3 5-oz. can Tuna ((drained; I used a combination of chunk light and solid white albacore))
1/4 cup Celery ((finely chopped))
2 tbsp Pickles ((finely chopped))
2 tbsp White onion ((minced))
4 large Hard boiled eggs ((diced))
Sea salt ((to taste))
Black pepper ((to taste))

Steps:

  • In a medium bowl, use a fork to whisk together the mayo, mustard, parsley, and paprika, until smooth.
  • Add the tuna, celery, pickles, and onions. Stir together, breaking apart any large pieces of tuna.
  • Fold in the diced eggs.

1 can (5 ounces) light water-packed tuna, drained and flaked
1 celery rib, finely chopped
1/4 cup fat-free mayonnaise

2 whole wheat tortillas (8 inches), room temperature
1/2 cup shredded lettuce
1 small carrot, shredded
4 slices tomato
2 slices red onion, separated into rings
1 hard-boiled large egg, sliced

Steps:

  • In a small bowl, combine the tuna, celery, mayonnaise and pepper. Spoon tuna mixture down the center of each tortilla. Top with lettuce, carrot, tomato, onion and egg. Roll up tightly.

Two 5-ounce cans albacore tuna, drained well
4 hard-boiled eggs, chopped
1 celery stalk, chopped (about 1/3 cup)
1/3 cup chopped dill pickles
1/4 cup chopped pickled jalapeños
3 scallions, trimmed and roughly chopped
1/2 cup mayonnaise
1 tablespoon Dijon mustard
1/2 teaspoon smoked paprika
Kosher salt and freshly ground black pepper
4 slices sourdough bread
2 vine tomatoes, sliced
4 slices pepper jack cheese

Steps:

  • Heat the broiler to high and line a rimmed baking sheet with aluminum foil.
  • Add the tuna, chopped eggs, celery, dill pickles, pickled jalapeños and scallions to a mixing bowl. Mix to incorporate and to break up any large chunks of tuna. Set aside.
  • Add the mayonnaise, mustard and smoked paprika to a small bowl. Whisk to combine. Add the mayonnaise mixture to the tuna mixture and use a rubber spatula to mix until evenly combined. Season to taste.
  • Arrange the bread on the foil-lined baking sheet. Divide the tuna mixture evenly among the slices of bread. Top the tuna with a few slices of tomato. Sprinkle the tomato with salt and pepper. Top the tomatoes with the pepper jack cheese.
  • Transfer the baking sheet to the broiler and broil until the cheese is bubbling and melted, 1 to 2 minutes.
  • Transfer the sandwiches to a cutting board, then slice in half and serve immediately.

I know it sounds crazy, but trust me, this tuna casserole is one of the yummiest things ever. Comfort food madness! Before this, Grandma had never written out this recipe. She doesn't measure anything when cooking this, but it must be tasted throughout.

12 ounces egg noodles
1 (5 ounce) can tuna, drained and flaked, or more to taste
½ cup sour cream
½ cup milk, divided
1 (1 ounce) package dry onion soup mix (such as Lipton®)
1 teaspoon Worcestershire sauce
¼ teaspoon garlic powder, or to taste
⅛ teaspoon seasoned salt (such as LAWRY'S®), or more to taste
salt and ground black pepper to taste
2 tablespoons butter, cut into small pieces, divided
8 ounces ridged potato chips (such as Ruffles®)
2 cups shredded mozzarella cheese

Steps:

  • Fill a large pot with lightly salted water and bring to a rapid boil. Cook egg noodles at a boil until tender yet firm to the bite, 7 to 9 minutes. Drain.
  • Mix cooked noodles with tuna, sour cream, 1/4 cup milk, onion soup mix, Worcestershire sauce, garlic powder, seasoned salt, salt, and pepper. Taste and adjust seasonings as desired.
  • Lay 1/2 of the butter across the bottom of a 2-quart, microwave-safe casserole dish. Crush potato chips, then sprinkle 1/4 of the crushed chips over the bottom and press to flatten.
  • Spread the tuna-noodle mixture in a single layer over the crushed chips. Layer with 1/2 of the mozzarella, 2/3 of the remaining chips, followed by the remaining butter, chips, milk, and mozzarella.
  • Microwave on high until casserole is hot and cheese is melted, about 10 minutes.

3 can(s) packed tuna, drained (5 oz each)
3 - hard boiled eggs, chopped

2 teaspoon(s) each - dried oregano, parsley, basil
- garlic and onion powder, to taste

Shredding the celery is easy and makes the piece the perfect uniform size. Fresh dill and lemon pepper add a tangy taste. The flavors are perfectly balanced and we can see why Dee's grandson Cayden loves this recipe.

12 large hard cooked eggs
3 can(s) tuna, drained well (6 oz each)
4 - 5 - celery ribs, add leaves if desired
2/3 cup(s) green onions, chopped fine
2/3 cup(s) vidalia onion salad dressing
2/3 cup(s) mayonaise
1 teaspoon(s) lemon pepper (or to taste)
1 teaspoon(s) dill weed or fresh dill
1/2 teaspoon(s) fresh ground pepper (or to taste)
1/4 cup(s) red bell pepper, chopped finely (optional)
1/4 cup(s) green bell pepper, chopped finely (optional)

Steps:

  • Make hard-boiled eggs and chill in the fridge. For foolproof hard-boiled eggs (the Rachael Ray and my way), put eggs in a medium-sized pot with a lid. Cover eggs with cold water by 1". Add 1 tsp salt (this seals egg from coming out if shell cracks). Cover, bring to boil, turn off the heat, set a timer for 12-14 minutes. Remove the lid, drain, and run cold water over them until cooled off (I let them sit in the cold water about 10 minutes before peeling). Drain off water, put the lid back on, gently shake eggs in the pot to thoroughly break up shells. Cover with cold water again, let sit for abt 5 minutes to let water seep under shells to make peeling easier. Also peeling eggs underwater helps a lot. The shells will slip right off. This works best with eggs a few days old. This is the coolest way to make good hard-boiled eggs. I have never had that green ring around the yolk since I started cooking them this way.
  • Prepare celery and green onions. I like to grate my celery on the biggest grater holes on a box grater. Then pick out the strings (Cayden's preference) and squeeze the excess water out (my preference).
  • Drain the tuna well (I squeeze the excess liquid out of that too) and put it into a medium-sized bowl. Chop hard-cooked eggs and add to tuna. Add celery, green onion, red & green peppers and spices.
  • Stir in the salad dressing and mayonnaise. Mix well and taste. Adjust seasonings if needed.
  • Enjoy!
