BAKED GOAT CHEESE PASTA

Steps:
- Preheat the oven to 425°F. Bring a large pot of salted water to a boil.
- Add the tomatoes, garlic, shallot, oregano and red pepper flakes to a 9 x 13 baking dish. Add 2 tablespoons of the olive oil and season with 1/2 teaspoon salt and 1/4 teaspoon pepper. Toss to combine. Nestle the goat cheese in the dish among the other ingredients and drizzle with the last tablespoon of olive oil. Bake until the tomatoes have blistered and the goat cheese has melted slightly, 22 to 25 minutes.
- While the tomatoes and goat cheese bake, cook the pasta according to the package instructions. Drain, reserving 1/2 cup of pasta water, and set aside.
- Remove the tomatoes and goat cheese from the oven. Add the pesto and begin tossing everything together, breaking up the goat cheese as you go and adding a little pasta water, until you have a creamy consistency. Add the cooked pasta and toss to coat. Serve hot garnished with the fresh basil.

- Melt butter in saucepan over medium heat. Stir in apple; cook and stir until golden around the edges, about 3 minutes.
- Stir in chicken broth and increase heat to medium high and simmer 2 minutes.
- Reduce heat to low. Stir in goat cheese, 2 tablespoons at a time, to apple broth mixture, stirring well to incorporate after each addition. Remove from heat.
- Mix apple and goat cheese mixture with drained pasta until combined.
- Stir in walnuts, thyme, cayenne pepper, salt, and black pepper.

CHICKEN PASTA WITH APPLES AND WALNUTS
This chicken dish is loaded with apples and walnuts cooked in a rich chicken broth with goat cheese lightly seasoned with thyme and served over pasta of your choice. A nice green salad, a loaf of fresh bread and a nice glass of Pinon Noir and you have a great meal!

Steps:
- Heat a large skillet over medium heat.
- Add 2 TB butter and melt.
- Add diced apple and saute until slightly browned.
- Add walnuts to apple mixture and cook for 5 minutes.
- Remove and set aside.
- In the same skillet, add remaining 2TB butter and saute chicken pieces until brown and crispy.
- Add apple/walnut mixture back in to chicken.
- Add thyme and black pepper.
- Pour in chicken broth and heat.
- Gradually add goat cheese and cook over low heat until cheese is melted.
- In a small measuring cup, add water and cornstarch and stir to get lumps out.
- On medium high heat, gradually add cornstarch and constantly stir until sauce is slightly thick.
- Serve over pasta of your choice.
