BAKED COUNTRY HAM
Few holiday meats are easier to cook than a ham. Just season and let it bake.

- Place ham in a large container; cover with cold water. Soak for 16 hours in the refrigerator; change water once. Pour off water. Scrub ham in warm water with a stiff brush; rinse well. Cut skin from ham; trim off fat. Insert cloves in ham.
- Preheat oven to 325 degree F. Place ham, fat-trimmed side up, in a large roasting pan. Insert a meat thermometer into the thickest portion of the ham, making sure it doesnt touch fat or bone. Pour apple cider or apple juice over ham.
- Bake ham, covered, in the preheated oven for 4 to 4-1/2 hours or until the meat thermometer registers 160 degree F. Drain off the pan juices.
- For glaze, combine brown sugar and ground cloves. Add just enough sherry or wine vinegar to make a paste. Spread glaze over fat side of ham.
- Bake ham, uncovered, about 30 minutes more or until the meat thermometer registers 170 degree F. Let stand for 15 to 20 minutes before slicing. Transfer to a large platter and, if desired, garnish with pears and lemon leaves. Makes 25 to 30 servings.

BAKED COUNTRY HAM

- The afternoon before you plan to serve the ham, fill a very large kettle or pot or your sink with water. Soak ham 4 to 8 hours to lose some of the saltiness; change the water 2 or 3 times, if possible. Rinse well, and scrape off any mold or green rind.
- Wrap ham well in aluminum foil. Place on a baking sheet. At 7 p.m. the night before you plan to serve the ham, preheat the oven to 500 degrees. Place the wrapped ham in a large roasting pan filled with 1 inch of water, and bake for 30 minutes. Turn off the oven, but do not open the door. At 10 P.M., turn the oven back on to 500 degrees. Bake the ham for 15 minutes more. Turn off the oven, but do not open the door. Leave the ham in the closed oven overnight.
- Remove ham from the oven, then remove the aluminum foil. Using a very sharp knife, trim the rind and all the fat from the ham. Serve the ham warm or at room temperature; cut with a ham-slicing knife into very thin slivers.
COUNTRY HAM BREAKFAST CASSEROLE

- Butter a large baking dish and evenly spread out the torn bread to cover the bottom of the dish.
- In a large bowl, beat to combine the heavy cream, cheese, ham, milk, scallions, salt, pepper and eggs. Pour the egg mixture over the bread and top with the paprika. Cover and refrigerate for at least 1 hour and up to overnight.
- Remove the dish from the refrigerator 30 minutes before baking. Preheat the oven to 350 degrees F.
- Uncover the dish and bake until puffed, golden and cooked through, about 45 minutes. Let cool 5 minutes, sprinkle with the chives and serve.
GRANDMA'S HAM
This is an easy delicious ham that my grandma has made every year for Christmas, I got to make it for the first time last year for my family and it is always wonderful and beautiful.

- Preheat oven to 325 degrees F (165 degrees C). Place ham in a roasting pan.
- Pour ginger ale into the roasting pan. Rub brown sugar over the ham. Attach pineapple slices to outside of ham with toothpicks. Secure a cherry into the middle of each pineapple slice again using toothpicks. Pour reserved pineapple juice into pan with ginger ale. Tent aluminum foil over the ham.
- Bake ham in preheated oven for 4 hours. Remove aluminum foil and continue baking another 30 minutes.

COUNTRY HAM

- Unwrap ham and scrub off any surface mold (if you hung in a sack for 6 months you'd have mold too). Carefully remove hock with hand saw. (If this idea makes you eye your first aid kit, ask your butcher to do it. But make sure you keep the hock, it's the best friend collard greens ever had.)
- Place ham in cooler and cover with clean water. (As long as it's not too dirty you can use what southerners call the "hose pipe"). Stash the cooler in the bushes. If it's summer, throw in some ice. If it's freezing out, keep the cooler inside. Change the water twice a day for two days turning the ham each time.
- Preheat oven to 400 degrees F.
- Place ham in a large disposable turkey-roasting pan and add enough Dr. Pepper to come about halfway up the side of the ham. Add pickle juice if you've got it and tent completely with heavy-duty foil. Cook for 1/2 hour then reduce heat to 325 degrees F, and cook another 1 1/2 hours.
- Turn the ham over, insert an oven safe thermometer (probe-style is best) and cook another 1 1/2 hours, or until the deepest part of the ham hits 140 degrees F (approximately 15 to 20 minutes per pound total).
- Let rest 1/2 hour then slice paper-thin. Serve with biscuits or soft yeast rolls.
- Cooks note: Even after soaking, country ham is quite salty, so thin slicing is mandatory. If you're a bacon fan, however, cut a thicker (1/4-inch) slice and fry it up for breakfast.

