Number Of Ingredients 8

1 lb refrigerated potato gnocchi
2 egg yolks (beaten)
1 cup milk (divided)
8 ounces fresh shredded Parmesan cheese (divided)
6 strips bacon
2 cloves garlic (minced)
2 Tbs dried parsley
Salt and pepper (to taste)

Steps:

  • In large skillet, fry bacon until crisp. Remove from pan and drain. Crumble or dice into small pieces. Set aside.
  • Dispose of bacon grease and return skillet to burner. Add the minced garlic. Cook over medium-low heat for several minutes, until fragrant.
  • Meanwhile, prepare gnocchi per package directions. Drain.
  • In bowl, combine egg yolks, bacon, approximately 7 ounces of cheese, garlic, salt, pepper, parsley, and approximately 1/2 cup milk. Stir to combine.
  • Return gnocchi to cooking pot on low heat. Stir in the egg/bacon/cheese mixture. Allow to heat until melted and creamy. Add more milk to get the consistency desired. (Think super-creamy macaroni and cheese!)
  • Serve garnished with remaining Parmesan cheese and parsley, if desired.

1 lb gnocchi
Water, enough to fill a large pot 3/4 full
4 strips smoked bacon, chopped
2 cloves garlic, pressed or minced
2 egg yolks, beaten well
1/4 cup (59 mL) milk or cream
1/4 cup (20 g) freshly grated parmesan cheese
1/4 cup (59 mL) chicken broth
1/2 tablespoon cornstarch
Kosher Salt and freshly cracked pepper to taste
Chopped parsley and more parmesan, to garnish

Steps:

  • Bring a large pot of salted water to a boil.
  • While bringing the water to a boil, in a medium mixing bowl, mix together egg yolks, milk, and parmesan cheese with a fork or whisk. Set aside.
  • In a large high sided saute pan or large skillet over medium high heat, cook chopped bacon to desired crispness. At this point, you could remove or keep the rendered bacon fat, it's entirely up to you. Once done, turn heat to low and add garlic. Stir well, making sure garlic doesn't burn.
  • Add gnocchi to the water and cook for 2-3 minutes, or as package describes.
  • Drain gnocchi, then add to the pan. Add the egg mixture to the skillet (heat still on low, or turned off) and mix well.
  • In a small bowl, whisk the chicken stock into the cornstarch, then add to the sauce to thicken. Taste and season with salt and pepper as needed.
  • Serve immediately with parsley and parmesan as garnish.

1 medium onion, chopped

3 slices thick-cut bacon, cut into 1/2-inch strips
8 ounces cremini mushrooms, sliced
4 ears corn, kernels cut off (about 2 cups)

1 17.5-ounce package potato gnocchi
3 tablespoons unsalted butter
1/4 cup grated Parmesan cheese, plus more for serving

Steps:

  • Bring a large pot of salted water to a boil. Meanwhile, heat the olive oil in a dutch oven or other large wide pot over medium-high heat. Add the bacon and cook, stirring occasionally, until lightly browned, about 3 minutes. Add the mushrooms, season with salt and cook, stirring, until tender and lightly browned at the edges, 3 to 5 minutes. Add the corn, season with salt and cook, stirring occasionally, until crisp-tender, about 3 minutes. Stir in the white and light green scallion parts, season with salt and pepper and keep warm over low heat.
  • Add the gnocchi to the boiling water and cook as the label directs. Reserve 1 1/4 cups cooking water, then drain. Add 1 cup cooking water and the butter to the pot with the cooked vegetables. Increase the heat to medium and cook, stirring and scraping up the bottom of the pot, until the butter melts and a light brown sauce forms, about 30 seconds.
  • Add the gnocchi to the pot with the vegetables and stir to coat, adding more cooking water, 1 tablespoon at a time, if it seems dry. Stir in the Parmesan and season with salt and pepper.
  • Divide the gnocchi among shallow bowls. Top with more Parmesan and the dark green scallion parts.

9 potatoes, scrubbed
Kosher salt
2 pounds all-purpose flour
1 egg yolk
10 ounces Parmesan, grated, plus more for serving
2 tablespoons mixed finely chopped herbs (equal parts basil, chives, and parsley)
2 tablespoons mixed finely chopped herbs (equal parts basil, chives, and parsley)
2 tablespoons butter
1 tablespoon finely chopped shallots
1 tablespoon vodka
1 tablespoon heavy cream
1 cup Gabriel's Tomato Sauce, recipe follows
14 ounces canned or fresh ripe tomatoes
3 tablespoons olive oil
6 fresh basil leaves
Kosher salt and freshly ground black pepper

Steps:

  • To make the gnocchi: place the potatoes in a large pot. Cover with water. Add salt and bring the water to a boil over high heat. Reduce the heat to medium and simmer the potatoes until they are tender, about 35 minutes. Drain the potatoes. When they are just cool enough to handle, peel them then pass them through a food mill.
  • In a large bowl, mix the flour with the egg yolk, cheese and warm potatoes. Work the mixture until it becomes a smooth dough, then incorporate the herbs. Form the dough into 2 balls.
  • On a lightly floured work surface, roll each ball of dough into a 'rope' about 1/2-inch thick. Cut the 'ropes' into 3/4-inch pieces. Arrange the gnocchi on a lightly floured baking sheet. (You can freeze the gnocchi at this point and use straight from freezer.)
  • Shortly before serving, bring a large pot of salted water to boil over high heat. Reduce the heat so the water maintains an active simmer. Working in small batches, drop gnocchi into the water. Cook the gnocchi until they float 3 to 4 minutes, then remove with a slotted spoon and drain fully in a colander.
  • To make the sauce: Melt the butter in a large skillet over medium heat. Add the shallots and cook, stirring occasionally, until they soften. Add the vodka, cream, and tomato sauce, and simmer until the flavors blend, 2 to 3 minutes.
  • Immediately before serving, add the gnocchi to the sauce and heat, stirring gently to coat. Spoon the gnocchi into warm bowls and serve.
  • Puree whole tomatoes without their liquid in a food mill. Heat the oil in a large deep skillet over medium heat. Add the pureed tomatoes. Add the basil, season with salt and pepper and simmer, stirring frequently until the sauce is concentrated, about 25 minutes. Remove the basil and refrigerate or freeze until ready to use.

Steps:

  • Heat oil over medium heat in a large high-sided pan with a lid. Add garlic and cook until fragrant, about 1 minute. Add broccoli, cauliflower, and lemon-pepper; mix well. Cover and cook for 4 minutes. Remove lid, mix well, and pour in chicken broth. Replace lid and let the broth steam cook the vegetables for about 4 minutes.
  • Meanwhile, bring a large pot of lightly salted water to a boil. Cook gnocchi in the boiling water until they float to the top, 3 to 5 minutes. Drain, reserving 1/2 cup of cooking water to mix into the sauce.
  • Pour lemon juice over the vegetables and mix to combine. Pour in cream and capers. Simmer for about 6 minutes. Add gnocchi and pasta water. Season with salt and pepper. Top with Parmesan cheese and let sit for 2 minutes before serving.
