooked through.
- Add remaining liquid, a little at a time, if chicken dries out while baking.

SPICY GINGER / ORANGE CHICKEN
You can use this glaze on a whole chicken too but roast it a while before you brush it with the glaze. This glaze bubbles, browns and releases the most wonderful aroma. You'll catch people roaming through the kitchen inhaling. Just have a box of Kleenex handy cause sometimes they drool too!

- Heat oven to 350°F.
- Blend together all the ingredients except the chicken.
- Brush the breasts all over with the marmalade mixture.
- Place in a baking dish lined with foil (easy cleanup).
- Bake for 20-25 minutes until done, basting every 8 minutes.
- If there is any sauce left, heat, and serve along side the chicken.
- Serve.

Steps:
- Place the chicken in the crockpot.
- Place all remaining ingredients on top of the chicken. Cook on high for 2 1/2 hours (depending upon the size of the chicken.).
- After the chicken is done remove it to a cutting board. Remove the chili - unless you like a sauce with a lot of heat.
- To make your sauce simply get out your handy-dandy immersion blender and blend the heck out of everything left in the crockpot.
- Serve with cauliflower rice and pour your delicious sauce over all.

- Place flour in a large resealable plastic bag. Season chicken with salt and pepper. Add to bag, a few pieces at a time, and shake to coat. In a large skillet, cook chicken in oil in batches over medium heat until chicken is no longer pink. Remove and keep warm., In the same skillet, combine the remaining ingredients. Bring to a boil, stirring to loosen browned bits from pan; cook and stir until thickened. Return chicken to the pan; heat through. Sprinkle with green onion and sesame seeds if desired.
