HEALTHY PEANUT BUTTER BANANA OATMEAL BARS
From www.gingerbreadbagels.com. I am making these tonight, but needed to get the nutritional information. I left out the cinnamon, but added it to the recipe. This recipe does not have any oil, butter or pounds of sugar. In fact there's only 1/4 cup of brown sugar.

GLUTEN-FREE DREAMY PEANUT BUTTER, BANANA & OATMEAL ELVIS BAR
The generous amount of Peanut Butter makes these bars taste rich and creamy, the banana keeps it *ultra* moist and takes on a mellow background flavor, and the oatmeal holds it all together PLUS some chocolate thrown in for good measure :) These are better the next day, don't contain eggs or flour, and are a good way to use up some ripe bananas!

PEANUT BUTTER BANANA BARS (HEALTHY)
These are my favorite go to snack "cake". Each serving fits perfectly in a snack size ziploc, and these freeze beautifully. I put one frozen in my lunch, and when I'm ready for it in the afternoon, it is thawed. Diabetic Exchanges per serving are: 1 Fruit, 1/2 Starch and 1/2 Fat. I am posting the recipe as written, but I always use Splenda. See note at the end of the recipe. Recipe is courtesy of Joanna Lund.

GLUTEN-FREE OATMEAL CHIP BARS
With two busy boys who would rather move around than sit and eat, I needed a gluten-free, hearty, hand-held treat that could double as a quick breakfast, brunch, lunch or snack. This is a favorite of theirs, and I can change it up to accommodate ingredients I have on hand. -Susan James, Cokato, Minnesota
