Orange Marmalade Glazed Ham image

One 8- to 10-pound bone-in smoked fully cooked ham (shank portion)
1/2 cup orange marmalade
1/2 cup whole-grain mustard
1/2 cup loosely packed light brown sugar
2 tablespoons sherry vinegar
1 teaspoon ground coriander
1 teaspoon ground ginger
1/2 teaspoon ground allspice
Freshly ground black pepper
Fresh rosemary sprigs, for serving
Oranges, cut into quarters, for serving

Steps:

  • Let the ham sit at room temperature for 30 minutes to 1 hour. Preheat the oven to 325 degrees F. Trim off any skin from the ham. Score the ham in a diagonal crosshatch pattern (about 1-inch apart) without cutting through into the meat. Place the ham, flat-side down, fattier side up, on a rack in a roasting pan. Pour a 1/2-inch of water in the bottom of the pan. Cover with aluminum foil and roast, about 1 hour. Remove the foil, add more water if the water has dried up and recover loosely with the foil. Continue to bake until the ham reaches 130 degrees F, adding more water if needed to keep the roasting pan from burning, 1 hour to 1 1/2 hours more (about 15 minutes per pound).
  • Increase the oven temperature to 400 degrees F. Whisk the marmalade, mustard, brown sugar, vinegar, coriander, ginger, allspice and a generous amount of black pepper in a liquid measuring cup. Spoon off about 1/4 cup of the pan juices from the ham and whisk into the glaze mixture. Brush about half of the glaze all over the ham. Continue to bake, brushing the ham with the glaze twice more until the surface of the ham is caramelized and the internal temperature in the center of the ham reads 140 degrees F on an instant read thermometer, adding more water if the bottom of the pan dries out and begins to burn, 40 to 45 minutes. Transfer the ham to a cutting board or platter and let rest for 20 minutes before slicing. Serve with the rosemary, oranges and any additional glaze on the side.

Steps:

  • Place ham on a rack in a shallow roasting pan. Score the surface of the ham, making diamond shapes 1/2 in. deep. Combine mustard and allspice; rub over ham., Bake, uncovered, at 325° until a thermometer reads 140°, 2 to 2-1/4 hours. Spread top of ham with marmalade during the last hour of baking, basting occasionally.

1 (5 pound) hickory smoked ham*
½ cup packed light brown sugar
2 tablespoons Holland House® Sherry Cooking Wine
½ cup packed light brown sugar
1 tablespoon cornstarch
2 whole cloves
Dash ground nutmeg
2 tablespoons Dijon-style mustard
½ cup Holland House® Sherry Cooking Wine
½ cup orange juice
⅓ cup golden raisins or dried cherries
1 teaspoon grated orange peel

Steps:

  • Preheat oven to 350 degrees F. Place ham in a roasting pan. In a small bowl, stir together 1/2 cup brown sugar and 2 tablespoons sherry cooking wine. Brush half the glaze over the ham. Roast ham uncovered approximately 20 minutes per pound or until internal temperature is 160 degrees F. See ham wrapper for precise cooking time and temperature; directions may vary. Brush remaining glaze over ham halfway through cooking time.
  • For Sherry-Orange Dijon Sauce, combine 1/2 cup brown sugar, cornstarch, cloves and nutmeg in a 1-quart saucepan. Stir to remove lumps. Stir in mustard until mixture is a smooth paste. Gradually stir in sherry cooking wine and orange juice. Add raisins.
  • Cook sauce over medium-high heat, stirring frequently, until mixture boils. Reduce heat and boil gently 3 to 5 minutes. Serve sauce with sliced ham.

1 reduced-sodium semi-boneless fully cooked ham (6 pounds)
1 cup orange juice
1 cup reduced-sodium chicken broth
1/4 teaspoon ground cloves
GLAZE:
1 cup reduced-sugar orange marmalade
1 tablespoon lemon juice
1 tablespoon Worcestershire sauce
1 teaspoon horseradish mustard or spicy brown mustard
1/8 teaspoon garlic powder
SAUCE:
1/4 cup orange juice
1/4 cup packed brown sugar
1/2 teaspoon ground ginger
1 can (11 ounces) mandarin oranges, drained
1/2 cup golden raisins

Steps:

  • Remove skin from ham. Place on a rack in a shallow roasting pan. Combine orange juice and broth; pour over ham. Sprinkle with cloves. Cover and bake at 325° for 1 to 1-1/2 hours. , Combine glaze ingredients; spoon over ham. 1 1/4 cups brown sugar
1/3 cup pineapple juice
1/3 cup orange juice
1/3 cup honey
2 tablespoons orange zest
2 tablespoons Dijon mustard
1/4 teaspoon ground cloves

Steps:

  • Place ham in a roasting pan, bake at 325°F for two hours.
  • Meanwhile, stir remaining ingredients together in a saucepan.
  • Bring to a boil, lower heat and simmer 10 minutes.
  • When ham has baked two hours, brush the ham with the glaze, continue doing so every 10 minutes while baking for another 30 minutes.
