FLOURLESS OATMEAL BANANA BREAD



Flourless Oatmeal Banana Bread image

Flourless Banana Bread made with oats! No oil, butter, refined sugar or flour.

2 cups quick oats, blended into flour
4 large ripe bananas, 2 cups, mashed
2 eggs
2 tsp pure vanilla extract
1/2 cup coconut sugar
2 tsp ground cinnamon
1 tsp baking soda
1/2 tsp sea salt
1 tsp lemon juice, or lime juice

Steps:

  • Preheat the oven to 350 degrees F and line a 9" x 5" loaf pan with parchment paper.
  • Place the rolled oats in a blender and blend on medium speed until a flour forms (this only takes about 20 to 30 seconds. Remember, it is fine if the flour is somewhat gritty). Transfer the oat flour to a mixing bowl.
  • Add the coconut sugar, baking soda, sea salt and cinnamon and stir together until combined.
  • Mash the bananas in a separate mixing bowl then whisk in the eggs and vanilla extract.
  • Stir the dry ingredients into the bowl with the wet ingredients. Add in the lime juice and stir to incorporate.
  • Transfer the batter to the parchment-lined loaf pan and smooth into an even layer. If desired, sprinkle some whole quick oats on top for looksies.
  • Bake for 40 to 45 minutes, until banana bread has risen substantially and the top appears firm.
  • Remove from the oven and allow bread to cool at least 30 minutes. Tug on the edges of the parchment paper to lift the loaf out of the pan and place it on a cutting board. Cut thick slices and enjoy!

2 cups gluten-free all-purpose baking flour
1 teaspoon baking soda
1/4 teaspoon salt
4 large eggs, room temperature
2 cups mashed ripe bananas (4-5 medium)
1 cup sugar
1/2 cup unsweetened applesauce
1/3 cup canola oil
1 teaspoon vanilla extract
1/2 cup chopped walnuts

Steps:

  • Preheat oven to 350°. In a large bowl, combine flour, baking soda and salt. In a small bowl, whisk eggs, bananas, sugar, applesauce, oil and vanilla. Stir into dry ingredients just until moistened., Transfer to two greased 8x4-in. loaf pans. Sprinkle with walnuts. Bake until a toothpick inserted in the center comes out clean, 45-55 minutes. Cool for 10 minutes before removing from pans to wire racks.

My son has celiac disease. I have slowly experimented with his favorite recipes to create gluten-free versions that are also yummy enough for the non-celiacs to enjoy. This banana bread is extremely close to the original. Everyone gobbles it up, despite the pecans, which I add for a little extra nutrition.

1/2 cup butter, room temperature
2/3 cup brown sugar
2 eggs
3 -4 bananas, brown and mashed
1 teaspoon vanilla
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1 cup gluten-free oats
1 cup applesauce
1 cup pecans, chopped (optional)
2 cups gluten-free flour (I use Pamela's baking and pancake mix)
3 teaspoons baking powder
1 1/2 teaspoons xanthan gum

Steps:

  • Preheat oven to 350 degrees.
  • Spray or prep 1-2 loaf pans. (My family prefers thin bread, so I make this into 2 loaves).
  • In small bowl, combine oats & applesauce, set aside.
  • In large bowl, mix butter & sugar together. Add eggs, bananas, vanilla, cinnamon & nutmeg.
  • In small bowl, mix dry ingredients (flour, baking powder, xanthan gum).
  • Add oats & applesauce to wet ingredients, combine well.
  • Add dry ingredients to wet ingredients, stir just until combined.
  • Fold in pecans, if using.
  • Pour batter into prepared pan(s).
  • Bake 35-45 minutes (less for 2 small loaves, more for one large loaf).

1 cup light brown sugar
½ cup butter, at room temperature
2 eggs
1 tsp vanilla
2 large ripe bananas, mashed
1 cup Montana Gluten Free Raw Oatmeal
2 cups Montana Gluten Free All Purpose Baking Mix
½ tbsp baking powder (aluminum free)
½ tsp baking soda
½ cup milk
½ cup chocolate chips (optional)
½ cup chopped walnuts (optional)

Steps:

  • Preheat the oven to 350 degrees. Spray a loaf pan with non-stick baking spray or line with parchment paper and set aside.
  • In the bowl of your stand mixer, beat the brown sugar and butter until combined. Add the eggs and vanilla. Next, add the mashed bananas. Mix until well combined.
  • In a medium bowl whisk together the oats, flour, baking powder, and baking soda. Alternately add the dry ingredients and the milk to the mixer. Add chocolate chips and/or walnuts, if using.
  • Spoon the batter into the prepared pan and bake for 60-70 minutes, or until a toothpick inserted in the center of the bread comes out clean. Cool the bread in the pan on a cooling rack for 15 minutes, then remove it from the pan and allow to finish cooling on the rack before serving.
  • Enjoy!
