GLUTEN-FREE OATMEAL CHIP BARS
With two busy boys who would rather move around than sit and eat, I needed a gluten-free, hearty, hand-held treat that could double as a quick breakfast, brunch, lunch or snack. - In a large bowl, beat brown sugar and eggs until well blended. Add bananas, peanut butter and salt until blended. Stir in the oats, butterscotch and chocolate chips., Spread batter into a 15x10x1-in. baking pan coated with cooking spray. Bake at 350° for 20-25 minutes or until edges begin to brown. Cool completely on a wire rack. Cut into bars.

These vegan breakfast bars take breakfast to a whole new level with fiber-rich oats and oat flour, healthy fats from creamy nut butter and your favorite add-ins! Gluten free oatmeal bars without eggs never tasted so good! Dairy-Free.

- Preheat oven to 350°F. Line an 8-inch square baking pan with parchment paper or greased foil. Set aside.
- In a large bowl, whisk together all of the dry ingredients: oats, oat flour, coconut, cinnamon, baking powder, baking soda and salt.
- In a medium bowl, whisk together all of the wet ingredients: flax eggs, coconut oil, nut or seed butter, coconut sugar and vanilla. Whisk until smooth.
- Pour the wet mixture over the dry mixture. Use a rubber spatula to stir and fold the ingredients together until well combined. Fold in add-ins.
- Transfer into prepared baking pan. Using a rubber spatula, spread into an even and tightly packed layer. Optionally, press toppings into the dough.
- Bake for 20-30 minutes. Mine took 25 minutes.
- Place on a cooling rack for 1 hour, or until completely cool. Lift breakfast bars out of the baking pan. Slice into 16 bars. Enjoy! Storing notes below.

Steps:
- Preheat your oven to 350 degrees and line an 8x8 baking dish with parchment paper.
- In a small bowl prepare your flax egg by whisking together 1 tablespoon of ground flax seed with 3 tablespoons of water. Set aside to thicken.
- In a mixing bowl, mix together the peanut butter, maple syrup, non-dairy milk, cooled coconut oil and vanilla until smooth.
- In a separate bowl, whisk together the quick oats, peanut flour, baking powder and salt until combined.
- Add the dry ingredients into the wet ingredients and stir until combined.
- Fold in the mini chocolate chips.
- Pour the sticky batter into your prepared baking dish and spread until smooth and even.
- Bake the bars for 15-18 minutes or until starting to turn golden brown along the edges.
- Remove the baking pan from the oven and allow the bars to cool completely before removing and slicing in to 16 squares.

- Place rack in the center of your oven and preheat oven to 350°F. Line an 8x8-inch baking dish with parchment paper and lightly coat with cooking spray. Set aside.
- In a large mixing bowl, beat together the peanut butter, brown sugar, baking soda, and salt on medium speed until well combined.
- Add the egg and vanilla, then mix on medium low, just until incorporated. By hand, stir in the chocolate chips and oats.
