BEEF AND NOODLE CASSEROLE
This is a great recipe for busy mothers, and it's excellent with a tossed salad and French bread. It's a ground beef casserole that combines egg noodles, some sherry, and cheese in a tomato sauce base. To reduce the fat content, you may use reduced fat cheese, cut green beans, and 93% lean meat. Also, you may adjust the amount of sherry to taste.

Steps:
- Preheat oven to 375 degrees F (190 degrees C).
- Cook the noodles according to package directions.
- Brown the ground beef in a large skillet over medium high heat. Stir in the tomato soup, Worcestershire sauce and garlic, bring to a boil, reduce heat to low and let simmer.
- When noodles are done, stir them and the cheese into the simmering sauce until cheese is melted. Stir the sherry into the sauce and stir for 1 minute, then place in a 2 quart casserole dish and sprinkle with the Parmesan cheese to taste.
- Bake in preheated oven for 30 minutes.

Steps:
- Put large pot of water on high to boil.
- While water is heating up, in a large skillet cook ground beef on medium high until browned. Add salt and pepper to taste while cooking. Drain if needed, dependent on fat content.
- When water is boiling add egg noodles to cook according to package.
- While noodles are boiling, add the two cans of soup, drained ca of corn, drained pimentos, and sour cream to the ground beef, stirring to prevent burning and decrease heat to medium low.
- Drain egg noodles and add to the ground beef mixture.
- Add salt and pepper to taste, and enjoy!

- Preheat the oven to 325 degrees F (165 degrees C).
- Fill a large pot with lightly salted water and bring to a rapid boil. Cook egg noodles at a boil until tender yet firm to the bite, 7 to 9 minutes.
- Meanwhile, heat a large skillet over medium-high heat. Cook and stir ground beef, bell pepper, and onion in the hot skillet until beef is browned and crumbly, 5 to 7 minutes. Stir flour into the drippings in the pan; slowly whisk in milk and season with salt and pepper. Stir in 1 cup Cheddar cheese, olives, and pimentos.
- Drain noodles and fold into the beef mixture. Transfer to a casserole dish and cover with remaining cheese.
- Bake in the preheated oven until bubbly and cheese is melted and browned, about 40 minutes.

GLADYS' MEAT AND NOODLE CASSEROLE
This is an old family recipe that everyone always likes. Don't leave out the green onions or the green chilis, they really make the dish! The original recipe called for only half a small can of green chilis, but I usually add the whole can.

Steps:
- Brown meat and drain.
- Add salt, pepper, garlic, oregano, tomatoes, tomato sauce and green chilis. Cook ten minutes and turn off heat.
- Boil water for pasta, adding 1 t salt and no oil. Cook noodles for 7-8 minutes and drain.
- While noodles are still hot, add sour cream, cream cheese and green onions.
- Grease a large, deep casserole dish. I use one that's just over 10 x 10 and about 3 1/2 inches deep.
- Layer noodles, then meat, then noodles and then meat.
- If you make this up the day before, stop at this point, cover and refrigerate. When ready to cook, let casserole sit out of the fridge for a half hour and increase cooking time by 10-20 minutes.
- Bake, uncovered, at 350 degrees for 35 minutes. If your casserole is in a larger (more shallow) pan, reduce the cooking time slightly.
- Add grated cheese and continue baking until cheese is melted.

- Add salt to water for noodles, bring to a boil and add noodles, cooking 7-8 minutes. Grease a 4 quart deep casserole dish.
- Combine sour cream, cream cheese and green onions. When noodles are done cooking, drain and immediately stir in sour cream mixture. Taste and adjust seasoning, then pour into casserole dish.
- Brown ground beef and onion. Add remaining sauce ingredients to meat and cook ten minutes. Taste and adjust seasoning. Pour into prepared baking dish.
- Bake uncovered for 35 minutes, sprinkle cheese on top and bake until cheese is melted. If made the day before, remove from fridge a few hours before baking and add 10-15 minutes to cooking time.
