My family loves these eclairs and request them all the time. I usually make them as dessert whenever we have company coming, they are always a hit!

½ cup butter
1 cup water
1 cup all-purpose flour
¼ teaspoon salt
4 eggs
1 (5 ounce) package instant vanilla pudding mix
2 ½ cups cold milk
1 cup heavy cream
¼ cup confectioners' sugar
1 teaspoon vanilla extract
2 (1 ounce) squares semisweet chocolate
2 tablespoons butter
1 cup confectioners' sugar
1 teaspoon vanilla extract
3 tablespoons hot water

Steps:

  • Preheat oven to 450 degrees F (230 degrees C). Grease a cookie sheet.
  • In a medium saucepan, combine 1/2 cup butter and 1 cup water. Bring to a boil, stirring until butter melts completely. Reduce heat to low, and add flour and salt. Stir vigorously until mixture leaves the sides of the pan and begins to form a stiff ball. Remove from heat. Add eggs, one at a time, beating well to incorporate completely after each addition. With a spoon or a pastry bag fitted with a No. 10, or larger, tip, spoon or pipe dough onto cookie sheet in 1 1/2 x 4 inch strips.
  • Bake 15 minutes in the preheated oven, then reduce heat to 325 degrees F (165 degrees C) and bake 20 minutes more, until hollow sounding when lightly tapped on the bottom. Cool completely on a wire rack.
  • For the filling, combine pudding mix and milk in medium bowl according to package directions. In a separate bowl, beat the cream with an electric mixer until soft peaks form. Beat in 1/4 cup confectioners' sugar and 1 teaspoon vanilla. Fold whipped cream into pudding. Cut tops off of cooled pastry shells with a sharp knife. Fill shells with pudding mixture and replace tops.
  • For the icing, melt the chocolate and 2 tablespoons butter in a medium saucepan over low heat. Stir in 1 cup confectioners' sugar and 1 teaspoon vanilla. Stir in hot water, one tablespoon at a time, until icing is smooth and has reached desired consistency. Remove from heat, cool slightly, and drizzle over filled eclairs. Refrigerate until serving.

Pastry Cream for Eclairs
Pate a Choux
Vegetable oil, for plastic wrap
1/2 cup heavy cream
4 ounces semisweet chocolate, finely chopped
1/4 cup light corn syrup
1/2 cup sugar

Steps:

  • Preheat oven to 425 degrees with a rack in the center. Line two unrimmed baking sheets with parchment paper or Silpats (French nonstick baking mats).
  • Fill a pastry bag fitted with a 1/2-inch (Ateco No. 806) tip with pate a choux batter; pipe out oblong shapes, about 3 1/2 inches long and 1 inch wide, onto prepared baking sheets at 2-inch intervals. Gently run a fork dipped in water along each top, making straight lines to ensure even rising.
  • Cover one baking sheet with lightly oiled plastic wrap, and place in refrigerator. Transfer the second sheet to the oven. Bake 10 minutes; reduce oven temperature to 350 degrees. Bake until golden brown, 25 to 30 minutes more. Turn off oven; prop door open slightly to let steam escape. Allow eclairs to dry in oven about 15 minutes, or until the center is damp but no wet dough remain (test by cutting into the center of one). Transfer to a wire rack to cool slightly. Raise heat back to 425 degrees and repeat process with remaining batch. If serving immediately, fill eclairs while still warm so they can take more cream; if filling at a later time, insert a skewer into one end, and move it around to expand opening for cream; set aside.
  • In a medium bowl, stir pastry cream to soften. Fill a pastry bag fitted with a coupler and filling tip (Ateco No. 230) with pastry cream. Insert tip into one end of each eclair; fill. Serve, or glaze as follows.
  • To make the glaze, combine 1/4 cup water, corn syrup, and s ugar in a small saucepan. Stir over medium-high heat until sugar is dissolved. Bring mixture to a boil, washing sides of pan with a wet pastry brush to prevent crystals from forming. Once at a boil, remove from heat; add chocolate. Let stand 2 minutes; stir gently until smooth. Transfer glaze to a shallow bowl. Dip top of each eclair into glaze; let excess drip off before turning over. Transfer to a wire rack to allow glaze to set. Serve.

For perfect eclairs, you need an even better pastry cream. Light and creamy, this recipe makes for an exceptional filling.

