Mom's Best Peanut Brittle image

This is a wonderful peanut brittle that is easy to make and wows everyone! Have all the ingredients for this recipe measured out and ready. This recipe requires that you react quickly. You do not have time to measure ingredients in between steps.

1 cup white sugar
½ cup light corn syrup
¼ teaspoon salt
¼ cup water
1 cup peanuts
2 tablespoons butter, softened
1 teaspoon baking soda

Steps:

  • Grease a large cookie sheet. Set aside.
  • In a heavy 2 quart saucepan, over medium heat, bring to a boil sugar, corn syrup, salt, and water. Stir until sugar is dissolved. Stir in peanuts. Set candy thermometer in place, and continue cooking. Stir frequently until temperature reaches 300 degrees F (150 degrees C), or until a small amount of mixture dropped into very cold water separates into hard and brittle threads.
  • Remove from heat; immediately stir in butter and baking soda; pour at once onto cookie sheet. With 2 forks, lift and pull peanut mixture into rectangle about 14x12 inches; cool. Snap candy into pieces.

1 tablespoon unsalted butter, plus more for pan
2 1/2 cups dry-roasted salted peanuts (12 ounces)
1 cup sugar
1 cup light corn syrup
1 tablespoon baking soda

Steps:

  • Butter a large baking pan; set aside. Combine peanuts, sugar, and corn syrup in a medium saucepan. Set over medium-high heat, and bring to a boil, stirring constantly.
  • Insert a candy thermometer. Continue boiling, without stirring, until temperature registers 295 degrees, about 6 minutes. When sugar begins to brown, stir nuts gently to ensure even cooking. Remove saucepan from heat, and stir in the butter and baking soda; the mixture will begin to foam up, so mix quickly. Pour onto the prepared baking pan.
  • As soon as candy is cool enough to handle, use your fingers to stretch the brittle as thinly as possible over the baking pan. Allow the brittle to cool completely, about 45 minutes, then break into bite-size pieces.

Whenever my grandmother was in the kitchen, everything had to be "just so" to guarantee her time-tested results. Watching her make this brittle is one of my favorite memories, and I'm glad I can pass on this delicious recipe.

3 cups sugar
1/2 cup light corn syrup
1 cup water
1/4 cup butter, cubed
1 teaspoon salt
1 jar (16 ounces) unsalted dry roasted peanuts
1-1/2 teaspoons baking soda
1 teaspoon water
1 teaspoon vanilla extract

Steps:

  • Grease two baking sheets and keep warm in a 200° oven. In a large saucepan, combine the sugar, corn syrup and 1 cup water. Cook over medium heat, stirring constantly, until a candy thermometer reaches 240° (soft-ball stage). Stir in butter, salt and peanuts. Continue heating, stirring constantly, until the mixture reaches 300°., Meanwhile, combine the baking soda, 1 teaspoon water and vanilla. Remove saucepan from the heat. Stir in baking soda mixture. Quickly pour half the mixture over each baking sheet. Spread with a buttered metal spatula to a 1/4-in. thickness. Cool. Break into pieces. Store in an airtight container.

1 lb peanuts
1 tablespoon baking soda
1 tablespoon vanilla

Steps:

  • In a heavy 2 quart saucepan, over medium heat, bring to a boil sugar, vanilla and water.
  • Stir until sugar is dissolved.
  • Stir in peanuts.
  • Set candy thermometer in place, and continue cooking. Stir frequently until temperature reaches 300 degrees F (150 degrees C), or until hardens when dropped in water.
  • Remove from heat; immediately stir in baking soda.
  • Pour immediately onto cookie sheet.
  • Lift and pull peanut mixture( I do this with 2 forks) into rectangle about 14x12 inches.
  • Let cool.
  • Snap candy into pieces.

So buttery and good. I would leave the peanuts out for my dad. For everyone else, I used raw peanuts. Cooling time is not figured in.

2 cups sugar
1 cup light corn syrup
1/2 cup water
1 cup margarine or 1 cup butter
2 cups raw peanuts or 2 cups roasted peanuts
1 teaspoon baking soda

Steps:

  • Combine sugar, syrup and water in 3 quart pan.
  • Cook and stir until sugar dissolves.
  • When syrup boils, blend in butter.
  • Stir frequently after mixture reaches syrup stage (230°).
  • Add nuts when temperature reaches soft crack (280°) and stir constantly until hard crack (305°).
  • Remove from heat.
  • Quickly stir in baking soda, mixing thoroughly.
  • Pour onto 2 large, well butter cookie sheets.
  • As candy cools, stretch out thin by lifting and pulling from edges, using 2 forks.
  • Loose from pans as soon as possible and turn candy over.
  • Break in pieces.
  • I use table knife handle.

1 tsp water
1 tsp vanilla
1 1/2 cups sugar
1 cup water
1 cup Karo corn syrup
3 Tbsp butter
2 cups raw peanuts

Steps:

  • Mix soda, 1 tsp. water and vanilla in a small bowl and let sit.
  • Place sugar, 1 cup water and Karo corn syrup in a 3 qt. micro-safe bowl. Heat uncovered for 15 minutes on full power; stirring occasionally. Stir in butter until melted. Add raw peanuts. Heat for 18 to 20 minutes; stirring occasionally.
  • Grease a cookie sheet with butter and place in a warm oven preheated at 250°F and then turned off. Remove mixture from micro and add the soda mix.
  • Pour hot brittle onto cookie sheet and spread to 1/4-inch thickness with a buttered spatula and let cool. Break into pieces.

  • Combine the sugar, corn syrup, and hot water in a 4-quart heavy bottom kettle. Place over medium-high heat and bring to a boil. Continue to cook and bring it to a temperature of 250°F. Use a candy thermometer to check the temperature. I like using a high-quality instant-read thermometer, but a good candy thermometer fitted on your kettle will work as well.
  • Once at 250°F, add in raw peanuts and unsalted butter. Raw peanuts are a must with this recipe as they have a longer cooking time at high heat. Once the peanuts are added, stir the mixture continuously so no peanuts scorch on the bottom. Bring mixture up to 310°F.
  • Once at 310°F, remove from heat and add vanilla and soda. The mixture will foam and grow so make sure to stir constantly to completely incorporate.
  • Working quickly, pour into prepared 10x15 pan. To keep the brittle light and airy, do not spread or flatten the mixture. Instead, let it flow freely.
