TERIYAKI GINGER TUNA SKEWERS

15 ounces teriyaki sauce (average 2 grams sugar per serving)
3 ounces sesame oil
1 tablespoon fresh ginger, minced
1 teaspoon fresh garlic, minced
1 lemon, juiced
1 tablespoon sugar substitute (recommended: Splenda)
2 pounds fresh tuna steak, cut into 1-inch cubes
1 tablespoon sesame seeds, toasted

Steps:

  • Soak bamboo skewers in water for 30 minutes to 1 hour. (This will keep them from burning later). Mix all marinade ingredients together in a bowl. Submerge tuna cubes in marinade, cover, and refrigerate for at least 30 minutes.
  • Preheat a grill or grill pan to high.
  • Remove tuna from marinade and skewers from water, and thread tuna onto skewers. Place skewers on the edges of the grill with the longest part of the stick hanging off the edge away from the fire. Stay close by and turn the sticks by hand to keep from burning. Brochettes are done in just 3 to 4 minutes.
  • Sprinkle with sesame seeds before serving.

3/4 cup freshly squeezed lemon juice (4 lemons)
3/4 cup good olive oil
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
1 tablespoon minced fresh thyme leaves, or 1/2 teaspoon dried thyme
2 pounds boneless chicken breasts, halved and skin removed
Satay Dip, recipe follows

Steps:

  • Whisk together the lemon juice, olive oil, salt, pepper, and thyme. Pour over the chicken breasts in a nonreactive bowl. Cover and marinate in the refrigerator for 6 hours or overnight.
  • Heat a charcoal grill. Grill the chicken breasts for 10 minutes on each side, until just cooked through. Cool slightly and cut diagonally in 1/2-inch-thick slices. Skewer with wooden sticks and serve with Satay Dip.
  • 1 tablespoon good olive oil
  • 1 tablespoon dark sesame oil
  • 2/3 cup small-diced red onion (1 small onion)
  • 1 1/2 teaspoons minced garlic (2 cloves)
  • 1 1/2 teaspoons minced fresh ginger root
  • 1/4 teaspoon crushed red pepper flakes
  • 2 tablespoons good red wine vinegar
  • 1/4 cup light brown sugar, packed
  • 2 tablespoons soy sauce
  • 1/2 cup smooth peanut butter
  • 1/4 cup ketchup
  • 2 tablespoons dry sherry
  • 1 1/2 teaspoons freshly squeezed lime juice
  • Cook the olive oil, sesame oil, red onion, garlic, ginger root, and red pepper flakes in a small, heavy-bottomed pot on medium heat until the onion is transparent, 10 to 15 minutes. Whisk in the vinegar, brown sugar, soy sauce, peanut butter, ketchup, sherry, and lime juice; cook for 1 more minute. Cool and use as a dip for Grilled Lemon Chicken skewers.
  • Yield: 1 1/2 cups

3 tbsp smooth peanut butter
1 tsp light soy sauce
pinch of chilli flakes
1 lime , ½ juiced, ½ cut into wedges
200g firm tofu (see tip, below), cut into chunks
1 tbsp rapeseed oil
1 garlic clove , sliced
small piece of ginger , sliced
200g pak choi , leaves separated
1 tbsp roasted peanuts
4 skewers (soak in cold water for 20 mins if they're wooden)

Steps:

  • Mix the peanut butter, soy, chilli and lime juice together with 50ml water. Pour half into a roasting tin, add the chunks of tofu and stir to coat. Leave to marinate for 30 mins if you have time, then thread onto four skewers and put on a baking tray.
  • Heat the grill to its highest setting. Grill the tofu for 4 mins on each side until nicely browned and crisp. Meanwhile, heat the oil in a frying pan or wok. Add the garlic and ginger and sizzle for 1 min or so, then tip in the pak choi and cook for about 3 mins until wilted.
  • Divide the pak choi and skewers between plates. Sprinkle over the peanuts, drizzle over the remaining sauce and serve with lime wedges for squeezing over.

