ABUELA'S PICADILLO
This is my grandmother's Cuban picadillo (ground beef hash/chili) recipe which is usually served with white rice, beans and plantains. Picadillo also goes great with mashed potatoes and can be made without the squash. This dish is a favorite at home so I usually make 2 pounds to have leftovers for making empanadas (meat pies) the next day. Picadillo also freezes well. Of course my kids say this is the best picadillo they've ever had and I have to agree!

Steps:
- Cook and stir ground beef in a large stockpot until browned, 5 to 10 minutes. Drain grease.
- Heat olive oil in small skillet over medium heat. Add onion, green bell pepper, and garlic; cook and stir until fragrant, 2 to 3 minutes. Stir into beef in the stockpot.
- Pour tomato sauce, water, cooking wine, and hot sauce into the stockpot. Stir in sazon seasoning, parsley, garlic powder, onion powder, cumin, pepper, and bay leaf. Bring to a boil; reduce heat to low and simmer picadillo, uncovered, until slightly thickened, about 10 minutes.
- Split olives in half with your fingers and stir into the picadillo. Add squash. Simmer until liquid reduces but picadillo is not dry, 45 to 60 minutes. Season with salt.

AUTHENTIC MEXICAN PICADILLO
Picadillo is a popular dish in most South American cuisines. It is made with lean ground beef (or can be made with ground turkey as well), tomatoes, potatoes, and other ingredients. This authentic recipe will bring the flavors of Mexico to your plate.

Steps:
- Bring 6 whole tomatoes to a boil in a small pot. Transfer to a blender. Add 3/4 cup water, onion halves, and whole garlic clove. Blend until smooth.
- Heat oil in a large skillet over medium-high heat. Add chopped onion and serrano pepper. Cook until onion is transparent. Add minced garlic; cook until fragrant, about 1 minute. Add chopped tomato and cook for 1 minute more. Add ground beef; cook until browned, about 8 minutes.
- Pour canned tomato sauce into the beef mixture. Cook for 2 minutes. Mix in potatoes and carrots. Cook for 2 minutes; add the blended tomatoes, jalapeno, chicken bouillon, cumin, and bay leaf. Season with salt and pepper. Mix well, reduce heat, and simmer until most of the liquid is absorbed, about 20 minutes. Let sit for 5 minutes before serving.

STEAK PICADO
This steak picado recipe is so good and so easy. Its great for nachos or you could have it with beans & rice with a couple of tortillas or it makes a crazy good burrito!! It also makes its own juice so you could probably even add some rice to it and make it a stew. (fyi, i wouldnt leave the broth out as one reviewer suggested, it makes the dish too tomato-ey, more like a chili...its still tasty but its not steak picado)

Steps:
- generously salt and pepper the steak pieces and lightly brown in a little bit of oil for 3 minutes in a medium sized pot.
- add onion & garlic, saute for 2 minutes more.
- add remaining ingredients, bring to a low boil.
- reduce heat, cover and let it simmer for 45 -60 minutes.
- this can also be converted to a crock pot recipe. after browning the meat in a skillet, transfer to a crock pot, add remaining ingredients and cook on high for 4 hours or low for 8.

GRANDMA DOREEN'S FLANK STEAK

- In a shallow non-reactive dish spread 2 garlic cloves and half the ginger slices so that all parts of the meat will come in contact with them. Rub the meat with the sesame oil and red pepper flakes and place the steak onto the garlic and ginger. Spread the remaining garlic and ginger over the meat and pour the red wine, soy sauce, and 2 tablespoons of honey into the dish. Cover with plastic warp and marinate for 2 hours or overnight. Turn the meat once during marinating.
- Heat a barbecue or grill. Cook the meat for 5 to 7 minutes on each side depending on the thickness of the meat. This may also be cooked under the broiler or, on the stove if you have a large enough skillet. The marinade can be used by bringing it to a boil in a saucepan and then straining.
- After removing it from the heat, let the flank steak sit for a few minutes, then slice thinly against the grain and serve in its own juices with cooked marinade sauce drizzled on top.
MUSTARD-MARINATED FLANK STEAK

- Place the steak flat in a large nonreactive dish such as glass or porcelain. Using the tip of a sharp knife, lightly score the top of the steak diagonally in a large crisscross pattern to make what looks like 1-inch diamonds across the steak. This allows the marinade to penetrate into the meat.
- In a 2-cup measuring cup, whisk together the wine, olive oil, mustard, 1 teaspoon salt, and 1/2 teaspoon pepper. Stir in the shallots and garlic. Pour the marinade over and under the steak until it's completely coated. Scatter the tarragon on top. Cover the dish with plastic wrap and allow it to marinate in the refrigerator for at least 2 hours but preferably overnight.
- Half an hour before serving, remove the steak from the refrigerator and heat a charcoal grill with a layer of hot coals. (You can also set a gas grill on medium-high heat.) Sprinkle the steak with 1 teaspoon salt and 1 teaspoon pepper. Discard the remaining marinade.
- Grill the steak for about 5 minutes per side for medium-rare. Place the steak on a clean plate, cover tightly with aluminum foil, and allow to rest for 10 minutes. Slice the steak thin, cutting diagonally across the grain. Sprinkle with salt and serve hot.
MOM'S MARINATED FLANK STEAK
Another great recipe my brothers & I grew up on... The outside gets a little but crispy and seals in the succulent juices inside - yum! It's as delicious the next few days as it is hot off the grill - make a bunch, store in a ziplock in the fridge & snack for days!

- Combine all ingredients in ziplock bag or possibly glass dish.
- Marinate steak overnight for best flavor.
- Grill on barbecue (best) or possibly broil to taste - I usually eat steaks med rare but I find this tastes best med/med well (very slightly pink in the middle).
- Slice thin against grain.
GRANDMA'S (MAMA NINA MEJIA-MERCADO) FLANK STEAK PICADILLO
Steps:
- * In a large enough pot, cook flank steak in 4 quarts of water. Ad salt to taste. * While meat is cooking, slice onion and tomatillos into thing wedges. * Peal garlic * Clean chile pods (deveined-remove seeds) and soak in one cup of hot water for about ten minutes. * Blend garlic, chile, and 1 cup of tomatillos using the same water from the chile. SET ASIDE * Once meat is cooked, shread it and SET ASIDE. SAVE the beef broth. * In a large saucepan, heat olive oil and saute sliced onion and tomatillos for about 7 minutes. * Add the mixture of garlic, tomatillos, and chile pods and saute for about 7 more minutes. * Add shreaded flank steak making sure to fold the meat so it gets coated with the mixture. * Add enough beef stew to cover the meat one inch above. * Bring it to a boil. Cover and reduce heat. Let it simer for 20-25 minutes. * Let it rest 10 minutes before serving with warm corn tortillas. (You can add cubed red potatoes) It is simple, but delicious!
