GRAMMA'S SCUFFLES

Gramma's Scuffles image

Melt-in-your-mouth delicious. It is yeast free, but best results do come with an overnight visit to the fridge. These have been in my family FOREVER! Cook time does not include fridge time!

Provided by Aunty Peach

Categories     Dessert

Time 22m

Yield 60-80 serving(s)

Number Of Ingredients 7

5 cups flour
2 teaspoons baking powder
1 lb butter or 1 lb margarine
2 eggs
1 cup milk
2 cups sugar
2 tablespoons cinnamon

Steps:

  • Mix first ingredients until crumbly. Mix 2nd ingredients; make a well and add egg mixture to flour mixture.
  • (I'm not sure if over-mixing matters or not!) Portion the dough into 8-10 balls (about the size of a pie plate when rolled out). Wrap each ball in plastic wrap and leave in the fridge overnight(or a few hours if you're in a rush).
  • Sprinkle cinnamon sugar onto work surface and roll out patties to the size of a pie plate. Cut into wedges and roll into scuffles. Roll from wide end down to the point. Place onto cookie sheet. Bake at 350 deg for 12 minutes.

GRANDMA'S ANYTHING GOES STRATA

Grandma's Anything Goes Strata image

Grandma knew how to make a hearty meal out of leftover bits of bread and cheese. This recipe is meant for riffing, so use any type of cheese, leafy greens, meat or bread you happen to have on hand.

Provided by Food Network Kitchen

Categories     main-dish

Time 1h10m

Yield 4 servings

Number Of Ingredients 12

Butter or nonstick cooking spray, for greasing pan
6 large eggs
1 1/2 cups milk
1/2 cup half-and-half
Pinch of ground nutmeg
Pinch of cayenne pepper
Kosher salt
1/2 teaspoon freshly ground black pepper
3 handfuls dark, leafy greens such as spinach, arugula or baby kale, chopped (about 1 cup packed)
1 cup diced salty deli meat, such as Canadian bacon, ham, or cooked bacon
8 ounces (about 2 1/2 packed cups) leftover bread torn into 1-inch pieces, such as English muffins, bagels or sourdough bread
3/4 cup shredded mild melting cheese such as Gruyere, provolone or Gouda

Steps:

  • Position a rack in the center of the oven and preheat to 350 degrees F. Grease a 1 1/2 quart baking dish with butter or cooking spray.
  • Whisk the eggs, milk, half-and-half, nutmeg, cayenne, 1 teaspoon salt and 1/2 teaspoon pepper together in a large bowl. Fold the greens, meat, bread and 1/2 cup of the shredded cheese into the mixture. Pour into the prepared baking dish and top with the remaining cheese.
  • Cover with foil and bake for 35 minutes. Uncover and bake until the strata is puffed, golden brown at the edges and set in the center, about 15 minutes more. Let cool 10 minutes before serving.

GRAMMA CARUSO'S SICILIAN STUFFING

Gramma Caruso's Sicilian Stuffing image

This recipe comes from my Gramma, who was one of the best cooks I ever knew. My mom always made the traditional bread stuffing, which was okay, but when it was my Gramma Caruso's turn to have Thanksgiving, I couldn't wait to smell and eat her stuffing. Just like her, it was wonderful! Happy Thanksgiving, Gramma--I miss you!

Provided by Food Network

Categories     side-dish

Time 15m

Yield 12 servings

Number Of Ingredients 14

1 lb ground round
1/4 lb ground veal
1/4 lb ground pork
2 cloves garlic minced
1 small onion chopped
1/2 cup milk
2 tablespoons oil
2 1/2 cups seasoned bread crumbs
3/4 cup grated pecorino romano cheese
1 egg
2 cups sliced white mushrooms
2 cups cooked long grain white rice
3/4 cup warm chicken broth or water
Salt and fresh ground pepper

Steps:

  • Heat oil in skillet, add onions and cook until slightly tender. Add all the ground meat and incorporate with fork. Add salt and pepper and garlic. Cook until half done, then add mushrooms, and continue cooking until meat is done. Do not drain.
  • Put in large mixing bowl and add cooked rice. Toss, add bread crumbs, cheese, milk, and egg. Sorry guys, now ya gotta use your hands. Mix together, again add salt and pepper to taste. When fully mixed, add your chicken broth or water, more if you want a moist stuffing.
  • There should be plenty to stuff your turkey, plus a full baking dish on the side. I put the baking dish in the last hour, top with 2 tablespoons butter and cover.

GRAMMA'S "CORN SOUFFLE"

Gramma's

My favorite recipe from my gramma. She always called it a souffle but it is more of a corn pudding. My kids request this especially at Thansgiving and Christmas turkey dinners, and they like it with butter melted on the top.

Provided by LAURIE

Categories     Corn

Time 1h20m

Yield 24 serving(s)

Number Of Ingredients 8

3 cans whole kernel corn, drained
3 tablespoons butter
6 tablespoons flour
3 cups milk
3 teaspoons salt
pepper
6 eggs, well beaten
1 green pepper, chopped (optional)

Steps:

  • In large dutch oven, melt butter over med high heat.
  • Stir in flour, until mixed, it will look clumpy.
  • Add milk and mix (you may have to break up the flour/butter clumps with a spoon on on the side of the pan) and bring to a boil.
  • Mixture will be like a thick white sauce.
  • Turn off heat and add corn, eggs and seasonings.
  • Mix well.
  • Pour into buttered 13x9 casserole.
  • Bake at 350 degrees for about 1 hour until center is set.
