Gluten- and Dairy-Free Cinnamon Raisin Bread image

After learning of gluten and dairy issues in our family, I knew I had to re-create our favorite sweet bread. This gluten-free bread can be made using a premixed gluten-free flour or your own homemade blend. We use coconut milk to make it dairy-free, but any type of milk works! -Courtney Stultz, Weir, Kansas

2 cups plus 1 tablespoon gluten-free all-purpose baking flour
1 cup sugar, divided
1-1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
2 large eggs
1 cup coconut milk
1/2 cup canola oil
1 teaspoon vanilla extract
1 cup raisins
3 teaspoons ground cinnamon
Dairy-free spreadable margarine, optional

Steps:

  • Preheat oven to 350°. In a large bowl, whisk flour, 3/4 cup sugar, baking powder, baking soda and salt. In another bowl, whisk eggs, coconut milk, oil and vanilla until blended. Add to flour mixture; stir just until moistened. Toss the raisins with remaining flour; fold into batter., Transfer half of the batter to a greased 9x5-in. loaf pan. Combine the cinnamon and remaining sugar. Sprinkle half over batter. Repeat layers. Cut through batter with a knife to swirl., Bake until a toothpick inserted in center comes out clean, 45-50 minutes. Cool in pans 10 minutes before removing to a wire rack to cool completely. If desired, serve with dairy-free margarine.

I have to eat gluten free. My husband doesn't have to but he does. When I make the food homemade it is so much like what we have always known that it isn't a hardship. This is a lovely, moist pumpkin raisin bread. I use Better Batter® Gluten-Free all-purpose flour. I measure by weight and that has made all the difference! I refuse to use bean flour mixes; who wants bean flavor in their sweets? Let it cool completely or it will not hold together. Once it is cooled you can slice and serve. Enjoy!

¾ cup packed brown sugar
¼ cup butter, softened
1 cup canned pumpkin
2 eggs
½ cup low-fat buttermilk
¼ cup maple syrup
2 cups gluten-free all-purpose flour (such as Better Batter®)
2 teaspoons baking powder
½ teaspoon salt
½ teaspoon ground cinnamon
½ teaspoon ground nutmeg
¼ teaspoon baking soda
¼ teaspoon ground cloves
½ cup raisins

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x5x3-inch loaf pan.
  • Beat brown sugar and butter together in a mixing bowl. Add pumpkin, eggs, buttermilk, and maple syrup; beat into the sugar mixture. Stir flour, baking powder, salt, cinnamon, nutmeg, baking soda, and cloves together in a separate bowl; blend into the pumpkin mixture. Fold raisins into the resulting batter; pour into prepared loaf pan.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, 55 to 60 minutes. Cool in the pans for 10 minutes before removing to cool completely on a wire rack.

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Generously grease a jelly roll pan or rimmed baking sheet with shortening.
  • Mix baking mix, cinnamon, and salt together in a bowl; add rice milk, eggs, and date sugar and mix until dough is thoroughly mixed. Fold raisins into batter; spread evenly into the prepared baking sheet.

Very ripe bananas or sweetened applesauce give the best flavor and make a moist bread to serve as a snack with tea or for dessert. This bread is also great toasted for breakfast.

1 1/3 cups water
3 large eggs
3 tablespoons melted margarine or 3 tablespoons butter
2/3 cup mashed ripe bananas or 2/3 cup applesauce
1 teaspoon salt
3 tablespoons brown sugar
2 tablespoons skim milk powder
2 cups rice flour
2/3 cup potato starch
1/3 cup tapioca starch
1 tablespoon xanthan gum
1 teaspoon plain gelatin
1 tablespoon ground cinnamon
2 teaspoons bread machine yeast
3/4 cup raisins

Steps:

  • Add first 4 ingredients to bread machine pan and beat with plastic whisk or fork to mix well. Add rest of ingredients in the order given above. Select rapid or basic white cycle (approximately 2 to 3 hours.).
  • After 5 minutes of mixing, scrape down sides of pan with a rubber spatula. When bread is baked, remove from pan and cool on rack.
  • TIP: Replace 1/4 cup raisins with 1/4 cup chopped nuts.
  • If you use instant yeast, add 1 teaspoons white vinegar or cider vinegar.
  • Try this recipe on a super express cycle (1 to 1 1/4 hours).
  • Do not substitute potato flour for potato starch.

  • Attach the paddle to your mixer and mix together the water, eggs and butter. Add all the dry ingredients, except for the raisins. Mix on medium speed for about 6 minutes, stopping once to scrape down the bowl. The dough will be very sticky and look more like cookie dough than bread dough. Add the raisins and mix to combine.

Lightly spray the dough with some water to moisten the sugar a little bit.
  • With the shorter side of the dough towards you, use the parchment to help you roll up the flattened dough into a log, pinching the seam closed once it is rolled together. Place the log, seam side up, into a greased 8.5 x 4.5 inch loaf pan. Repeat the same process with the other half of the dough and filling, but being sure to place the seam side down when you place the second log on top of the first log in the pan. Spray the top of the loaf with some water and smooth out the surface if it is rough.
  • Using a long piece of aluminum foil, long enough to wrap around the outside of your loaf pan, fold it over on itself, lengthwise, two times. Tightly wrap the top lip of your loaf pan with this aluminum foil extension and secure it with staples. This bread is very soft and will need the extra support from this foil band as it rises and bakes above the edge of the loaf pan. Loosely cover with plastic wrap and allow it to rise for 1 hour.
