GRANDMA LEE'S PARADISE PUDDING

I found this recipe in my grandmothers little notebook. she passed away in 1960's and the recipes are dated in the 1940, so its an old one for sure, I had no Idea what it would turn out like but thought I would give it a try. I'm not sure why its called Pudding" it tastes a little like a s'more I may just have to add chocolate to it next time. I will write the directions as she has them written and then I will add the revisions I took.I thought it would be fun to share.

25 - graham crackers (save out five )
1/2 pound(s) marshmallows, cut up
1 1/2 cup(s) chopped dates
1 cup(s) chopped nutmeats (i used walnuts)
1 cup(s) evaprated milk, sweetened to taste

Steps:

  • Roll 5 graham crackers and set aside to roll the pudding in.
  • Roll 20 graham crackers fine
  • add dates. marshmallow, and nut meats stir in the evaporated milk
  • Put the powdered 5 graham crackers on a board and lay the mixture on it-form a loaf
  • put wax paper in a loaf pan and place pudding in, patting all the crumbs in well. set away to let harden for best results make a day before
  • To serve lift from pan and cut into desired slices serve with whipped cream
  • I used mini marshmallows, and to sweeten the evaporated milk I used about 3T of sugar and a tsp of vanilla, I also ran a little short on graham crackers to roll the pudding in so crushed a few vanilla wafers, I am not sure where I was suppose to set it aside to harden, so I stuck mine in the refrigerator.

4 cups heavy cream
6 large eggs
2 cup packed dark brown sugar
1 1/2 cups raisins
2 sticks (16 tablespoons) unsalted butter, melted
1 tablespoon ground cinnamon
2 teaspoons ground ginger
2 cups plus 2 tablespoons granulated sugar
2 loaves French bread, cut into 1-inch cubes (about 13 cups)
Nonstick cooking spray
2 cups confectioners' sugar
1/3 cup bourbon
3 tablespoons unsalted butter
1 tablespoon whole milk
1/2 teaspoon ground cinnamon

Steps:

  • For the bread pudding: In a large bowl, whisk together the cream and eggs. Add the brown sugar, raisins, butter, cinnamon, ginger and 1 cup granulated sugar. Mix well. Gently stir the bread cubes into the egg mixture. Refrigerate for 1 hour.
  • Preheat the oven to 350 degrees F and coat a 9-by-13-inch baking dish with cooking spray.
  • Pour the bread mixture into the prepared baking dish. If desired, sprinkle the top with the remaining 2 tablespoons of sugar. Bake until a knife inserted into the middle comes out clean, 45 to 50 minutes.
  • Meanwhile, for the bourbon sauce: Combine the confectioners' sugar, bourbon, butter, milk and cinnamon in a medium saucepan, bring to a simmer over low heat, whisking constantly until thickened and no longer watery, 2 to 3 minutes. Serve with the bread pudding warm, at room temperature or chilled.

Grandma's Cheese Pudding Recipe is a traditional British dish that is easy to make and will quickly become one of your family's favorites.

2 pints milk
4 oz fresh breadcrumbs
1 lb cheddar cheese (grated)
8 eggs
1 tsp french mustard
salt and freshly ground pepper

Steps:

  • Bring the milk to the boil in a saucepan. Put the breadcrumbs into a bowl and pour the milk over. Stir in the cheese.
  • In a bowl, lightly beat the eggs with the mustard and with the milk and breadcrumbs. Season.
  • Butter a large, shallow 2.8 litre (5 pint) ovenproof dish well and pour in the cheese pudding mixture. Bake in the oven at 180°C (350°F) mark 4 for about 45 minutes, until lightly set and golden.
  • Serve with a mixed salad

CAKE:
1 cup raisins
1 cup all-purpose flour
1 teaspoon butter or shortening
1/2 cup packed brown sugar

1 teaspoon vanilla extract
1/2 cup milk
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon salt

Steps:

  • In a large skillet, bring water and brown sugar to a boil. Meanwhile, combine all cake ingredients in a large bowl. Drop by tablespoonfuls into skillet. Reduce heat to low. Cover and simmer for about 1 hour. Do not lift lid.

This simple and elegant dessert came from my Grandmother thirty years ago. My siblings and I loved it as kids and still do. It's sweet but not overly filling. If you scorch it - start over. Keeps well in refrigerator. Can be made day ahead.

She can make amazing food, but sometimes it's hard to get a recipe from her because she doesn't measure anything and makes everything from memory. While letting her talk it out, I was able to get this banana pudding and a few other recipes written down. Enjoy!

1 (12 ounce) package vanilla wafers, divided
1 cup white sugar
½ cup all-purpose flour
½ teaspoon salt
4 egg yolks
2 cups milk
1 teaspoon vanilla extract
1 tablespoon butter
4 bananas, sliced, or more to taste
4 egg whites
¼ teaspoon cream of tartar
5 tablespoons white sugar
½ teaspoon vanilla extract

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Line the bottom of a baking dish with some wafers. Combine sugar, flour, and salt in a bowl.
  • Beat yolks in a heavy saucepan over medium heat. Add flour mixture alternately with milk and vanilla extract, stirring constantly. Bring to a simmer and cook until slightly thickened, 8 to 10 minutes. Add butter; continue stirring until thickened to a pudding-like consistency, 5 to 7 minutes more.
  • Layer a portion of banana slices over the wafers and cover with pudding. Repeat layers with remaining bananas, wafers, and pudding.
