6 tbsp coconut flour ((or tigernut flour))
1 cup natural peanut butter ((creamy))
1/4 tsp sea salt
10 tsp maple syrup ((reduce to 5 teaspoons if using tigernut flour))
1 tsp vanilla extract ( (use this recipe to make your own))

Steps:

  • Place all ingredients in a bowl and mix together with a fork until well-combined.
  • Refrigerate dough for about 20 minutes, then roll it into one large ball and divide in half. Repeat this process until you have 16 balls.
  • Best served right away, but can be stored in an airtight container in the fridge for a few hours. If left longer they tend to lose their soft, chewy texture and become more firm.

1/4 cup butter (softened (1/2 stick))
8 ounces semisweet baking chocolate ((see note 3))

Steps:

  • In a large bowl, add graham cracker crumbs, peanut butter, powdered sugar, and butter. Stir until uniformly combined and smooth.
  • Shape into teaspoon-sized balls and place on a baking sheet lined with parchment paper or a silicone mat. Chill at least 30 minutes.
  • Set chocolate in a bowl over a pot of simmering water (double-boiler method) or melt in the microwave at 50% power in 30-second increments (stirring well after each increment). ½ cup melted butter, melted
1 ½ cups peanut butter
2 ½ cups powdered sugar
1 cup chocolate chips, enough for dipping

Steps:

  • Mix butter, peanut butter, and powdered sugar until well blended. More or less powdered sugar can be used to make mixture more or less dry.
  • Make 1 inch balls and freeze for about 20 minutes or until firm.
  • Microwave chocolate chips for 60 seconds, stopping every 15 seconds to check and stir. Adding some vegetable shortening can make the chocolate thinner and easier work with.
  • Remove balls from freezer and dip most of the way into the chocolate, coating all but a small circle on top. Using a toothpick for this works well but simply dipping it in and pulling it out with a fork also works. Place completed buckeyes on wax paper and allow to harden. Refrigerate if needed.
