1 cup unsalted butter, 2 sticks, melted
2 ½ cups sugar
1 teaspoon ground nutmeg
1 teaspoon ground cinnamon

4 large eggs
1 tablespoon self-rising flour
¼ cup buttermilk
1 teaspoon vanilla extract

OLD FASHIONED SWEET POTATO PIE

Old Fashioned Sweet Potato Pie image

This is my first experience with sweet potato pie. Let me just say...OHHHHH MY! So good, my Father in Law says it's the best he's ever had! This pie has a meringue, but don't let that scare you it is super easy. I made it both ways, with the vanilla and the bourbon both were great! Courtesy of Paula Deen.

Provided by PeytonandKaylansMama

Categories     Pie

Time 1h25m

Yield 6-8 serving(s)

Number Of Ingredients 11

2 cups cooked peeled sweet potatoes
1 1/4 cups sugar
1/4 cup melted butter
2 eggs
1 teaspoon vanilla extract or 1 -2 tablespoon Bourbon
1/4 teaspoon salt
1/4 teaspoon ground cinnamon
1/4 teaspoon ground ginger
1 cup milk
1 (9 inch) pie crusts
3 egg whites

Steps:

  • Preheat oven to 350 degrees.
  • Filling:.
  • Using an electric mixer combine potatoes, 1 cup of sugar, butter, eggs vanilla, salt and spices. Mix thoroughly. Add milk, and continue to mix. Pour into pie crust and bake 35-45 minutes or until knife inserted in the center comes out clean. Place pie on rack to cool to room temperature before covering with meringue.
  • Meringue:.
  • Using an electric mixer beat egg whites until soft peaks form; beat in remaining 1/4 cup sugar 1 tablespoon at a time. Continue beating until sugar dissolves and mixture is glossy and stiff, but not dry. With rubber spatula spoon meringue onto cooled pie, forming peaks.
