GLUTEN-FREE DAIRY-FREE CHOCOLATE CANDY COOKIE BARS
A healthier-for-you version of M&M cookie bars, made without dairy, refined white flour, or refined sugar, and made with healthier chocolate candies that don't have artificial colors or flavors.

Steps:
- Preheat oven to 325F. Line an 8×8 inch baking pan with parchment paper, leaving a slight overhang on at least two opposite sides.
- In a medium bowl, mix the almond flour, tapioca flour, coconut flour, cream of tartar, baking soda and salt together with a fork. Set aside.
- In another bowl, mix the olive oil and coconut sugar with a fork until blended. Add the egg, egg yolk and vanilla extract and continue stirring until thoroughly mixed and the mixture has thickened.
- Pour the dry ingredients and chocolate candies into the bowl of wet ingredients and mix until combined. Do not over mix.
- Pour the batter into the lined pan and evenly spread it out with a spatula.
- Bake for 22-26 minutes or until the top puffs and the sides start pulling away from the pan. It will look underdone, but the bars will continue to set as they cool.
- Let the bars cool completely in the pan before lifting them out using the parchment paper. I like to slice them into 12 or 16 squares.

- Preheat the oven to 325 degrees F (165 degrees C). Line 2 baking sheets with parchment paper.
- Whisk together flour, baking soda, and salt.
- Beat brown sugar and vegan butter in a large bowl for 2 to 3 minutes. Mix in eggs and vanilla. Add flour mixture and mix until combined. Fold in vegan chocolate chips.
- Drop small spoonfuls of dough 2 inches apart onto the prepared baking sheets.
- Bake in the preheated oven until edges are golden, rotating halfway through about 10 minutes. Cool on the baking sheet briefly before removing to a wire rack to cool completely.
