GOOD OLD FASHIONED CHICKEN SOUP
Always have old fashioned chicken soup ready for those coughs and colds or just for a warming winter meal option with this recipe

Steps:
- Place chicken in stockpot and pour chicken broth and water in the pot. Turn heat on high and bring to a boil.
- Immediately lower to a simmer and add carrots, onion, celery, bay leaf, basil, parsley, tarragon, salt and pepper.
- Cook for 1 hour and 15 minutes.
- Add orzo and stir. Cook for additional 15 minutes.
- Take chicken out of pot and remove meat from bones and return meat back to the pot and stir.
- Ladle chicken soup in some bowls or crocks.
- Eat
- Enjoy

- Season the chicken pieces with salt and pepper. Heat 2 tablespoons oil in a Dutch oven over medium-high heat. Brown the chicken, working in batches and adding more oil as needed, 3 to 5 minutes per batch; set aside.
- Add the celery and onion and cook until beginning to soften, about 3 minutes. Sprinkle over the flour and stir, cooking a minute or so. Pour in the stock, season with salt and pepper and add the parsnips, carrots, turnip and rutabaga. Add the chicken back, bring to a boil and reduce to a simmer. Cover and cook until the vegetables are tender and the chicken is cooked through, about 45 minutes.
- Stir in the heavy cream and parsley. Taste and adjust the seasoning with salt and pepper. Serve garnished with parsley leaves.

- Preheat oven to gas mark 4,.
- put flour and dried thyme in a bag, joint leg quarters, add to bag and cover with flour,.
- heat oil in frying pan,and brown, then place in a casserole dish.
- chop the vegetables and fry 10 mins till soft and coloured.
- add to chicken in casserole with any left over flour. add mushrooms and leeks and stock.
- bring to boil and place in oven for one hour then turn to simmer and cokk till tender.

OLD FASHION CHICKEN STEW
If you would like to try your hand at cajun cooking look no further. This is the epitome of South Louisiana cooking and served on many tables throughout South Louisiana for Sunday dinners. If you really want to be authentic you would make your chicken broth/stock from scratch, but time always seems to be limited for me so I do use canned broth/stock to save time. Most stews and gumbos are even better the next day so I try to make this the day before I intend to serve it. As the cajuns like to say "C'est si bon"!

Steps:
- Liberally sprinkle chicken with creole seasoning and set aside.
- Place 1 1/4 Cups Flour in zipper-top plastic bag and season well with creole seasoning.
- Add chicken to zipper-top bag and shake well to evenly coat chicken with flour.
- Set chicken aside and let rest for 15 minutes.
- While chicken is resting In large heavy pot heat oil over medium heat until hot (about 15 minutes).
- Slowly add floured chicken and brown on all sides.
- Drain off all but 1/2 cup of oil and drippings.
- In remaining 1/2 cup of oil add 3/4 cup of flour, stirring constantly.
- Cook over medium heat until roux is medium to dark brown.
- Add onions, celery and bell pepper and saute about 5 minutes.
- Slowly add chicken broth, bay leaf, garlic, Worcestershire Sauce and Chicken Broth.
- Cover and simmer for 45 minutes.
- Add reserved chicken pieces to pot and simmer for 10 minutes.
- Add creole seasoning as needed and simmer another 10 minutes.
- If stew seems a bit too thick add a little more chicken broth.
- Remove bay leaf and serve over hot steaming rice.

- Heat oil in large heavy pot. Cook onion and celery until translucent. Season chicken pieces liberally with salt and pepper. Place chicken skin side down in pot and brown, about 5 minutes. Add carrots and cover with water. Bring to a simmer and cook for 1 hour. Remove chicken from soup and let cool. Remove meat from bones and shred, discard skin. - POUR 64 ounces Trader Joe's Organic Free-Range chicken broth into a 4-quart pot; heat to a low gentle boil.
- SNIP 1 tablespoon fresh parsley into broth.
- PULL fresh thyme leaves from stem using thumb and forefinger against the growth direction, to yield about 1 1/2 teaspoons; add to broth.
- ADD 1/4 teaspoon poultry seasoning to broth, along with two pinches (1/8 teaspoon) ground nutmeg, 2 pinches (1/8 teaspoon) ground savory, 1 bay leaf, and 5 whole black peppercorns (or 1/4 teaspoon ground black pepper).
- CHOP 1 large onion into 1/2'' pieces and add to broth; MASH 1 large clove garlic with a garlic press; add to broth.
- MEASURE 1 1/2 cups whole baby carrots; add to broth.
- SLICE rinsed celery into 3/4'' diagonal-cut slices to make 2 cups; add to broth (if fresh mushrooms are desired they may be sliced and added to broth now).
- COVER and simmer broth, vegetables, herbs and seasonings until vegetables are tender yet firm (6 ounces egg noodles may be added now if desired).
- REMOVE skin from rotisserie chicken and meat from bones; coarsely chunk or dice chicken meat into bite-sized pieces to yield 2-3 cups; STIR in chunked chicken until heated; REMOVE bay leaf and peppercorns; SEASON to taste with kosher salt if desired.
- SERVE soup hot in bowls; SAVOR the old-fashioned goodness!