MY GREAT GRANDMOTHER'S HAM CROQUETTES
I don't know how this recipe came to be, but we know my great-grandmother made this. It is made with diced ham in the oven and covered in bread crumbs. After shaping them, you can put cheese or anything you want into the middle for a filling. I personally like cream cheese or Cheddar cheese in mine but you can put whatever you want in the middle.

BAKED COUNTRY HAM
Old Kentucky recipe for baking Country Ham taken from news paper. I have not tried baking one this way but looking forward to it as soon as possible. It's hard to do a country ham for just one or two people, so maybe try out when several people are coming over.

- Do not soak ham! First remove the hock, then skin and trim the ham to fit a large roasting pan. Scrub the exterior, leaving as much fat beneath the skin as possible. This helps remove the salt from an overly salty ham and imparts special flavor to the cured meat.
- Heat oven to 350 degrees
- To bake ham in a crust, assemble dry ingredients and enough of the 2 cups of water to make a soft, spreadable dough - like a soft biscuit. Place the ham in roaster on a rack, skin side up. Spread the dough over the skin side of the ham. Bake for about 3 hours uncovered.
- When the time is up, remove the crust and discard. After ham cools, remove it to a cutting board for deboning. Many like their ham served cold, but I enjoy a warm ham with any meal.

GRANDMAG'S BAKED CHRISTMAS HAM
We always have a huge smoked ham at Christmas. When my children were little I never slept Christmas Eve night, I always stayed up and cooked the Christmas ham, and waited on Santa. My GrannyN use to cook hers this way, the only thing I changed is I don't pre-bake the ham in brown paper bags like she did. Cook times vary from the size of the ham used. Our ham at Christmas is usually 25-30 pounds. Check the package wrap for suggested cook times for the pound ham that you purchased. My final cook times are approximate, it depends on the thermometer readings. I have also posted a great recipe for leftover ham.

- Wash ham throughly.
- Cut diagional criss crossed lines one inch apart, one inch deep.
- When you are finished the cut lines should look diamond shape.
- This has to be done all around the whole ham.
- Insert whole clove in each crossed section.
- Try to push the clove down at least an inch into the meat.
- Bake one hour covered, in very deep baking pan, at 275 degrees.
- This is where my GrannyN would have the ham in a paper bag.
- Drain off fat.
- Bake another hour covered at 275 degrees.
- Drain off fat.
- Let ham sit uncovered while you warm the honey.
- Pour honey over the ham, and cook uncovered for an hour at 300 degrees.
- Remove from oven and drain.
- Let sit until cool to touch, about 30 minutes.
- The ham top should be a little sticky.
- If not it's ok.
- When cool, using your hands, pack brown sugar all over the top and sides of ham.
- Pushing the sugar in the cut slices.
- Push tooth picks through the cherries.
- Place pineapple rings on top of ham using toothpick with cherries to hold in place.
- Insert meat thermometer.
- Mix together pineapple juice and cherry juice.
- Divide.
- Pour half of mixture in bottom of pan.
- Cover, and bake for 2 hours at 350 degrees.
- Check doneness.
- Usually at this point the ham is usually done.
- Last 30 minutes, Uncover and pour remainder of pineapple juice on top.

- Change the water a final time and transfer the pot to a stovetop. Add the bay leaves, mustard seeds, and vinegar and bring to a boil over high heat. Lower the heat to medium and simmer for 2 hours, topping with fresh water as necessary.
- Remove the ham from the stock pot and turn off the heat. When the ham is cool enough to handle, use a sharp knife to shave off the skin (but not the fat) from the ham. Score the surface of the ham—meaning fat and any exposed flesh—in a diagonal pattern. Place a single clove in the center of each scored diamond. Pat the ham thoroughly on all sides with the brown sugar.