2 tablespoons gingerroot, grated (I used a bit less)
2 tablespoons peanut oil
2 tablespoons sesame oil
2 tablespoons honey
1 tablespoon cilantro, chopped (I used a bit more)
1 serrano chili, seeded and minced
white pepper
1 1/2 lbs tuna, 1 1/4-inch thick and cut into 1 inch cubes
cooking spray (Pam)
1 red bell pepper, cut into 1-inch squares
1 onion, cut into 1 inch squares
4 -6 skewers, 12-inch long (I used wooden but the original recipe recommends metal)

Steps:

  • In a bowl, whisk together first 8 ingredients (vingear - chile) and then season with the pepper. Transfer 3 tablespoons to a cup and reserve.
  • Add tuna to remaining marinade, tossing to coat and refrigerate for up to 45 minutes.
  • Prepare grill and spray grill reack with Pam.
  • Prepare skewers by alternating fish, pepper and onion squares on skewers.
  • Grill skewers to desired doneness - mine took about 10 mintes-- turning often.
  • Transfer to platter, drizzling reserved marinade over skewers and sprinkle with additional cilantro, if desired.

1 1/2 pounds sushi-grade yellowfin tuna. cut into 1 1/2-inch cubes
1/4 cup plus 2 tablespoons extra-virgin olive oil
3 tablespoons chopped fresh cilantro
3 tablespoons fresh lime juice (from 2 limes)
Coarse salt and freshly ground pepper

Steps:

  • Heat a grill pan over medium heat or preheat a charcoal or gas grill to medium. (If you're using a charcoal grill, coals are ready when you can hold your hand 5 inches above grill for just 5 to 6 seconds.) Toss tuna with 1 tablespoon oil. Thread tuna onto 4 skewers.
  • Combine cilantro, lime juice, and 1/4 cup oil. Season with salt and pepper. Reserve 3 tablespoons.

4 cloves garlic, crushed
2 tablespoons minced onion

Steps:

  • Place ginger, garlic, onion, brown sugar, fish sauce, vegetable oil, soy sauce, coriander, cumin, turmeric, and cayenne pepper into a mixing bowl; whisk into a smooth marinade.
  • Bruise lemon grass by hitting it lightly several times with the back of a large chef's knife; mince the lemon grass and add to the marinade.
  • Cut beef sirloin into strips about 2 1/2 inches long and 1/8 inch thick. Thoroughly mix the beef into marinade until all beef strips are completely coated, about 1 minute. Cover bowl with plastic wrap and marinate in refrigerator for 2 to 4 hours.
  • Preheat an outdoor grill for high heat and lightly oil the grate.
  • Remove beef from marinade and shake off excess marinade. Thread 1/4 the meat onto each metal skewer.
  • Arrange skewers on the preheated grill and cook until the meat stops sticking to the grill, about 1 to 2 minutes. Flip skewers over onto other side and cook until meat is well browned and shows grill marks, 2 to 2 1/2 minutes. Turn onto first side again and cook until meat is still slightly pink, 2 more minutes. 200 g sweet potatoes (kumara cut into 2cm pieces)
satay sauce (recipe to follow to serve)
175 g firm tofu (cut into 2cm cubes)
3/4 cup baby corn (cut drained)
1 1/2 tablespoons vegetable oil (or peanut oil)
1 tablespoon soy sauce (light)
1 cup white cabbage (shredded)
1/2 lebanese cucumber (small sliced)
1 tomatoes (medium halved and thinly sliced)
2 teaspoons lemon juice
2 hard-boiled eggs (sliced)
1 green onion (sliced to serve)
2 teaspoons vegetable oil (or peanut oil)
1 green onion (thinly sliced)
1 garlic clove (minced)
1/2 cup peanut butter (smooth)

Steps:

  • Place kumara in a steaming basket over a small saucepan of boiling water and steam for 8 to 10 minutes or until just tender and then remove from heat and cool (I would use my electric steamer).
  • Make Satay sauce - Heat oil in a small saucepan over moderate heat and add onion and garlic and cook and stir for 1 minute or until fragrant and then add remaining ingredients and cook and stir until smooth and heated through.
  • Thread tofu, corn and kumara onto 6 skewers, alternating ingredients.
  • Combine 1 tablespoon of the oil and soy sauce in a small bowl and brush skewers with soy mixture.
  • Preheat a barbecue or char grill to moderately high and cook skewers for 10 minutes or until browned.
  • Combine cabbage, cucumber and tomato in a medium bowl and drizzle with juice and remaining oil.
  • Place in a serving owl and top with egg and drizzle skewers with satay sauce and sprinkle with onion and serve with salad.
  • NOTE - if using wooden skewers soak for 30 minutes in water before using.
