- Cut each chicken breast half into 1/2-in. wide strips. Wrap two or three strips around three asparagus spears. Repeat with the remaining chicken and asparagus. Arrange in a greased 13-in. x 9-in. baking dish. combine salad dressing, soy sauce, ginger, salt if desired and pepper. Pour over the chicken bundles. Cover and bake at 350° for 25 minutes. Uncover; sprinkle with sesame seeds and bake 15 minutes longer or until chicken juices run clear. Serve over rice if desired.

GRACE YOUNG'S VELVET CHICKEN WITH ASPARAGUS
Steps:
- 1. In a 2-quart saucepan, bring one quart of water to a boil over high heat. Add the asparagus and cook, stirring until the asparagus is bright green and the water has almost returned to a boil, about 1 minute. Use a skimmer or slotted spoon to transfer the asparagus from the water to a bowl, reserving the pot of boiling water. 2. In a medium bowl, combine the egg white, 1 tablespoon of the cornstarch, 2 teaspoons of the rice wine and 3/4 teaspoon of the salt. Stir until smooth. Stir in the chicken and 1 tablespoon of the oil. Keep the chicken in this mixture, refrigerated, for 30 minutes. 3. In a small bowl, combine the broth and the white pepper with the remaining tablespoon of rice wine and the remaining 1/4 teaspoon of cornstarch. 4. Bring the pot of water back to a boil and add 1 tablespoon of the oil. Reduce the heat to low and add the chicken to the simmering water, stirring to prevent the pieces of chicken from clumping together. Cook until the chicken is opaque, but not cooked through, about 1 minute. Drain the chicken in a colander. 5. Heat a 14-inch, flat-bottomed wok or a 12-inch skillet over high heat until a bead of water evaporates in one or two seconds. Swirl the remaining tablespoon of oil into the wok and stir fry the ginger and garlic, just until fragrant, about 10 seconds. Add the asparagus and the remaining 1/4 teaspoon salt and saute for about 30 seconds. Add the chicken. Re-stir the broth mixture and pour it over the chicken. Stir fry, until the chicken is cooked through and the sauce is slightly thickened, about 1 minute. Serve immediately with rice or other Chinese dishes.

- Place the cubed chicken in a bowl.
- Add the egg white, cornstarch, vodka, and canola oil.
- Stir to coat the chicken, then set aside to marinate while you prepare the rest of the recipe.
- Combine the white wine, soy sauce and chicken stock in a pitcher.
- Heat a large non stick skillet and spray it with cooking oil.
- Add the marinated chicken and cook over high heat until lightly browned.
- Add the scallions, garlic, ginger, red pepper, and asparagus and stir fry for another minute.
- Slowly stir in the liquid and bring to a boil so that the sauce thickens.
- Lower the heat and stir in the mango.
- Cook until heated through.
- Good served over basmati rice.

I use a deli-roasted chicken from our local grocery store to speed up prep time on this dish. You can change the vegetables to suit your tastes. Serve with a loaf of crusty french bread and a glass of wine.

- Bring a large pot of lightly salted water to a boil. Cook penne pasta at a boil until cooked through yet firm to the bite, about 11 minutes; drain.
- Melt 2 tablespoons butter in a large skillet over medium-high heat. Cook and stir shallot in melted butter until fragrant, about 5 minutes. Stir mushrooms, asparagus, and sun-dried tomatoes into shallot and butter mixture; cook and stir until asparagus begins to soften, about 10 minutes more.
- Pour chicken broth and Marsala wine into the skillet; bring to a boil, reduce heat to medium-low, and stir chicken and cream into mixture.
- Mix softened butter and flour into a paste in a bowl; stir into chicken mixture. Cook, stirring continually, until the flour is cooked and the liquid thickens, 1 to 2 minutes; ladle over the cooked penne pasta and top with Parmesan cheese to serve.

- Preheat oven to 375 degrees. Using a sharp knife, split each chicken breast in half horizontally, then pound between 2 pieces of plastic wrap until about 3/8 inch thick (you should have 8 flattened pieces). Season on both sides with salt and pepper.
- Heat oil in a large skillet over medium-high heat. Working in batches, saute chicken breasts and garlic until chicken is light brown on one side only, about 2 minutes; discard garlic.
- Transfer chicken to a baking sheet, browned side down. Sprinkle chicken pieces with half the cheese; layer each with a tomato slice and 4 asparagus pieces. Roll up; secure with a toothpick. Sprinkle remaining cheese over rolls; bake until chicken is cooked through, 15 to 20 minutes. Remove toothpicks. Serve hot.

- 1. In a 3-quart saucepan bring 2 quarts water to a boil over high heat. When the water comes to a rolling boil, add the noodles. Return to a rolling boil and boil according to package directions until al dente. Carefully pour the noodles into a colander and rinse several times with cold water. Drain the noodles, shaking well to remove excess water. Return the noodles to the unwashed pot, add the sesame oil, and toss until well combined. Set aside.
- 2. Put the chicken in a shallow bowl and add the ginger, 1 teaspoon of the rice wine, cornstarch, 1 tea- spoon of the soy sauce, 1/4 teaspoon of the salt, and pepper. In a small bowl combine the remaining 1 tablespoon rice wine and 1 tablespoon soy sauce.
- 3. Heat a 14-inch flat-bottomed wok over high heat until a bead of water vaporizes within 1 to 2 seconds of contact. Swirl in 1 tablespoon of the peanut oil, add the red pepper flakes, then, using a metal spatula, stir-fry 10 seconds or until the pepper flakes are fragrant. Push the pepper flakes to the sides of the wok, carefully add the chicken mixture and spread it evenly in one layer in the wok. Cook undisturbed 1 minute, letting the chicken begin to sear. Stir-fry 30 seconds or until the chicken begins to brown. Add the cabbage and mushrooms and stir-fry 1 minute or until the cabbage is just wilted but the chicken is not cooked through. Transfer the chicken and vegetables to a plate.
- 4. Swirl the remaining 1 tablespoon peanut oil into the wok. Add the noodles and stir-fry 15 seconds. Restir the soy sauce mixture, swirl it into the wok, add the scallions and chicken mixture, and sprinkle on the remaining 3/4 teaspoon salt. Stir-fry 1 to 2 minutes or until chicken is cooked through and noodles are heated through.
