GLUTEN-FREE MOZZARELLA STICKS
Baked mozzarella sticks that are crispy on the outside and gooey inside. Even though they're not fried, with this recipe, they get crunchy without the mozzarella running out. The trick is in the dredging process and ingredients. Extra egg whites and light-as-air rice flour create a lighter coating. Quadruple-dipping creates a crispy outer coating usually absent from gluten free foods. Serve with your favorite dipping sauce.

- Cut mozzarella cheese into 4x1-inch sticks.
- Place rice flour into a shallow dish. Whisk egg whites and egg together in another shallow dish. Mix bread crumbs with oregano, salt, pepper, garlic powder, onion powder, and turmeric in a third dish.
- Dredge one mozzarella stick through the rice flour, making sure to cover all four sides and the ends. Tap off excess flour, then dip stick into the egg mixture; turn with a fork to coat completely. Drain off any excess egg. Dredge thoroughly through the rice flour and eggs again. Shake off excess, then roll into the bread crumb mixture. Dip once more into the eggs and coat with bread crumbs again, covering the ends to prevent the cheese from melting and leaking through. Place stick on a freezer-safe plate. Repeat process for each mozzarella stick.
- Cover the plate of mozzarella sticks with plastic wrap and freeze for 30 minutes. Preheat the oven to 425 degrees F (220 degrees C). Line a baking sheet with parchment paper. Set the timer for another thirty minutes.
- Fill an oil sprayer with olive oil. Remove sticks from freezer and arrange on the prepared baking sheet; spray tops with olive oil.
- Bake in the preheated oven for 5 minutes. Remove from oven and close oven door; turn sticks over and spray with oil. Continue baking for 5 minutes more. Continue turning, spraying, and baking the remaining two sides, about 10 minutes more.

Steps:
- Cut mozzarella sticks in half.
- Using three bowls, set up a breading station with whisked eggs, seasoned gluten free flour, and bread crumbs mixed with salt, pepper and garlic powder.
- Dip mozzarella in egg, than flour, than egg, than bread crumbs.
- Place on a baking sheet and freeze for at least two hours (or bag and use whenever ready).
- Preheat oven to 400.
- Spray with cooking oil (such as PAM)
- Bake for 5 minutes.
- Turn.
- Bake for 2-3 more minutes.
- Enjoy!

- Start by getting the dipping station ready. In one bowl, add the flour, and then in a second shallow bowl, whisk together the eggs and milk. In a third shallow bowl, combine bread crumbs and seasonings.
- Lay parchment paper down on a large baking sheet.
- Now start the dredging process. Roll a cheese stick in the flour and shake off the excess. Next, dip the cheese stick in the egg wash, letting the excess drip off. Then roll the cheese stick in the breadcrumbs. Last, double dip the cheese stick back into the egg wash and roll one more time in the breadcrumbs. During this last step, I find it helpful to lightly press the breadcrumbs with my hands onto the cheese stick to form the coating.
- Place the prepared cheese stick onto the baking sheet covered with parchment paper.
- Repeat with the rest of the string cheese..
- Place the prepared mozzarella sticks into the freezer for at least an hour but preferably overnight.
- After the cheese sticks freeze, place into a plastic bag or continue with cooking.
- To cook the gluten free mozzarella sticks. Preheat the oven to 400 degrees.
- Brush half of the olive oil onto a baking sheet.
- Place the number of mozzarella sticks you want to cook onto the baking sheet and lightly brush more olive oil over the top of the mozzarella sticks.
- Bake the homemade mozzarella sticks for 9 - 10 minutes or until cheese is melty and golden brown.
- Sprinkle with fresh parsley (optional) and serve hot with gluten free marinara sauce (optional).

- Line up three plates on your counter. On first plate, whisk together white rice flour, granulated garlic, salt, dried basil, and freshly ground black pepper. On second plate, whisk eggs until smooth. On third plate, place bread crumbs.
- Cut cheese sticks in half. Roll string cheese in white rice flour, coating well. You don’t want any bare spots on the cheese stick. Take care to coat ends of cheese stick with flour. This prevents stick from “leaking” during frying.
- Roll cheese stick in egg, coating thoroughly. Return cheese stick to white rice flour and coat again. Return again to egg and coat thoroughly. Finally, roll coated sticks in bread crumbs. Place coated stick on a baking pan or large dish. Repeat until all sticks are coated. Chill cheese sticks for five minutes.
- Heat 1/2-inch of oil in an 8-inch frying pan. Sprinkle a little white rice flour on the surface of the oil. If flour sizzles, oil is ready.
