Steps:

  • Combine first 5 ingredients.
  • Bring to boil and cook for 90 seconds.
  • Remove from heat.
  • Stir in 1/2 cup peanut butter; dissolve.
  • Add 3 cups quick cooking oats.
  • Add 1 tsp vanilla. Mix well.
  • Drop by teaspoonfuls onto cookie sheet. Cool for 30 minutes or until set.
  • NOTE: Some recipes omit the cocoa.

4 1/2 cups gluten-free old-fashioned oats, divided
2 tablespoons cornstarch
1 1/2 teaspoons ground cinnamon
1 teaspoon gluten-free baking powder
1/2 teaspoon fine salt
2 sticks unsalted butter, room temperature
3/4 cup granulated sugar
1/2 cup packed light-brown sugar
2 large eggs
2 teaspoons pure vanilla extract
3/4 cup chocolate chips
3/4 cup raisins

Steps:

  • Preheat oven to 350 degrees. In a blender, process 1 1/2 cups oats into a fine meal. Whisk together ground oats, cornstarch, cinnamon, baking powder, and salt.
  • In a large bowl, using a mixer, beat butter and sugars until light and fluffy. Beat in eggs and vanilla. With mixer on low, gradually add oat mixture, beating until combined. Fold in chocolate chips, raisins, and remaining 3 cups oats.
  • In batches, drop dough in 2-tablespoonful mounds onto a parchment-lined baking sheet, 2 inches apart. Bake until cookies are golden brown at edges, 15 to 18 minutes. Let cool on sheet on a wire rack 2 minutes, then transfer to rack and let cool completely.
  • Store in an airtight container, at room temperature, up to 5 days, or in freezer, up to 1 month.

1 cup semisweet chocolate chips
1/4 to 1/2 cup peanut butter, optional
1 teaspoon vanilla extract
2 cups granulated sugar, or part brown sugar
1/2 cup (4 ounces) unsalted butter
1/2 cup evaporated milk , or regular milk

Steps:

  • Gather the ingredients.
  • In a large mixing bowl, combine the oats, chocolate chips, peanut butter (if using), and vanilla; stir to blend the ingredients. Set aside.
  • In a saucepan, combine the sugar with the butter and milk. Place the pan over medium-high heat and stir to melt the sugar and butter. Bring to a full rolling boil and boil the mixture for exactly 1 full minute.
  • Immediately combine the hot butter and sugar mixture with the oatmeal and chocolate chip mixture. Stir until the chocolate has melted and the mixture is well blended.

This recipe was made using the exact items I have listed. I cannot comment on how they would turn out if you substitute other ingredients in. As written, this produced chewy, delicious oatmeal chocolate chip cookies. These are gluten and casein free. They are not vegan, as there is an egg.

½ cup gluten-free flour blend (such as Namaste®)
2 tablespoons gluten-free flour blend (such as Namaste®)
½ teaspoon salt
¼ teaspoon baking soda
½ cup vegan butter (such as Earth Balance®)
½ cup packed light brown sugar
¼ cup white sugar
1 large egg
1 teaspoon vanilla extract
1 ½ cups gluten-free quick-cooking oats
½ cup vegan chocolate chips (such as Enjoy Life®)

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Combine 1/2 cup plus 2 tablespoons flour, salt, and baking soda in a bowl.
  • Cream vegan butter, brown sugar, and white sugar in a bowl until smooth. Beat in egg, then stir in vanilla. Stir in flour mixture until just blended. Mix in oats and chocolate chips. Drop heaping spoonfuls onto an ungreased baking sheet.

Can't remember where this is from. I adjusted the recipe a bit. The original calls for 2/3 C maple syrup. I used pancake syrup, since maple is so expensive, and it was still tasty. This does have less sugar, and more natural. I also added 1/2 C flax meal bcz it was too liquidy with just the 1 cup oatmeal. You could probably just add another 1/2 C oatmeal or chopped nuts. Cook time is chilling time in the fridge.

1/4 cup honey
1/4 cup coconut oil (melted, or another oil of your choosing)
5 tablespoons unsweetened cocoa or 5 tablespoons carob powder

1 teaspoon vanilla extract
1 cup gluten free rolled oats
1/2 cup flax seed meal

Steps:

  • In a saucepan over medium heat, combine the maple syrup, honey, oil, cocoa and cinnamon. Boil for 3 minutes, stirring constantly.
  • Remove from heat and stir in the peanut butter and vanilla until melted.
  • Mix in the remaining ingredients and drop by 2 tablespoonfuls onto waxed paper and chill to set, about 30 minutes, in the fridge. Keep extras in fridge, especially in warmer weather.
