Chow Mein Hotdish, also known as Minnesota Hotdish or Chow Mein Casserole is classic midwestern casserole comfort! This ground beef and rice casserole with creamy soup and a crunchy chow mein noodle topping, is super easy to throw together or can be made ahead and frozen!

Steps:
- Preheat oven to 350 degrees F/ 175 degrees C and spray the inside of a large casserole dish with non-stick cooking spray.
- Brown ground beef in large skillet with chopped onion over medium- high heat.
- Cook celery in 1/2 cup water in microwave (covered) for 4- 5 minutes until soft. Drain off remaining water.
- Add celery, tomato soup, mushroom soup and rice to ground beef.
- Combine ground beef mixture with chow mein noodles (dry) into prepared casserole dish and sprinkle on soya sauce.
- Bake in oven for 20 minutes. Serve warm.

CHOW MEIN NOODLE CASSEROLE
This is a very tasty dish that even my kids love! It can easily be cut in half. It uses soy sauce and chow mein noodles to give it an Asian flair.

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- In a large skillet over medium high heat, saute the ground beef for 5 minutes. Add the onion and celery and saute for 5 more minutes.
- In a separate medium bowl, combine the almonds, rice, soup, water and soy sauce. Mix together well and add to the beef mixture. Place this into a lightly greased 9x13 inch baking dish. Top with chow mein noodles.
- Bake at 350 degrees F (175 degrees C) for 20 minutes.

CHICKEN CHOW MEIN CASSEROLE
This simple casserole version of chicken chow mein makes great use of leftover chicken or turkey and is easy on the budget and your time. I don't measure or weigh the amount of chicken I use but the original recipe calls for 3 pounds so I've left the recipe that way. I just use whatever I have left over, or I'll stew a few chicken breasts or pieces if I'm starting from scratch. If you've got 2-3 cups of chicken you'll be in good shape. For a little extra kick add some red pepper flakes. You can easily cut this recipe in half for a smaller family.

- Preheat oven to 350 degrees F.
- In bottom of 9x13 casserole dish, put a layer of chow mein noodles followed by chicken and vegetables. Top with remaining noodles.
- Mix soup with 1 can of water. Spoon soup mixture over vegetables.
- Drizzle soy sauce over all.
- Bake at 350°F for 30-40 minutes.
- Enjoy!
GRANDMA'S CHOW MEIN CASSEROLE
Steps:
- Preheat oven to 350 degrees F. Mix cooked ground beef, soups, rice, soy sauce and 1/2 can of chow mein noodles.
- Put in casserole dish.
- Bake 20 minutes. Add rest of chow mein noodles during the last 10 minutes.

GRANDMA GORY'S CHOW MEIN CASSEROLE
My Grandma McGrouary made this when I was a child. It was always a favorite. She used beef, but I like it better with the ground pork. I am posting this in memory of her...and tapping on memory for the details. I am not positive I have it all in there, it may have contained rice. This is how I make it. It really is delicious :)

Steps:
- Preheat oven to 350. Saute the veggies in the butter until soft. Add the meat and brown; drain.
- Combine the soup, milk or water and soy sauce; mix well.
- Add the soup mixture to the meat and veggies; then add 1 cup of the chow mein noodles. Place in a grased casserole dish.
- You can top it with a 1/2 cup or so of the chow mein noodles.
- Bake about 30 mins or until its bubbly.
- Serve with more soy sauce and chow mein noodles at the table for everyone to add if they desire.
