left over pasta
1 can kidney beans
summer squash or zucchini
2 to 4 tomatoes
other leftovers that might be in the camp box or kitchen

Steps:

1 cup brown lentils, soaked for several hours or overnight, then rinsed thoroughly
6 slices bacon, diced into 1/4-inch pieces
4 to 6 cloves garlic, minced
1 large onion, minced
4 to 6 ribs celery, diced or chopped fine
1 (15-ounce) can garlic and herb tomato sauce
2 cups fresh spinach, chopped
1 1/2 teaspoons coarse ground pepper
3/4 teaspoon garlic salt
4 teaspoons sun dried tomato mustard, if available or homemade

Steps:

1/4 head cabbage, diced up
1/4 head Napa cabbage, diced up
1 medium onion, diced up
salt and pepper to taste or your favorite seasonings

Steps:

1 cup Anasazi beans
1 pound leftover ham chunks
2 potatoes, diced
1 onion, diced
2 ribs celery, diced
seasoning to taste

Steps:

  • Soak beans overnight. Put beans in pot and add water to more than cover the beans. Add ham chunks and simmer for 1 1/2 hours. Add the diced vegetables and seasoning.