Number Of Ingredients 8

6 large egg yolks
1 large egg
3/4 cup plus 2 tablespoons sugar
3 tablespoons cornstarch
3 tablespoons all-purpose flour
3 cups milk
3 tablespoons unsalted butter
2 teaspoons pure vanilla extract

Steps:

  • Prepare an ice bath; set aside. In a medium bowl, combine egg yolks, egg, and 2 tablespoons sugar. Add cornstarch and flour; whisk until smooth and pale yellow. Set aside.
  • In a medium saucepan, combine milk and remaining 3/4 cup sugar. Stir over medium-high heat until milk begins to steam. Whisking constantly, add half the hot milk to the egg-yolk mixture. Stir until smooth; add combined mixture back to remaining hot milk in the pan. Bring mixture to a boil, whisking rapidly to prevent scorching. Remove from heat, and stir in butter and vanilla. Strain through a fine sieve into a medium bowl.
  • Place over ice bath and let stand, stirring frequently, until cool. Remove from ice bath, and press a piece of plastic wrap directly onto surface until ready to use. If not using immediately, refrigerate in an airtight container for up to 3 days.

1 cup flour
4 eggs
2 (3 1/2 ounce) boxes French vanilla pudding mix
2 1/2 cups milk
1 teaspoon vanilla
8 ounces Cool Whip

Steps:

  • Boil water and margarine in sauce pan. Remove and add flour.
  • Beat with spoon until smooth.
  • Cool 10 minutes.
  • Add eggs, 1 at a time with spoon.
  • Spread in a greased 9 x 12 standard cake pan.
  • Cook in oven for 25-30 minutes at 425 degrees.
  • Pull out of the oven and let stand until cool to the touch.
  • Mix pudding mixes, milk and vanilla with electric mixer until thick.
  • Fold in cool whip.
  • Spread over cooled base.
  • Refrigerate until serving.
  • Dribble chocolate sauce over top before serving.

Basic dough from which you can make cream puffs, profiteroles, eclairs, cream puff swans or any manner of other desserts.

Number Of Ingredients 7

1/2 cup whole milk
1/2 cup water
7 tablespoons unsalted butter, cut into pieces
1 tablespoon sugar
1 teaspoon salt
1 1/2 cups all-purpose flour
5 -6 large eggs, room temperature

Steps:

  • Place a bowl on your mixer and fit the paddle attachment to it.
  • Put your eggs next to the mixer.
  • Mix the milk, water, butter, sugar and salt in a 2-quart saucepan.
  • Bring to a full boil over medium heat, stirring occasionally with a wooden spoon.
  • Stirring constantly, add the flour all at once, and stir quickly and without stopping until the flour is thoroughly incorporated.
  • Then continue to cook and stir for another 45 seconds, or until the dough comes into a ball and a light film of paste coats the bottom of the pan.
  • Immediately scrape the dough into the bowl of your mixer, and turn the mixer on low speed.
  • Let it mix for a minute or two - the first few turns of the paddle will put up a cloud of steam.
  • That's fine.
  • Just let it mix until no more steam is coming off the dough.
  • Then add the first egg, letting it mix in fully before adding the next one.
  • Keep the mixer on low speed - you don't want to incorporate too much air into the paste.
  • Scrape down the bowl every 2nd egg just to make sure everything is mixing together.
  • Before adding the 6th egg, stop the mixer and check the consistency of the dough.
  • You will know it is perfect if, when you lift the paddle, it pulls the dough with it, then the dough breaks away and forms a peak that slowly bends down.
  • If the dough is too thick and doesn't form that peak, add the last egg.
  • The dough is now ready to be used to make éclairs, cream puffs, profiteroles, or any other recipe calling for choux paste.
  • It should be used immediately.
  • NOTES FOR MAKING CHOUX PASTE SUCCESSFULLY: The liquid must be heated to a full boil.
  • Add the flour all at once and stir madly until every last speck of flour is incorporated, then keep cooking and stirring some more - it's this last bit of cooking that will take the raw taste out of the flour; you'll know you are ready to quit when the dough forms a ball around your wooden spoon and the bottom of the pan is covered with a light film of paste.
  • Stop mixing when you still have one egg left to add and inspect the dough.
  • Depending on the condition of the flour, the room, or the moods of the pastry gods, the dough may or may not need the last egg.
  • The dough is finished when you lift the paddle and it pulls up some dough that then detaches and forms a slowly bending peak - if you don't get a peak, add another egg.
  • And relax.
  • Even if you can't decide what to do, add the egg - you will still get a good puff.
  • Use the paste while it is warm.
  • It cannot be kept.
  • Unfilled puffs or éclairs can be well wrapped and frozen for a few weeks.
