Gooey Chocolate Flourless Pudding Cake with Pumpkin Spice Custard image

Number Of Ingredients 10

6 medjool dates
½ cup non-dairy milk
1/3 cup organic pumpkin puree
1/3 cup cacao powder
2 tsps baking powder
½ cup non-dairy milk
2 tbsps maple syrup
2 tbsp organic pumpkin puree
¼-1/2 tsp pumpkin pie spice
2 tsps cornstarch or tapioca starch

Steps:

  • Blend the dates and non-dairy milk.
  • Transfer to a bowl. Add the rest of the ingredients for the cake. Stir to combine.
  • Divide between 2 microwave-safe ramekins. Microwave each separately for 2 minutes.
  • Let them cool while you make the custard.
  • Combine all the custard ingredients in a small saucepan.
  • Bring to a boil over medium high heat, whisking frequently.
  • Once boiling, turn the heat off and continue whisking vigorously until thickened.
  • Pour the custard over the cakes and enjoy!

1 can (29 ounces) pumpkin
1-1/2 cups sugar
1 can (12 ounces) evaporated milk
4 large eggs, room temperature, lightly beaten
1 tablespoon pumpkin pie spice
1 tablespoon instant espresso powder
1 teaspoon salt
Gingersnap cookies, crushed
Whipped cream, optional

Steps:

  • Pour 1 in. water into a 6-qt. slow cooker. Layer two 24-in. pieces of foil; roll up lengthwise to make a 1-in.-thick roll. Shape into a ring; place in slow cooker to make a rack., Whisk together first 7 ingredients. Transfer to a greased 2-qt. baking dish; set aside. Fold an 18x12-in. piece of foil lengthwise into thirds, making a sling. Use the sling to lower the baking dish onto foil rack, not allowing sides to touch slow cooker. Cover slow cooker with a double layer of white paper towels; place lid securely over towels. , Cook, covered, on low 6-7 hours or until a thermometer reads 160°. Remove baking dish from slow cooker using sling. Top with crushed gingersnap cookies and, if desired, whipped cream.

1¼ cups sugar (divided)
1 cup flour
½ cup unsweetened cocoa powder (divided)
2 teaspoons baking powder
¼ teaspoon salt
½ cup milk
⅓ cup butter (melted)
1½ teaspoons vanilla
½ cup brown sugar
1¼ cups hot water
½ gallon vanilla ice cream (optional topping)
8 ounces hot fudge sauce (1 bottle, optional topping)

Steps:

  • Heat oven to 350 degrees F.
  • In a large bowl, mix together 3/4 cup sugar, flour, 1/4 cup cocoa, baking powder and salt.
  • Add in the milk, butter, and vanilla and stir until smooth.
  • Pour batter into an ungreased 9 x 9 inch square baking pan.
  • Stir together remaining 1/2 cup sugar, brown sugar and remaining 1/4 cup cocoa; sprinkle mixture evenly over batter.
  • Pour hot water over top; do not stir (I know that it sounds weird, but I promise that it will all work out!).
  • Bake 35 to 40 minutes or until center is almost set (you do not want to over cook or it will not have the warm gooey pudding in the bottom).
  • Remove cake from oven and let cool for about 15 minutes. When you scoop the cake into serving dishes, be sure to spoon the sauce from the bottom of the pan over the cake. Top with ice cream and hot fudge if desired.
