GOLDEN HONEY PAN ROLLS
A cousin in North Carolina gave me the recipe for these delicious honey-glazed rolls. Using my bread machine to make the dough saves me about 2 hours compared to the traditional method. The rich buttery taste of these rolls is so popular with family and friends that I usually make two batches so I have enough! -Sara Wing, Philadelphia, Pennsylvania

Steps:
- In bread machine pan, place the first 8 ingredients in order suggested by manufacturer. Select dough setting (check dough after 5 minutes of mixing; add 1 to 2 tablespoons of water or flour if needed.), When cycle is completed, turn dough onto a lightly floured surface. Punch down; cover and let rest for 10 minutes. Divide into 24 pieces; shape each into a ball. Place 12 balls each in 2 greased 8-in. square baking pans. Cover and let rise in a warm place until doubled, about 30 minutes. , For glaze, combine the sugar, butter, honey and egg white; drizzle over dough. Bake at 350° until golden brown, 20-25 minutes. Brush with additional honey if desired.

- Preheat oven to 400 degrees F (200 degrees C). Spray or lightly grease a 9 inch round cake pan.
- In a large bowl, combine flour, cornmeal, sugar, salt and baking powder. Stir in egg, milk and vegetable oil until well combined. Pour batter into prepared pan.
- Bake in preheated oven for 20 to 25 minutes, or until a toothpick inserted into the center of the loaf comes out clean.

HONEY BREAD
This recipe is from an old Time-Life African cookbook. Try it warm, spread with butter and honey. It should be easy to adapt to a bread machine, if you have one that can make a 2-pound loaf.

Steps:
- Put water in a small bowl and sprinkle the yeast over it; let stand 2-3 minutes and stir to dissolve.
- Combine the egg, honey, coriander, cinnamon, cloves and salt in a large bowl and mix well with a whisk or spoon.
- Add the yeast, milk and 4 tablespoons of the melted butter and beat until well blended.
- Stir in the flour gradually, adding only enough to form a soft dough that can be gathered into a soft ball.
- Knead the dough on a lightly floured surface; if the dough is sticky, lightly butter your hands rather than add more flour.
- Knead until smooth and elastic, then shape the dough into a ball and place in a large, lightly buttered bowl, cover with a towel or non-stick foil and place in a warm spot until the dough has doubled in size (if you poke it with your finger, it should not"bounce back").
- Spread the remaining melted butter on the sides and bottom of a 3-quart round baking dish at least 3" deep.
- Punch down the dough and knead it for 2-3 minutes.
- Shape the dough into a round and place in the dish, pressing the dough down so it covers the bottom of the container.
- Return the dough to the warm spot and let it rise until it reaches the top of the pan.
- Preheat the oven to 350º.
- Bake the bread in the middle of the oven 50-60 minutes, or until the top is crusty and golden brown.
- Turn out of the pan and cool on a rack.

- In a large mixing bowl, cream shortening and sugar. Add eggs, one at a time, beating well after each addition. Combine the flour, baking powder and salt; add to creamed mixture alternately with milk.
- Pour into a greased 9-in. x 5-in. loaf pan. Bake at 350° for 55-60 minutes or until a toothpick inserted near the center comes out clean. Place pan on a wire rack. Check around 45-50 min.
- Combine the glaze ingredients; immediately pour over warm bread. Cool completely before removing from pan.

- Heat milk and butter or margarine in a small saucepan, until just melted stir in honey and cool to lukewarm. Dissolve yeast in warm water let set until foamy, 5 to 10 minutes. In a large bowl, combine milk mixture, yeast mixture, starter, whole wheat flour and wheat germ stir to blend well. In a small bowl, blend sugar, salt and baking soda until no lumps reman sprinkle over dough and stir in gently. Cover and let rise in a warm place, free from drafts, until light and bubbly, about 30 minutes. Stir dough and add all-purpose flour to form a stiff dough. On a well-floured surface, knead until smooth and elastic. Place in a greased bowl turn dough to coat surface. Cover and let rise in a warm place, free from drafts, until almost doubled, about 1 hour. Divide, shape into loaves and place into two well-greased 8 1/2 x 4 1/2 x 2 1/2 -inch loaf pans. Cover and let rise in a warm place, free from drafts, until doubled, about 45 to 60 minutes. Bake in a preheated 400° F oven for 20 minutes reduce temperature to 325° F and continue to bake for 20 to 25 minutes or until loaves are golden and sound hollow when tapped. Remove from pans and cool on wire racks.
