EXTRA-YUMMY FLUFFY PANCAKES
This is my favorite recipe for pancakes. Over time I tweaked a recipe I found, till i got it just right! It makes fluffy pancakes with that little bit of extra from the vanilla and cinnamon! These pancakes are especially good with your favorite berry syrup.

Steps:
- Whisk together flour, sugar, baking powder, cinnamon, and salt in a bowl. Whisk in the milk, egg, 3 tablespoons vegetable oil, and vanilla extract until only a few lumps remain. Let the batter stand for 5 full minutes for extra fluffiness.
- Heat a skillet or griddle over medium heat, and brush with 1 teaspoon vegetable oil. When the oil shimmers, slowly pour about 1/4 cup of batter into the hot pan. Cook until bottom is browned, about 2 minutes, then flip and cook until the center of the pancake is set and the other side is browned, about 2 more minutes. Keep warm until serving.

I found a recipe here that I ended up changing so much it hardly resembled what I started out with, and my family LOVED them. I thought it would be a nice addition. These pancakes are a blend of good and not-so-good-for-you ingredients, hence the name.

Steps:
- Whisk all-purpose flour, whole wheat flour, white sugar, baking powder, salt, and cinnamon together in a large bowl. Make a well in the center of the dry ingredients.
- Pour milk and vanilla extract into the well; add beaten eggs. Mix wet and dry ingredients together until smooth.
- Grease a skillet with oil and heat over medium heat.
- Pour 1/4 cup of batter per pancake into the hot skillet; cook until bottom is golden brown and there are many small pinholes in the top of the pancake, about 2 minutes. Flip pancake and continue cooking until golden brown and the middle of the pancake is set, 2 to 3 minutes. Repeat with remaining batter, greasing skillet with oil between pancakes as needed.

EASY, YUMMY PANCAKES!
These are super easy to make, use three ingredients that you will most likely have, and, most importantly, are delicious!

Steps:
- If you have a sieve, sift the flour into a bowl. If you don't have a sieve, then just pour it in.
- Add one egg, and whisk it in.
- Add another egg, and whisk that in.
- Add the last egg, and whisk that in.
- Add the milk and oil, and whisk until the batter is smooth.
- Pour some batter into a frying pan, then cook on one side for about 1-2 minutes, then flip it, and cook for a further one minute. If you can't flip it, just put a lid on it. Enjoy!

YUMMY PANCAKES
This is a simple recipe and a yummy one also. Anybody can do it. I got this recipe from my mom a long time ago and have been using it for years.

Steps:
- Melt butter.
- Combine flour, sugar, baking powder, cinnamon and salt.
- Beat together melted butter and eggs and pour in to the milk.
- Stir wet ingredients into dry mix until combined.
- Lumpy batter is ok.
- Heat large pan or griddle to medium heat.
- Brush pan or griddle with oil or butter.
- Pour batter into pan 1/4 cup per pancake.
- Cook till bubbles form on top; flip and let cook till golden brown.
- Repeat with remaining batter.
THE BEST EVER PANCAKES
Steps:
- In a large bowl, whisk together the first 5 ingredients. In another bowl, whisk remaining ingredients; stir into dry ingredients just until moistened., Preheat griddle over medium heat. Lightly grease griddle. Pour batter by 1/4 cupfuls onto griddle; cook until bubbles on top begin to pop and bottoms are golden brown. Turn; cook until second side is golden brown. Serve with toppings as desired.

THE FLUFFIEST PANCAKES YOU WILL EVER HAVE
I love pancakes. Who doesn't! These pancakes are actually inspired by a book character by Dean Koontz. The characters name is Odd Thomas and I imagine that if he were to serve me his fluffy pancakes in Pico Mundo that this is how they would be. Keep in mind that this recipe is just a method. You can add ANYTHING to these guys to jazz them up. I like blueberries, raspberries, and sometimes I even add scrambled eggs, crumbled sausage, and shredded cheese. Yum!

Steps:
- Heat griddle to 325F or cast iron pan on medium low. Use vegetable shortening for lube.
- Combine flour, baking powder, sugar, and salt in a bowl.
- In a separate bowl beat 2 eggs with melted butter until creamy.
- Add egg mixture to dry ingredients and pour in some milk. No measurements needed. (Even the weather effects how much milk you will need. Eyeball it until you get a proper consistency for a batter.).
- Use a spatula to stir all of your ingredients together just until combined. Lumps are OK and desired to yield a tender batter.
- Cover your bowl of batter and let sit for 30 minutes! Your patience will be rewarded.
- After the batter has been left to rest dip a heaping 1/2 cup measure of batter onto griddle for diner/restaurant size pancakes. Flip pancakes when golden brown and delicious.
