1 cup ice cubes
6 chunks fresh pineapple
3 fluid ounces freshly squeezed orange juice
3 fluid ounces spiced rum
2 fluid ounces coconut-flavored rum
1 fluid ounce banana liqueur
1 lime, juiced

Steps:

Divide ice cubes between 2 martini glasses to chill the glasses while you make the cocktail.n
Muddle pineapple chunks in the bottom of a cocktail shaker; add orange juice, spiced rum, coconut-flavored rum, banana liqueur, and lime juice. Dump ice cubes from chilled glasses into the shaker. Secure lid onto shaker and shake vigorously.n
Strain cocktail into the glasses.n

2/3 cup honey
1 cup bourbon, such as Elijah Craig
1/2 cup fresh lemon juice
4 sprigs fresh mint, for garnish

Steps:

For the honey syrup: In a small saucepan, heat the honey with 1/3 cup water until it just comes to a simmer. Cool completely.
For the gold rush cocktail: Place 1 large ice cube in each of 4 rocks glasses. Combine the bourbon and lemon juice in a cocktail shaker with 1/2 cup honey syrup and some ice. Shake and strain into the glasses, garnish with the mint and serve.

1 tbsp caster sugar
200ml golden beer
50ml vodka
¾ -1 tsp watermelon syrup (or regular sugar syrup)
handful of crushed ice
slice of fresh watermelon, to garnish

Steps:

Splash the rim of your short glass with water and apply sugar to the whole rim. Put the sugar on a plate and dunk in the rim, if it's easier.
Pour in the beer, vodka and syrup, then mix well. Fill with crushed ice, then wedge a slice of fresh watermelon on the edge of the glass to serve.
