1 lb boneless skinless chicken breast
1 lb linguine, cooked
2 tablespoons butter
2 cups mushrooms, sliced
1/2 cup green onion, diced
1/2 cup tomatoes, deseeded and diced
1 tablespoon fresh garlic, chopped
16 ounces heavy cream
1/2 cup parmesan cheese, grated
fresh parsley, chopped to taste
2 teaspoons salt
2 teaspoons black pepper

Steps:

  • Place the chicken on a preheated char grill. Grill until the chicken is cooked through. Remove and place in the refrigerator.
  • In a pot of boiling water, cook the pasta to the specifications on the package. Drain well. Meanwhile, in a sauce pan, melt the butter. Sauté the mushroom, green onions, tomatoes, and chopped garlic until the vegetables become soft. Continue cooking until there is very little liquid in the pan.
  • Remove the chicken from the refrigerator and slice into 1/4-inch strips. Place in the sauce pan with the vegetable mixture. Add the heavy cream to the pan and simmer until the cream begins to thicken. Whisk in the Parmesan cheese, parsley, salt and pepper. Turn off the heat.
  • Add the pasta to the sauce mixture. Stir well.
  • Garnish with additional Parmesan.

Salt
1 pound fettuccine noodles
4 pieces Perfect Grilled Chicken (thawed if frozen), recipe follows
1 cup heavy cream
1 stick salted butter
Freshly ground black pepper
2 cups freshly grated Parmesan
2 cups olive oil
6 tablespoons honey
3 heaping tablespoons Dijon mustard
1 tablespoon salt
2 teaspoons ground thyme
2 teaspoons ground oregano
Juice of 12 lemons
24 boneless, skinless chicken breasts

Steps:

  • Bring a large pot of water to a boil and add salt. Cook the pasta according to the package directions.
  • Cut the Perfect Grilled Chicken into strips. Heat over medium-high heat in a skillet until warmed through.
  • In a saucepan or skillet over low heat, warm the cream and butter. Season with salt and pepper.
  • Place half of the Parmesan into a large serving bowl. Pour the warm butter/cream mixture over the top.
  • Drain the pasta and immediately pour it into the bowl. Toss a couple of times, and then sprinkle in the other half of the Parmesan. Toss to combine, thinning with pasta water if necessary. Top with the chicken slices.
  • Delicious!
  • Mix together the olive oil, honey, mustard, salt, thyme, oregano and lemon juice in a large shallow container.
  • Pound the chicken breasts to uniform thickness and add them to the marinade. Cover and marinate in the fridge for at least 8 hours.
  • Heat a grill pan over medium-high heat. Grill the chicken in batches until golden brown on the first side, 4 to 5 minutes. Flip and cook until golden brown on the other side and cooked all the way through, another 4 to 5 minutes. Let the chicken cool.
  • Transfer the chicken to freezer bags individually and in pairs, so it's easy to defrost the exact amount you need. Yield: 24 servings

Using fresh, homemade pesto for this dish really gives it great flavor. Grilling the asparagus also adds a flavor boost!

1 cup packed fresh parsley
1/2 cup olive oil
2/3 cup freshly grated parmesan cheese
2 tablespoons toasted pine nuts
4 cloves garlic, minced
1 lb asparagus
3 cups penne pasta
1 sweet red pepper, cut into thin strips
1/2 cup sun-dried tomato packed in oil, drained and cut into small pieces
2 boneless chicken breasts

Steps:

  • For Pesto: Place all ingredients into a food processor and combine thoroughly.
  • Set aside.
  • (Pesto may be prepared up to 2 days ahead of time and refrigerated. Bring to room temperature and stir before using).
  • Grill chicken breasts on barbecue until cooked through, about 20-25 minutes.
  • Slice and set aside.
  • Meanwhile, cook penne in a large pot of water until tender but firm, about 8-10 minutes.
  • Drain well.
  • Break off tough ends of asparagus.
  • Leaving whole, grill spears on barbecue when chicken breasts are almost done, about 5 minutes.
  • Remove and cut into 2 inch pieces.
  • In a large bowl, toss together pasta, chicken, asparagus, red pepper strips and sun-dried tomatoes.
  • Gently stir in pesto and serve immediately.
