Here's what you need: frozen cherry, simple syrup, vanilla extract, seltzer water

Ingredients

1 cup frozen cherry, thawed, plus more for garnish
½ cup simple syrup
2 teaspoons vanilla extract
seltzer water, for serving

Steps:

Add the cherries to a food processor and puree until smooth.
Transfer the cherry puree to a saucepan over medium heat with the simple syrup and vanilla. Simmer for 5 minutes, until slightly reduced. Remove from the heat and let cool completely.
Once the cherry syrup is cool, strain into an airtight glass container and store in the refrigerator for up to 1 month.
To make the soda, pour 1 cup (240 ml) of seltzer water into a glass filled with ice and add 1-2 tablespoons of cherry syrup. Stir to combine. Garnish with cherries, if desired.

2 cups sugar
1 vanilla bean, split lengthwise
2 tablespoons vanilla extract
1/4 teaspoon almond extract
1/4 cup cherry juice
1 quart soda water

Steps:

In a small saucepan, combine 1 cup water and the sugar.
Add the vanilla bean.
Boil over medium heat for 2 minutes or until the mixture has reduced to a thin syrup.
Remove the vanilla bean; rinse in hot water; set aside to air-dry and reserve for another use.
Allow the syrup to cool.
Stir in the vanilla and almond extracts and the cherry juice.
Pour 2 tablespoons of the cherry-vanilla syrup over ice cubes in a tall glass and fill with soda water; stir to combine.
Serve with a silly straw.

1/2 teaspoon fresh lemon juice
Seltzer water, for serving

Steps:

Combine the sugar with 3/4 cup water in a small saucepan and bring to a simmer; stir until the sugar dissolves. Remove from the heat and stir in the vanilla and lemon juice. Refrigerate until cold.
Serve the syrup with seltzer over ice (3 to 4 tablespoons per 8 ounces of seltzer.) The syrup keeps refrigerated in an airtight container up to 2 weeks.

Drizzle 1 teaspoons of caramel topping over each float and serve. Enjoy!
