With two busy boys who would rather move around than sit and eat, I needed a gluten-free, hearty, hand-held treat that could double as a quick breakfast, brunch, lunch or snack. This is a favorite of theirs, and I can change it up to accommodate ingredients I have on hand. -Susan James, Cokato, Minnesota

1/2 cup packed brown sugar
4 large eggs
1-1/2 cups mashed ripe bananas (3-4 medium)
1 cup peanut butter
1/2 teaspoon salt
6 cups gluten-free old-fashioned oats
1 cup gluten-free butterscotch chips
1 cup semisweet chocolate chips

Steps:

  • In a large bowl, beat brown sugar and eggs until well blended. Add bananas, peanut butter and salt until blended. Stir in the oats, butterscotch and chocolate chips., Spread batter into a 15x10x1-in. baking pan coated with cooking spray. Bake at 350° for 20-25 minutes or until edges begin to brown. Cool completely on a wire rack. Cut into bars.

These vegan breakfast bars take breakfast to a whole new level with fiber-rich oats and oat flour, healthy fats from creamy nut butter and your favorite add-ins! Gluten free oatmeal bars without eggs never tasted so good! Dairy-Free.

¾ cup gluten-free rolled oats
¼ cup gluten free oat flour
1/3 cup unsweetened coconut flakes
½ teaspoon ground cinnamon
¼ teaspoon baking powder
¼ teaspoon baking soda
¼ teaspoon salt
2 flax eggs (2 tablespoons ground flaxseed + 6 tablespoons water, whisked together, set for 15 mins)
2 tablespoons melted coconut oil
¼ cup + 2 tablespoons natural, unsalted nut butter*
¼ cup coconut sugar
½ teaspoon pure vanilla extract
2/3 cup your favorite add-ins (chocolate chips, chopped nuts, chopped fruit)
1-2 tablespoons your favorite add-ins

Steps:

  • Preheat oven to 350°F. Line an 8-inch square baking pan with parchment paper or greased foil. Set aside.
  • In a large bowl, whisk together all of the dry ingredients: oats, oat flour, coconut, cinnamon, baking powder, baking soda and salt.
  • In a medium bowl, whisk together all of the wet ingredients: flax eggs, coconut oil, nut or seed butter, coconut sugar and vanilla. Whisk until smooth.
  • Pour the wet mixture over the dry mixture. Use a rubber spatula to stir and fold the ingredients together until well combined. Fold in add-ins.
  • Transfer into prepared baking pan. Using a rubber spatula, spread into an even and tightly packed layer. Optionally, press toppings into the dough.
  • Bake for 20-30 minutes. Mine took 25 minutes.
  • Place on a cooling rack for 1 hour, or until completely cool. Lift breakfast bars out of the baking pan. Slice into 16 bars. Enjoy! Storing notes below.

Made with creamy peanut butter and sweet chocolate chips, these Gluten Free Peanut Butter Chocolate Chip Oatmeal Bars will be a hit with all of your friends.

1 flax egg
1/2 cup peanut butter
1/2 cup maple syrup
1/4 cup non-dairy milk
1/4 cup coconut oil, melted and cooled
1 teaspoon vanilla extract
1 cup gluten-free quick oats
3/4 cup peanut flour
1 teaspoon baking powder
1/2 teaspoon salt
1/4 cup mini-chocolate chips

Steps:

  • Preheat your oven to 350 degrees and line an 8x8 baking dish with parchment paper.
  • In a small bowl prepare your flax egg by whisking together 1 tablespoon of ground flax seed with 3 tablespoons of water. Set aside to thicken.
  • In a mixing bowl, mix together the peanut butter, maple syrup, non-dairy milk, cooled coconut oil and vanilla until smooth.
  • In a separate bowl, whisk together the quick oats, peanut flour, baking powder and salt until combined.
  • Add the dry ingredients into the wet ingredients and stir until combined.
  • Fold in the mini chocolate chips.
  • Pour the sticky batter into your prepared baking dish and spread until smooth and even.
  • Bake the bars for 15-18 minutes or until starting to turn golden brown along the edges.
  • Remove the baking pan from the oven and allow the bars to cool completely before removing and slicing in to 16 squares.
