Steps:
- Place the refried beans in a small pot or skillet and heat over medium heat until hot.
- Heat a large nonstick skillet over medium-high heat and add the butter. Carefully crack the eggs into the skillet, season with salt and pepper and cook until the yolks are done to your liking, 2 to 3 minutes for sunny-side up eggs with still-runny yolks.
- To serve, set up 4 plates. Spoon refried beans onto the bottom of each plate and top with a broken taco shell to form a circle. Top each with a cooked egg and avocado, then season with salt. Add some pico de gallo and cilantro. Drizzle with hot sauce if desired.

- Preheat the oven to 350°F (180°C). Grease a 12-cup muffin tin with nonstick spray.
- Warm the tortillas in the microwave for 1 minute, until soft. Place each tortilla in a prepared muffin cup, folding the sides of the tortillas over each other slightly to fit flush in the cups. Bake for 10 minutes, or until the cups hold their shape.
- Heat vegetable oil in a medium skillet over medium-low heat. Add the black beans and their liquid, the cumin, chili powder, and garlic powder, and cook, stirring frequently, until steam begins to rise, about 4 minutes. Mash the beans. Continue cooking for 2 minutes, until the liquid reduces slightly.
- Scoop about ½ tablespoon of the bean mixture into each tortilla cup, smoothing evenly. Spoon a heaping tablespoon of the Pace® Chunky Salsa into each cup over the beans.
- In a small bowl, whisk together the eggs and milk. Pour the egg mixture over the salsa, filling the cups just below the edges of the tortillas.
- Bake the tortilla cups for 18-22 minutes, until eggs are cooked through.
- Remove the cups from the oven and garnish with the avocado, queso fresco, and cilantro. Top with the remaining Pace® Chunky Salsa or serve alongside for dipping.

- Bring a large pot of water to boil. Cook tomato, serrano chile, and garlic for 5 minutes. Drain and let cool slightly. Peel tomato.
- Combine tomato, serrano chile, garlic, salt, and pepper in a blender; blend until smooth.
- Heat oil in a small skillet over high heat. Fry tortillas individually until soft but not crispy, about 10 seconds. Place on a serving plate. Reduce heat to medium. Crack eggs into skillet and cook to desired consistency, 3 to 5 minutes.

- Heat the tortillas by toasting them one at a time in a dry cast-iron skillet or directly over a gas flame until lightly toasted; Place on a baking sheet, spread each tortilla with ¼ cup of refried beans, and cover to keep warm.

- Preheat the oven to 425 degrees F. Line a rimmed baking sheet with aluminum foil.
- Toss the tortilla triangles with the oil and 1 tablespoon taco seasoning in a large bowl. Evenly spread on the prepared baking sheet. Bake, tossing the chips halfway through, until golden brown and crisp, 12 to 14 minutes.
- Meanwhile, put the tomatoes, onions, 1/4 cup packed cilantro leaves and stems, jalapeño, 1/2 teaspoon salt and the remaining 2 tablespoons of taco seasoning in a blender. Blend until very smooth. Transfer to a small saucepan, cover and cook over medium heat, stirring occasionally, until the sauce deepens in color and the flavors meld, 5 to 8 minutes.
- Put the refried beans and 2 to 3 tablespoons water in another small saucepan over medium heat and cook, stirring frequently, until warmed through, about 5 minutes.
- Remove the toasted chips from the oven and dollop with the refried beans. Evenly pour the sauce over the chips. Make 8 small wells in the sauce and chip mixture throughout the baking sheet and crack the eggs into the wells. Bake, rotating the baking sheet halfway through, until the eggs are just set (the egg whites will be opaque and the yolks will still be runny), 10 to 12 minutes.
- Sprinkle with the cheese, avocado and remaining 1/4 cup cilantro leaves. Serve with lime wedges.

Steps:
- Cook bacon in frying pan until crisp. Strain out bacon and set aside in small bowl.
- Remove bacon drippings, leaving 2-3 tablespoons in pan.
- In remaining drippings, saute red pepper and onion until slightly softened, over medium-high heat. Approximately 5 minutes.
- Add jalapenos and garlic. Reduce heat, cover and simmer for about 5 minutes on medium heat. Depending on the jalapeno flavor I sometimes add a little more (we like it a little spicy, or you can add some of the jalapeno juice for extra heat).
- Add salt, pepper, tomato juice and bacon pieces. Cover and simmer on low for 20 minutes to blend flavors.
- Cook to desired consistency and flavor blending.
- After cooked to desired state, turn to low heat and prepare eggs.
- Whisk together 12 eggs and scramble in separate fry pan.
- Serve prepared mixture over servings of scrambled eggs.

- 1. __Make the salsa roja ranchera__. Roughly chop the onion, then cut the garlic cloves and serrano chiles in half. Place the tomatoes, onion, garlic, serranos, and water in a Dutch oven or other covered pot. Set the Dutch oven or covered pot over medium-low heat, and cook until all ingredients are slightly softened, about 20–25 minutes. (Alternatively, you could place all of the ingredients on a sheet tray, sprinkle them with water to allow them to steam, and cover them with aluminum foil. Roast in an oven that has been preheated to 275°F until cooked through, about 30 minutes.) Once the vegetables are cooked through, remove the Dutch oven or covered pot from the stove and allow to cool for 10 minutes. Once cooled, transfer all the ingredients to a blender, along with any accumulated juices. Add epazote and blend on high speed until smooth, 1–2 minutes. Season with salt and set aside.
- 2. __Make the salsa verde ranchera__. Roughly chop the onion, then cut the garlic cloves and serrano chiles in half. Place the tomatillos, onion, garlic, serranos, and water in a Dutch oven or other covered pot. Set the Dutch oven or covered pot over medium-low heat, and cook until all ingredients are slightly softened, about 20–25 minutes. (You can also steam the vegetables as described above.) Once the vegetables are cooked through, remove the Dutch oven or covered pot from the stove and allow to cool for 10 minutes. Once cooled, transfer all the ingredients to a blender, along with any accumulated juices. Add cilantro and epazote and blend on high speed until smooth, 1–2 minutes. Season with salt and set aside.
- 3. __Make the huevos rancheros__. In a large skillet, heat the grapeseed oil over medium heat. Working in batches to avoid overcrowding, add the tortillas and toast on both sides, flipping once, until slightly crispy but not hard, about 1 minute total. Using tongs, pick up the tortilla and allow any excess oil to drip off. Set aside on a paper towel-lined plate and repeat the process with the remaining tortillas. When all of the tortillas are toasted, spoon your desired amount of refried beans across the surface of each one.
- 4. __Fry eggs sunny side up__. In a separate large skillet or nonstick pan, heat the olive oil over medium heat. Crack one egg at a time into a bowl, and then carefully pour the bowl’s contents into the hot pan. Fry until the whites are totally set but the egg yolks are still a little runny, about 1 minute. If necessary, use a spoon to baste the egg whites with the hot oil.
