JEWISH GRANDMA'S BEST BEEF BRISKET

Jewish Grandma's Best Beef Brisket image

My mother makes a GREAT beef brisket. She got the recipe after watching a friend's Jewish grandmother make it. It is perfect, delicious and easily kosher for Passover. Enjoy! Great with mashed potatoes or potato latkes (latkes with this meal are also kosher) or roasted vegetables (with olive oil, salt and pepper - also kosher). Mazel Tov!

Categories     Main Dish Recipes     Roast Recipes

Time 4h20m

Yield 10

Number Of Ingredients 6

1 tablespoon vegetable oil
1 (4 pound) beef brisket
ground black pepper to taste
2 onions, thickly sliced
2 cloves garlic, peeled and cut in half
salt and pepper to taste

Steps:

  • Heat the oil in a large deep skillet or pot over medium-high heat. Season the brisket generously with black pepper. Place in the pan and cook until the surface is a rich brown color, not burnt, but dark. Lift the roast and scatter the onions in the pan. Place the uncooked side of the roast down onto the onions. Repeat the browning process.
  • Add the garlic to the pan, and fill with enough water to almost cover the roast. Bring to a simmer. Reduce heat to low and cover with a lid or tight-fitting aluminum foil. Simmer for 4 hours, turning the roast over once halfway through. The roast should be fork tender.
  • Remove the brisket to a serving platter. Bring the broth in the pan to a simmer, scraping the bottom to loosen any browned bits. Cook until reduced to a thin gravy. Taste and season with salt and pepper if needed.

KARTOFFEL KUGEL (ASHKENAZIC POTATO PUDDING)

Kartoffel Kugel (Ashkenazic Potato Pudding) image

This classic Jewish savory potato pudding has a crisp crust and a moist, soft interior.

Provided by Gil Marks

Categories     Passover     Kosher     Kosher for Passover     Potato     Casserole/Gratin     Onion     Side

Yield 6-8 servings

Number Of Ingredients 8

1/2 cup schmaltz or vegetable oil
6 medium or 4 large russet potatoes (about 2 pounds), peeled
2 medium yellow onions, chopped (about 1 cup)
3 large eggs, lightly beaten
About 1 teaspoon salt
Ground black pepper to taste
1/4 cup gribenes (poultry cracklings) or grated carrot, optional
About 1/3 cup matza meal or all-purpose flour

Steps:

  • Preheat the oven to 375°F. Heat an 8- or 9-inch square baking dish in the oven.
  • Coat the bottom and sides of the baking dish with 1/4 cup of the schmaltz or oil and return to the oven until very hot, about 15 minutes.
  • Place the potatoes in a large bowl of lightly salted cold water. (This keeps them from discoloring.) Grate the potates into the onions, stirring to mix.
  • Stir in the eggs, remaining 1/4 cup schmaltz or oil, salt, pepper, and, if desired, gribenes or carrot. Add enough matza meal or flour to bind the batter.
  • Pour into the heated dish and bake until golden brown, about 1 hour. Although this is best when warm, the leftovers can be served at room temperature.

MY GRANDMOTHER'S POTATO LATKES

My Grandmother's Potato Latkes image

My Grandmother used to make these every Channukah when I was a kid...I have been using her recipe to make them for my family every Channukah.

Provided by janice brady

Categories     Potato

Time 30m

Yield 4-6 serving(s)

Number Of Ingredients 7

5 medium sized potatoes
1 small onion
1/2 teaspoon salt
1/4 teaspoon pepper
2 tablespoons flour
2 eggs
salad oil

Steps:

  • Peel the potatoes, if your not going to use them right away, put them in a bowl and cover them with cold water.
  • Grate the potatoes into a bowl, It really doesn't matter which holes of the grater you use. Larger holes are the only ones that will do the job some people think, since they produce crunchier latkes. Others insist on using medium sized holes for smoother latkes, It's up to you, watch your knuckles though.
  • Grate the onion into the same bowl. Of course peel the skin off first.
  • Get rid of the liquid that has collected in the bowl.
  • Beat the eggs in another bowl and then add to the potato/onion mixture.
  • Add the flour, salt and pepper, Mix well.
  • Turn oven on to 250°F This is so you can keep the first latkes you fry warm while your cooking the rest.
  • Pour enough salad oil into the bottom of a large frying pan so it's about 1/4 inch deep. Heat the oil, and keep it hot at medium to medium high heat. Put a tablespoon of the batter into the oil and press it with a slotted pancake turner to a thin pancake. Do as many as these as the pan will hold. Each latke gets turned once.
  • You can tell when they're ready to turn because the edges get brown. You should cook the latkes so they're golden brown and crisp on each side. As they're done, put them in a shallow pan lined with some paper towels and keep them warm in the oven. I serve them with applesauce -- Enjoy!
